I have had great success with using lemon seeds in a tea steeping ball in my jam recipes. It is great as a thickener and the tea ball makes them super easy to remove. The pectin in the lemon seeds is a wonderful natural thickener if you prefer not to use packaged gelatin. I use it in my rhubarb jam and it has great consistency like your blueberry/zucchini jam! Wonderful video as always!
Hi Rachel. WOW, zucchini and blueberries to make jam is healthy. I am glad you did not put too much honey in it. People with diabetes have a hard time with sugar. I am diabetic as well. I have to be careful what I eat. And I will turn 61in August. My sugar is not high, it is low. I found out about my diabetes years ago, and paid it no mind. Until, my doctor told me about it again. Well. blueberries! My MIL is a caterer(well, she's 85 so not working now but she's a pro). Last year she just decided to make blueberry/rhubarb pie...Oh my oh my, everyone loved it...I'm thinking of trying to make some jam with that combo!

Honestly, I thought the canner was going to explode and I hid outside the kitchen window watching every jiggle of the weight just in case 🤣 But, nothing exploded, nobody died. I made it. All because of you 😊

I have been using jelly for the Orioles too. I fill my feeder almost every day and this year, have 2 different types of them. They have eaten any jelly or jam I put out. Last fall a friend cleaned out her pantry and I got all the jam and jelly that was older.
That is beautiful, I make oval braided rugs from 100% wool like our grandmas had. Every time I see beautiful colors like this I think “Oh what a pretty rug that would make”!! We have diabetes in the family, this would make a wonderful jam for us! Thank you so much for sharing!

I absolutely love this! I live with a Type 1 Diabetic and the no sugar challenge has been happening for decades. It has to be so they can eat it. As Mom would say, you can eat sugar and not get sick, your sister cannot. Fifty-five years ago, Mom was canning with un-sweetened pineapple juice and purchasing canned fruit only in unsweetened juice. Because of that, the heavy syrup stuff tastes horrible to me. Sorry, tangent, off I was. You are the reason I buy Pomona's Pectin. I made some strawberry freezer jam and it's great! Peach/nectarine cinnamon freezer jam is to die for. No sugar. Following....as always.

That's brilliant. I'm as close to no sugar as I can manage. I was a little inspired by your pie filling, with corn starch, to keep back some TART jam puree from my jam batch. It's in the fridge with a little Stevia and corn starch and gelatin. Haven't quite cracked it yet!
A great idea! For diabetics, I would use erythritol because stevia does have a strong taste. I would also cook chia seeds together with fruit, and then blend them together. I don't know whether chia seeds could be ground in coffee grinder, to make a sort of powder?!? I used to freeze all my jams in small batches in plain freezer bags, then just squeeze them out in a jar, and keep it in the fridge, we always used it in a couple days.
Have you tried the Pomona pectin? I tried it this year and love it! You taste the fruit not sugar...and you can sweeten with as little as 1/2 cup of sugar!

I think it's the sugar that helps make the jam thick I know what I've cut my sugar a lot of it out that my jams aren't nearly as sick but I could be wrong.

I did 4 pints of the pineapple zucchini and yesterday 5 qts and 1 pint of cole slaw. A little at a time as I get things. I have some blackberries I want to make some jam. I read where you use equal parts fruit and sugar and make sure to let get to 220 degrees to set without pectin. Do you know? Looks great. Zucchini certainly is versatile. I never knew till I followed you. Thanks for all the lessons and tips!!
That's what I do for my strawberry jam. 5 cups fruit + 5 cups granulated sugar. I didn't get a food thermometer until this year, so I've always relied on the "set/smear test". = Chill a plate in the freezer, put a drop of jam on it, then smear your finger through it. If it feels and looks like jam, it is! It's easy to tell. I've made EPIC jam this way. Great job on all of your canning efforts thusfar! Just learned something new about unflavored gelatin: It's very beneficial for sugar regulation in the body as it aids your body's insulin in the digestion of sugar and it lowers insulin secretion. I'm borderline hypoglycemic and I've begun drinking a glass of 'juice' w/it in it before I eat something sweet and I can tell a difference.

I actually put some chia seeds in my blender and made chia powder today. I saw a recipe that made pudding with the chia powder and it's claims to make a smoother, less tapioca texture. Wonder if that would work for jam. I did notice that the powder immediately began to thicken my milk. I am totally gonna try making jam.
?what about pressure canning it? say 5 lbs of pressure for ? minutes? also wondered about your delicious balsamic onion jam... maybe extend with zucchini as well, then maybe pressure can instead?

Sounds good I will use allulose to sweeten. I have used it in cowboy candy it worked great and no sugar added.

Try using Sure Jell for lower sugar recipes. It has less sugar and it’s so good!

Psyllium seed hulls would also thicken and add fiber with no taste . Just an FYI.
I'm totally off sugar. You can use majool dates from Costco. They are very sweet an mild tasting. Retains the fiber which is better for blood sugar.

The original recipe (not zucchini) I saw they used raspberry.
