Awww, you are so sweet! I've thought we would make great neighbors too :) I am absolutely going to try the spice cake with ZBJ filling. Cream cheese frosting would be the perfect finish. I had to laugh when you said "look away" as you added the sugar. 😆
When I was at my small towns grocery store yesterday, the checker and I were talking about my purple/red fingers. I had just spent four hours picking wild blackberries. She then exclaimed she had to show me what a customer had given her the day before. She took a pint jar from under the counter and it was a jar of strawberry zucchini jam. It was such a pretty color! A light color and so lovely. She and I had never heard of zucchini jam before, so I am happy to see this video and recipe! Thank you!
My mother-in-law told me years ago when she was teaching me to make jams and jelly to add a teaspoon of butter to the pot to reduce foam and to butter the rim of the pot to keep the jam/jelly from boiling over if you turned your back for a second.
love growing zucchini because you can do so much with it. I made shredded mock pineapple, mock applesauce, mock apple crisp, and yes mock crab cakes which I found recipe on internet. Oh, wait I made chocolate zucchini pudding today.
Made some today. Great way to use zucchini. I used a low sugar pectin and a little less than half of the sugar (2.5 cups for double batch). Tastes great and plenty sweet. Thanks for sharing!
🌻 You will love this! I've made for a few years when it showed up in the new Ball canning book back in 2016. I've given as Christmas gifts. This Michigander loves watching your videos and also Constance when I moved to northern Alabama. 😄
I have zucchini growing in my compost pile and the plant is producing ginormous zucchini! I already made your mock pineapple and next I'll be attempting this! 🤤
OH WOW !!!! I was just on my way out to garden to pick zucchini & you came on with this recipe- thank goodness is is a water bath canner one as I have ordered my pressure canner & just waiting on delivery YAHOO !!!!! Now GET BACK TO WORK :):):) Cheers Denise - Australia
Making a triple batch of Zucchini Sweet Relish and canning it today, then just small shredded enough zucc. for a double batch of this soon. I also don't have any apple juice, but pineapple juice to substitute just like yours. Some I can give as jars at Christmas time in gifts at the shop my husband works at. That is where the zucchini came from. One of the guys has a lovely garden and brought in 3 large zucchini's that "hid" from him and got huge. Thanks for sharing this recipe.
Oh my goodness, THANK YOU!!!! 😭🫶 I have an over abundance of zucchini at the moment and this recipe will be PERFECT!! I have a big time jam eater on my Christmas 🤶🏻 list. ☺️ New subscriber from Ontario 🇨🇦🦋
hahaha all over the stove !!!! well that sounds Familiar only mine was Cherry Jam !!!!! what a Horrible Mess I had. well it just makes me pay more attention. :) that Jam Looks Wonderful.
I LOVE how you think about revamping or dreaming up ideas to use foods! I do the same and just yesterday I noticed I had jalapenos that needed to be used and a couple cups of pineapple juice still left over from my canning your pineapple zucchini video....so I thought...hmmmm.....I am going to blend the jalapenos with the pineapple juice and....and....and I just couldn't put my finger on what to do with it....if I should freeze it or make something...I knew there was something....well here it is!!! This video came up for me to watch and PERFECT! I am going to use zucchini and my my blending jalapenos to make this jam! OH MAN....that should be amazing!!! OH and I thought "ice cream"....put Ice Cream on that cake you planned on making with this jam! :) Thanks!
Rachel I just made 5 half pints w/o raisins and 7 with. You were not kidding, this is fabulous Girl! Thank you, thank you, THANK YOU for sharing this goodness. And thanks for the original person you mentioned.
Looks amazing! Used to help my grandma can when I was little on the farm. I haven’t attempted it in my own. I watch your videos and say “I bet I can do that”. It’s just me. I think I would enjoy it. Thanks again for another great video. You both are such wonderful people. Plus you have a doxie. I have a 13 soon to be 14 yr old next month “Louie” God bless
Ohh sounds so good!! Love the cake idea. Sadly my zucchini is about done. But I do have a ton shredded in the freezer. May use that up for this since I don’t make muffins/bread too often.
I absolutely love you guys!! You are both so much fun to watch and I have learned sooo much from watching your channel. Thank you for sharing your life and your knowledge 🙏🏻
Looks great! Thank you for sharing. The trick to not have foam in the jam is a Tsp of butter right at that point. The fat in the butter will make the foam disappear. I would love to try that, even though we are no jam family, just because it’s zucchini!
Wow, looks yummy 😋 My next crop of zucchini’s are coming in so this will be a must for Birthday and Christmas gifts! Thanks for sharing Constance’s recipe 😘
Omgoodness Rachael this looks soooo good! I’ll be making this, when my zuccs are ready. Thank you for sharing Constance’s recipe. I guess I missed that one
I made some Carrot Cake Jam & it's AMAZING on toast. It sounds similar to your jam. I'm sure you've heard of it & probably have made it before. If you haven't I got the Recipe from Linda's Pantry here on UA-cam & I doubled it. So I have tons of jam. Everyone that I've given it to absolutely LOVES it & they eat it straight out the jar. Lol It's that Good!!! 😋 😁
I thought this would be so easy. I have made two batches following the recipe and neither batch has set. I am no beginner to canning and making jam, I couldn’t tell you the last time I had a batch fail. I don’t think I’m going to try a third time but it does look good.
Omg I just made this and if you use the apple juice it tastes exactly like apple pie. I didn’t have nutmeg so I substituted with pumpkin pie spice. Amazing I’m still licking the spoon off lol.
I know this video was posted 3 years ago. Just wanted to know if you continued to make this jam and if so, how you used it? Thank you for sharing. Hope your trip to Alaska is a wonderful one.
Rachael I think either a spice cake or a pound cake spread with softened cream cheese and topped with this Zucchini jam would be amazing dessert ! Also creamcheese on toast with this zucchini jam would be an amazing breakfast ! Yummy Thsnks si much
I made it. For some reason I thought the recipe asked for 1 cup of raisins. So that's what I did plus I doubled it. I put the raisins in first and then all my shredded zucchini so I had had way more raisins then I needed. I wasn't going to remove some so I just left them. I also didn't have apple juice but I had applesauce so I just used 1c of apple sauce and 1c of water and mixed it in my vitamaster. It made thick apple juice. I then reduced the sugar because of the raisins. So I put 4c of sugar instead of 6c. It is still very delicious even though I messed up the recipe. Next time I will pay closer attention. haha
Since it has been a couple of years, is this amazing, or drop it? We don't do much jam and the onion jam is one I really want to try. We literally are orange marmalade people and stick to our fav. But it does sound yummy!! Thanks for the honesty.
Whippoorwill Holler did a video on an Old Fashioned Appalachian Stack Cake. It is cake style gingerbread thin layers. Your jam between the layers of that cake, with your idea for adding cream cheese frosting. An amazing combo, don't you think?
Carrot cake jam is one of my favs and I was literally just thinking the other day if this zuchinni bread jam was a thing lol and here you are, reading my mind 🥰
Sounds great! We were at Hudson's in Hilton head this week and had fried green tomatoes with onion bacon jam 😉 was so good I found a recipe but not sure how to can it.
I made this for the first time last week and I love it! (I found the recipe in "The All New Ball Book of Canning and Preserving" I plan on making more soon. Another favorite zucchini canning recipe is zesty zucchini relish from the "Ball Complete Book of Home Preserving"
If you add a half teaspoon of butter to your pot, then you won't have so much foam. It is in the pectin box directions, and it seems to work for me. Then, I just remove the little bit of foam, if there is any, with a sheet of wax paper. (Lay on top of jam and peel off.) I've made zucchini bread jam before, and it is really decadent. I will try this new recipe. You can also make carrot cake jam, which is delicious, too. Thanks for sharing this new channel with us. I will have to check her out! :)
I checked out her site. She's great! She only used one box of pectin for that recipe, though. For those wondering, she used 3 cups of sugar. I didn't catch how much sugar was used in the video. Thanks for sharing this with us!
This sounds delicious! Definitely something to share or enjoy on a special day or occasion. I'm thinking I need to stock up on more sugar. Thanks for sharing ❤🙏
Oooooooooooo I'm going to make this this year, thank you for the recipe! In all my years making jams I have never water bathed them... I'm now wondering if I should be 😮
Hi Rachel, I was thinking you always have problems getting the layer shelf out of your canner, have you tried a tent peg, it has a hook and a handle sort of, I’m not sure if it would work but it’s worth a try, love your channel here in the uk x
Sounds like a winner for adding cream cheese with a bagel!!!!
Oh ma gosh that sounds wonderful
Yes!!!!
Awww, you are so sweet! I've thought we would make great neighbors too :) I am absolutely going to try the spice cake with ZBJ filling. Cream cheese frosting would be the perfect finish. I had to laugh when you said "look away" as you added the sugar. 😆
I have done a nutmeg cake with an apple butter filling and caramel icing. I'm thinking it could be similar. You are so very welcome ;)

Judy.. mine turned out to be very runny do I need to reprocess it? Should I add pectin?
I have zucchini growing in my compost pile and the plant is producing ginormous zucchini! I already made your mock pineapple and next I'll be attempting this! 🤤
Your channel is officially my favorite. I followed your peach jam recipe today and it's amazing!!
This is my husband’s favorite making it again this year

I made this and it is sooooo good! Thank you so much for sharing this recipe!
Oh my goodness!!!! This sounds amazing!
This jam is so very good. I will be making another batch up today. Thank you for sharing!
Fantastic
I would use it the same as you, but, I would omit the raisins.

You could use as the filler for cinnamon rolls instead of the cinnamon mixture then top with cream cheese frosting
Sounds like something Anne would have pulled out of marilla’s pantry for a fancy tea party with her friends lol
YES, I agree. I was thinking a tea party with scones. 😀
Better than the cordial! 🍸
Or, better than the hard sauce with the dead mouse in it!!
tracey croteau 😂😂❤️

That 1870's Homestead I will. I’m sure it would taste great! A nice way to dress up a simple pound cake!
Looks delish. How fun to have a new zucchini recipe.
Awesome 👍🏻👍🏻👍🏻 Thank You
I have the book this recipe came from, but had totally forgotten it was there. Can't wait to make a batch and try it! Thanks for the reminder.
Looks gorgeous 😍. definitely a huge scone, butter ,fresh whipped cream and your delicious jam..... afternoon tea at its finest.
So glad he said it taste like apple butter. I was about to make this but I hate apple butter. Thanks for all your wonderful videos.
Wow, looks yummy 😋 My next crop of zucchini’s are coming in so this will be a must for Birthday and Christmas gifts!
Thanks for sharing Constance’s recipe 😘
Awesome 👍
Sounds yummy thanks for sharing
I have to try this!
My recommendation is using it for thumbprint cookies 😋 or what about having zucchini bread jam spread on a piece of zucchini bread?
I am sooo making this jam! Thank you for sharing.

I did not read through all of the comments, but if you add a little pat of butter then it is supposed to keep the foam down.
I thought this would be so easy. I have made two batches following the recipe and neither batch has set. I am no beginner to canning and making jam, I couldn’t tell you the last time I had a batch fail. I don’t think I’m going to try a third time but it does look good.

Omg I saw this in the Ball Book and have been dying to make it! Will definitely have to try!
I bet that jam would be great on a sweet potato with a little butter n maybe even a sprinkle of chopped nuts or coconut.... 😋
Truly looks amazing.

Sugar time....."Look away!" Bahahahahaha you crack me up. Don't stop stinkin up the house! Lol
I just love your videos. Thanks for all you do
Sounds like it would be great on hot buttered biscuits! (I live in the south, can you tell?)
I would most definitely use with with scones at my granddaughters teatime instead of lemon curd 😋
Oh I had to watch again to get the recipe 😉
Squash bugs got my squash this year. But I will definitely try this soon.
Would go nice with a spot of Tea. This jam looked like it was so delicious. I remember you freezing those scones. Yummy!
Fantastic just love it. I like growing my zucchinis big so your recipes for them come in handy
It's so good

Christmas cheese board! Thank you for this video!
I make zucchini jam every year my family loves it the only thing I do differently is add in dried cherries in place of the raisins.
Could you tell me how you use this? Any special way or just on bread amd toast? I am.sure people will be asking me. Thanks!!☺☺
Pavlova topped with the jam and fresh figs.

If you would add half teaspoon of butter while cooking the jam it will not allow foam to collect on top.
I'm sure that would be great on the zuchini-cheddar scones!
Stack cake. And I like your ideas of a spice cake.

In all my years making jams I have never water bathed them... I'm now wondering if I should be 😮
Do you just put wax on them?
No, I wait for the tops to pop in from the heat of the jam and that is it, I leave them to cool completely.
I do this only for jam mind you.

Maybe as a filling for a cupcake or a fried hand pie?
Yummy
