Oh My God! I am starving, watching this. We too love our crispy dumplings. I like to add herbs to mine as well. There is nothing like good old British food especially in the winter time. We also do ours with beef mince as it gets spring time for a lighter version still with dumplings though. With our spring and summers we still get days when we need a substantial meal. My mum always said shin was a good cut of meat.
You're right skirt is a lovely cut of meat. I suspect all the bloody restaurants buy it and charge us an arm and a leg to cook it up in a fancy way. If you have a proper butcher near you they should usually sell it. Although good butchers are getting hard to come by these days. Love your channel. Proper stew and dumps my nana taught me that you should always use a metal spoon fir dumplings and you should just drop them on to the stew never handle the mix exactly hiw you did it ❤
In the US beef shin is called beef shank,or Osso Buco it is cut across the bone (bone in) usually stew meat here is cut from the chuck.I have never had dumplings,I think perhaps my parents didn’t like them,as my mother often made stews,they have never appealed to me, but as you make them with a crunchy top I might like them.

I’ve just thought, my Dad used to put the dumplings in the oven on a flat tray, they were crispy. I suppose this is the old version of an air fry Ninja. Anyway yours looked very tasty & nice texture.
I used to make a nice cheese & bacon & egg flan/quiche with Italian herbs sprinkled on the top with sliced tomatoes. I’ve forgotten how to make it now. Can you do anything similar? I’ve done the bacon & egg pie, that was delicious. Another thing we had was neck of lamb stew if you can make that. x

I remember asking one of our schools dinner ladies what they put in the braised beef they served up and it was Marmite ever since then I have added it to my stews. Like your videos however too many add breaks for me just spoils the watching unfortunately.
i adore stew but dont like dumplins but oh y god they look so good i dont like the stodge of dumplins but they look awsome hun def eat them xx im adding ur resapies to my fav list incase i loose them ty so muck for doing these vlogs hun love them kathy xxxx

dumplings are delicious we have them in soups too give them a try you can make with butter too instead of suet x

Put a damp paper towel under the cutting board and the board will not slip. Chefs always do this trick.
