I thought she cracked eggs in mug to make sure no shell entered mixture. The easiest way to check if eggs are ok is to submerge them in water. If they sink they are good, if they float they are bad. This way she could check all eggs at once. ( Of course she will need more than a mug. 1 large bowl will do the trick). Happy new year.

Even the custard mixed with condensed milk is divine and topped with crushed peanuts is something my grandmother would make when baking custard pie. 😋 Anyways pie is usually cheap as usual in the villages compared to places like Suva and Nausori, and speaking of the village one cannot escape the "brown label" as in your case Uraia. 🤣

My Dad was a police officer there and after he died, we had to leave 😔 I miss Levuka. The life there, there people, the culture, everything. I even knew Fijian language and spoke just like you guys. I do it here in US . Pineapple, Milk, lemon and coconut custard pie. I do it to eat not to sell. I don't like how crust is done here to make apple pie, pumpkin pie, etc..its horrible 😫. Naba one ga is Fijis custard pie.
If the dough is hard the pastry feels like biscuits? No worries triffle it ga. When pastry like biscuits cut them in slices put in a dish layering it. One layer the pastry baked one like biscuits mix cream butter sugar well layer it top of biscuit layer. Next custard and add fruits like pineapples water melons pawpaws and dessicated coconuts shred it. You have all those fruits in the villages there. Next another layer of pastry biscuits repeat the layers. If you got an icekey or huge pot fill it with cool water. Put your tifle dish inside in the middle that is if you got no refrigerator or ice cubes. It makes the trifle dessert settle firmy and good to enjoy.
