    Readily available and extremely affordable, zucchini can be transformed into tender vegetable 'pasta' with nothing more than a few simple knife skills. In this video, Jennifer Cornbleet demonstrates how to create pasta ribbons that are as supple and delicious as wheat pasta, but with none of the processed flour or gluten.
    Jennifer demonstrates two techniques for making zucchini pasta that literally take just a few seconds. One method involves using an every day vegetable peeler to create long, thin fettuccine-like ribbons. The other method uses a hand-cranked spiral slicer to turn the zucchini into delicate strips like angel hair pasta.
    Like pasta made with wheat, zucchini pasta has a mild flavor and a slightly al dente texture. When it is dressed up with Jennifer's hearty raw Marinara Sauce, it is as comforting and delicious as traditional pasta, but without the high carb content.
    Jennifer's sauce is high in flavor and low in carbs, too. You'll learn how to combine chopped tomatoes, sweet red bell pepper (to add sweetness and color), and sun-dried tomatoes in a food processor to create a richly flavored sauce that tastes like it was simmered on the stove all day.

    I just made this for the first time!! Thank you sooooo much!!!!!!!! I love all of your recipes, and I love your delivery. Thank you for all of your help as I transition into fully raw. I liked this because I could heat up the sauce for my mother, and my husband and I ate it raw.... :)

    I tried this recipe for the first time and it was absolutely delicious. It doesn't matter if you're raw or now. This is is just flat-out good! And totally guilt free!

    I'm a believer! I cannot believe how fast, easy and delicious this was! Even using the vegetable peeler (I don't have a spiralizer but that will QUICKLY be changing) the texture was still great, the flavors were amazing and the feeling of knowing I'm taking care of my body...PRICELESS!!!

    GREAT! Jenny! You've come a L-O-N-G way since we took the 3 week course at Cherie's Living Light Culinary Arts Course together some years ago. Am going to take this Zucchini Pasta w/Marina Sauce to the Raw Food Meeting this evening in Huntsville, AL.     Quick question. Should you put the zuccini in a colander to drain any water? would that help? going now to try and find a spiral slicer! i love it!! Thanks for the video Also, can u do the same with eggplant?

    @Bourne2bwild1989 Extra virgin olive oil is, by definition, raw. It's only ground with stones, not heated.

    This is an old video so I'm not sure if you will see this but what if you have an oil free diet? What would you recommend? Maybe use avocado instead? Thank you

    Or some of us like fully cooked pasta with no sauce....and I'm pretty sure whole wheat pasta has a great taste, it's called whole wheat -_-

    No point to make sauce from scratch. Just buy passata, its cheap and ready, organic without added ingredients, and the thickness makes a perfect raw sauce.

    I don't really enjoy the taste of raw eggplant, I think zucchini works best. Draining it doesn't really work either--the zucchini doesn't actually become watery until you mix it with the sauce. The best solution is making the sauce really thick and not tossing it until you are ready to serve it.

    Too much fat. Just because it's raw doesn't make it any healthier than the cooked alternative. Way too much olive oil. High carb, low fat is were it's at.
