Looks yummy Dave, one of my favourites. A couple of gentle suggestions..have a bowl to the side for you to empty your scraps into and I think you might need an apron or something to help protect your clothes and you can use it to wipe your hands on. As always a pleasure to watch, enjoy your day
The channel Serious Keto has a great recipe for a keto barbecue sauce that my family loves. I make it with sugar free ketchup and I add some liquid smoke to it . I have made this about six times. Very easy.
Looks delicious. I always had veal parmagian with spaghetti growing up. But then i learned what veal was and i didn't want it anymore

The parsley that has taste is the flat leaf Italian parsley. The very curly leaf parsley has not much taste and usually used for decorating

The reason your knives get dull is because you use the blade side to scrape your cutting board. Use the top side to do that.
If you put some butter in your Pan when you're frying with the Olive oil it will not burn as quick green smoke so hard
I crumb my chicken with bread crumbs after being dusted in flour and then egg wash, chill it and then deep fry until light golden, rest on parme sauce, add baby boccocini on top and grill quickly.

Did the recipe specify extra virgin? Light olive oil has a high smoke point (and basically the same as vegetable oil)

Just a kitchen hint: sugar is added to tomato dishes because it cut the acidity.
