Elevated TikTok Spaghetti
Ingredients:
2 tbsp extra virgin olive oil
1 medium yellow onion, finely diced
8 cloves garlic, minced (keep separate: 6 for meat sauce, 2 for alfredo)
1 tbsp brown sugar (for a deeper flavor)
1 lb ground beef (consider a mix of beef and pork for richer flavor)
28 oz crushed San Marzano tomatoes (for a sweeter, richer tomato flavor)
1 tsp garlic powder (optional)
1 tsp onion powder (optional)
1 tsp dried oregano
16 oz spaghetti (consider whole wheat for a nuttier flavor)
1/2 cup unsalted butter
2 cups heavy cream
1 cup freshly grated Parmigiano Reggiano cheese
1 cup freshly grated mozzarella
2 tbsp fresh flat-leaf parsley, finely chopped
Salt and freshly ground black pepper, to taste
Red pepper flakes (optional, for a kick)
Instructions:
Meat Sauce: In a deep skillet, warm the olive oil over medium heat. Sauté the onion, 6 cloves of minced garlic, and brown sugar until translucent and aromatic, about 4-5 minutes. Add the meat mixture, breaking it apart as it browns. Pour in the San Marzano tomatoes, garlic powder, onion powder, and oregano. Let it simmer on low while preparing the other components. Season with salt, pepper, and optional red pepper flakes.
Spaghetti: Preheat the oven to 350°F (175°C). Boil a pot of salted water and cook the spaghetti al dente according to package instructions. Drain well.
Alfredo Sauce: In a separate skillet, melt the butter over medium heat. Add the remaining 2 cloves of minced garlic. Pour in the heavy cream and let it simmer gently for 3-4 minutes. Off the heat, whisk in the Parmigiano Reggiano until smooth. Season with salt, pepper, and half of the parsley.
Assembly: Toss the spaghetti in the alfredo sauce, ensuring even coverage. Transfer to an oven-safe baking dish. Layer the meat sauce on top. Sprinkle with mozzarella and the remaining parsley.

Dave, I am sooo impressed on how quickly you’ve grown as a cook. You are 100% correct that garlic burns fast then it becomes bitter. You knew not to cook it at the same time as onions. That is a sign of a good cook. You amaze me. Stop putting your skills down. You have improved immensely. And you’re also right about too much grease. Just a tip. 1 Tablespoon of grease is plenty left in any recipe. The rest should be removed. No roux for Alfredo. The cheese is your thickener. You just needed to cook it down a bit more. According to the USDA, you should not wash raw poultry or any other meat. Meat and poultry are cleaned during processing, so further washing is not necessary. Using soaps or detergents on your meat or poultry products can contaminate your food with chemicals and make it unsafe to eat.

I agree. Not into feeding my friends and family soap/chemical contaminants. Just wash your hands (at least 20 seconds under running warm water, rubbing your hands together), utensils used and all surfaces involved. I took a food safety class and was relieved to hear from the foodborne illness and disease expert that washing our hands, as described above, is both an efficient and effective method for killing microbes and viruses that harm. Don’t touch other surfaces until you do that and you will be good. Relax but don’t be lazy.
Don't wash chicken with soap. And if you rinse it off, Pat it dry really good. If you put a damp paper towel underneath your cutting board it won't slip and slide. Always try to use a block of cheese that you shred rather than cheese in a bag because they add fillers to keep it from clumping. And if you need another eye on your stove just take the pan with the marinara and meat sauce and put it in the oven on warm while you're using that burner. And that's my advice for the day.😂 lol That recipe looks delicious I'm going to have to try it. And I know you're very busy and I appreciate the fact that you're still doing your cooking channel.
The USDA actually recommends not even rinsing raw meat because it can lead to more cross contamination.
Never wash chicken. The bacteria you will spread around your sink will contaminate everything and you'll give everybody food poisoning.
Use lemon juice on your hands after garlic. It works for onions too
As to your comments: Even if you wear gloves you still can't go around touching things with raw meat on your gloves. I just wash my hands thoroughly before touching other things. Also, a great tip for garlic hands...rub your hands against your stainless steel sink and it gets rid of the garlic or onion smell. It's weird, but it really works!

Also NEVER have pasta waiting for sauce! If stove space is limited, make sauce first, put lid on it and cook your pasta - al dente. Then add pasta to sauce and it will bring it back to hot. And the bit of pasta water will help thicken the sauce.
I saw a tip that if you put your cheese in the freezer for a little while before shredding it, it will shred easier and less messily.

Parmigiano reggiano means parmisan made in italy, in the region of Reggio Emilia. If your parmisan is Italian, it is reggiano

If you rub your hands on something stainless steel it will get rid of the garlic (and other) odor immediately. They do make these stainless steel bars shaped like soap to keep by your sink but anything stainless steel will work, including your sink.
And you're kitchen skills and knowledge have noticeably improved!
People are overly worried about salmonella. It's a bad thing but I'm not going to soap my food. If you are worried and want to be safe you can use something like vinegar. These are the same people that say don't eat raw cookie dough and I'm not going to listen to them.
I've never been worried about food poisoning and I haven't died a single time.

I remember back when pork was treated like chicken today. I believe you should simply cook chicken to the right temperature, ensuring along the way that you are hygienic with your surfaces and tools (which is what I always see you do)! Some people are OCD - aka washing chicken with soap.
After chopping garlic…. Put lemon juice in your hand (like soap) then rub in and wash with cold water/ no garlic smell left ❤

I love watching you Dave but I always wonder why you never drain your meat. I never leave the grease in my meat, I don't like greasy sauces. You might try the difference in that sometime. Keep on cooking.
Oh My Gosh, People get crazy when it comes to chicken. You absolutely do not need or even really want to wash your chicken, if it is cooked properly there is no need, and your hands wash. Never wash any porous food with soap. In fact the FDA is saying not to wash chicken anymore because processing is different than years ago. Can get cross contamination. I enjoy your determination. Keep at it friend. Always pack brown sugar in measure device.

To get the garlic and onion smell off your hands wipe them with a stainless steel spoon under running water making sure to get everywhere the garlic has touched. Even under and around the nails even if you have very short nails. I’m trying to decide if I should subscribe to this channel but it might make my head explode! Not from you necessarily but from some of the comments. 😂
Put the tomatoes in the pan as is and 'squash' with a potato masher - voila' crushed tomatoes!
Throw the mozzarella in the freezer while your getting thing ready just till it’s firm then quickly shred.

Always keep some of the pasta water. A little will loosen the sticky pasta you’ve just drained. It puts a little starch back in. All Italians do this with pasta dishes. Just saying. Xxxx🏴🏴🏴🏴
Oh my goodness, rinsing meat with soap! Unbelievable...Get a grip people! Like other comments, no need to even rinse it. Pat it dry with paper towel and cook it til at least 165 degrees F. You'll be fine!
Gloves are for those who are scared. My mom is 90 and I am 60 and we have never worn gloves nor washed our chicken. Do NOT wash your chicken. Cooking it completely kills everything that would hurt you.

The usda says don't wash your chicken with water and/or soap because that is more likely to spread bacteria. It's the COOKING part of prep that makes the food safe to eat. Gloves? Just wash your hands.

Pasta dishes are my favorites and I've always made my own sauces - both red and Alfredo, so when I saw you make this I had to try it. I hate to say it, but I'm not a fan. It was almost too rich - I didn't like combining the two. Even though I live alone, my son and DIL live next door to me so I normally make big meals (they'll often come over and raid my fridge for leftovers too!), so it will get eaten. They loved it. But I'll stick to keeping them separate. I think this channel has become my favorite of your channels!
Someone needs to Google about washing chicken with soap. I think they were pulling your leg. You are NOT supposed to wash your chicken with soap unless you want to be contaminated by the chemicals in the soap!

No! Do not wash chicken. The potential to spread bacteria is greater when you rinse it under the faucet. If you cook and handle it properly there is little risk.
If you wanted to wash your chicken, then it is washed in a bowl with water and lemon, then rinsed. Soap and water!! yuck

If you rub your hands over something made of stainless steel where you touched the garlic, some sort of voodoo magic makes the garlic smell go away. I swear it works. Awesome vids by the way!!

If you cook it as you should, you should never wash chicken; it's way more dangerous if you do than if you don't, as washing can potentially spread harmful bacteria. Cooking chicken to the appropriate internal temperature is the best way to ensure it is safe to eat.

I LOVE THIS RECIPE! and frankly I love the way you describe it as you cook it. I watched it first and wrote down the ingredients I needed. When I was ready to cook it, I watched it again and paused each time I needed time to do a step. You were easy to follow by and the meal was GREAT! Soap on chicken sounds like a big NO. I've handles tons of chicken and never used soap. I always rinse it good. Also, I've never worn gloves and don't intend to as washing my hands has been sufficient. Love your videos!

Dave DO NOT soap your chicken, Gross. After cutting garlic rub you hands with a stainless object or your kitchen faucet if it's stainless smells go away fast

Washing/rinsing chicken contaminates your sink, so you'll then need to wash you your sink before using it for anything else. As long as the chicken get's cooked thoroughly, you're good and washing it is a complete waste of time. Chicken is my primary protein of choice and I use it in probably 80% of the things I cook. I've never rinsed/washed chicken once in 20+ years and have never gotten sick from eating it.
A wood cutting board would give you more control of your knife.
For chopped garlic, smash the garlic with the flat part of your knife, then chop. Soooo much easier

If you prefer a sharp knife, you can preserve the edge by NOT using the sharp edge to move or scrape across the cutting surface. Instead, turn your knife over to the spine and move or scrape until your hearts content. You will keep your edge sharper, longer.

Put the soft cheese in freezer for 15 min before grating
