Enjoying a nice bowl of Chicken noodle soup is as comforting as it gets. This wonderful recipe has, without a doubt, a special place in our kitchen. Growing up in Mexico, it was a very popular choice because of how inexpensive and delicious it was. In this video, you will learn how easy it is to make this wonderful meal, and combined with the wonderful Mexican flavors, you will crave it every time! This is definitely the only recipe you will ever need for Mexican chicken noodle soup!

Mexican chicken noodle soup recipe
Servings: 5-6 people (1 pc of chicken per person)
Cook the chicken in flavorful broth
2.5 lbs chicken thighs and legs, skin on/bone in
→ Season chicken with
1 1/2 tsp kosher salt : amzn.to/3e5Lm7k

→ Brown
2 TBSP smooth olive oil : amzn.to/3AIKXUe
→ Broth
8 cups water
1 head garlic, cut in half
1/2 large white onion
4 sprigs mint/ hierba buena, fresh
1/2 bunch cilantro, fresh
4 sprigs thyme, fresh
Puree the sauce
2 roma tomatoes, roughly diced (12 oz)
1/2 red bell pepper, roughly diced (4 oz)
1/4 large white onion, roughly diced
1 TBSP tomato paste : amzn.to/3dHS9H8
1/2 tsp cumin, whole : amzn.to/3HHFIVB
1 tsp Mexican dry oregano : amzn.to/3N4DrXU
3 garlic cloves, peeled
1/2 tsp black peppercorns, whole : amzn.to/2TiZzqe
2 cups water
Prep the veggies (All need to be cut uniform is size/as close as possible)
1 russet potato, skin on, diced in small pieces (extra fiber)
2 carrots, sliced similar in size to potato (7 oz)
1 chayote (10 oz)
1 zucchini (8 oz)
