For non-italians, I'll summerize this video for you: My name is Francesco and I am 36 years old. I was born and raised in Italy in Emilia-Romagna. This is relevant, because my region was voted by the Time Magazine the best in the World for food, some years ago. My grandmother was a seventh degree black belt in cooking. My mother never cooked until her late fifties and she's pretty good. "Pretty good" in Italy means "oh my God never let this woman leave the Country" in almost every other part of Planet Earth. On land and seas. Or below the seas. Because of that, I picked up cooking. I can fight, and I let the other be the judges. Still, I NEVER heard of Mamma Rosa's egg plant recipe. But being italian gives me the power of judging a good or a bad dish by just looking at it. I would probably eat not less than 25 lbs. of Mamma Rosa spicy egg plants and I'm not even so stoked about spicy food but GOD, these are deliciuos. Ragù is a traditional bolognese condiment, and I'm from Bologna. Every houshold had his ragù. It's a poor people's dish, it's very cultural and ther is no perfect recipe. Yes, there is one that is taken as the original, but it's really not. There is a method, not a recipe. Me myself, I have always said Ragù is like Kung-Fu: all schools practice it, and it's all Kung-Fu, so no one is THE Kung-Fu. Mine is Wu-Tang style (and you better get the reference). This to say the beauty of italian cuisine is in Mamma Rosa's spicy egg plants: it's not a cuisine, it's the people. The video is amazing, the parmigiana is wonderful, you are a lovely couple and probably the REALLY good thing coming out of the pandemic up until now!
You italians don't realize ANY person in India, Middle east, which is like 2 BILLION people eat 100x tastier. Living 1 hour from Italy I tried it many times, Italian food is okay but believe me, the falvors of Asia, The carribean etc, they are something else with the most exotic fruits and vegetables you can imagine, flavors beyond. I admit, the US and Europe and Eastern europe probably have the poorest cuisine and in Europe Italy would be among the best BUT to compare it to the rest of the world.... NO CHANCE
When l toured Europe in the 80s I bought a moka as my souvenir of ltaly. I then stopped in london and rented a room in a bedsit so l could work and replenish my travel funds. Found out the group of Italians living downstairs hadn't brought one with them and were desperate for proper coffee. Mokas were pretty much impossible to find outside of Italy in those days so l used to leave mine outside their door as l left for work and collect it when l got home. After a few nights of this they invited me for dinner to say thank you and cooked MELANZANE ALLA PARMIGIANA . Oh my God. I thought l had died and gone to heaven! Made them teach me how to make it and made it EVERY NIGHT FOR TWO WEEKS. They thought l was mad but l didn't care. Even though l love eggplant in lots of ways, its still one of my favourite dishes!
Niki P, of all the nice comments I have read, yours made me laugh out loud while lying on my bed. It was so funny that I pictured you falling off your chair when you tasted your neighbours Parmigianino. I must try it, especially since you made me laugh out so heartily. I love egg plants. We call them melongene/s, in our nook of the world. Bless up. Bon Appetit!
I took care of a blind Italian Momma and she taught me so many recipes using eggplants. She taught me to cook food that you do not need to use your eyes, but with your love, heart and ancestors to guide you. I love and miss Momma Franci so much and literally cried when I found your channel. Thank you
As a FERRANDI Paris, l’école française de gastronomie trained chef, I too would never have thought of a dessert made with eggplant. Eva is amazing i agree.
Eva's incredible merit is to pick up, love, and treasure traditional recipes so well as she does in her loving, cute way us youtubers are lucky to see, because the real thing is she has behind her a mountain of tradition that's embodied by her family which I imagine very numerous, very respectful and honouring of the past, and families like this are responsible for carrying traditions over the generations, imagine them like avalanches. Not all accept, or care, to burden themselves with such responsibility because some of us want to feel free, because we still live in Italy, so we conclude let someone else do it, and if I lived abroad I'd probably just eat local food and besides I'm not fond of roots, I want to be a free citizen of the world etc. Fortunately many who leave their countries love them even more, and need to infact treasure their roots like she does, which is very moving, and Eva's love for her family and her country is so clear her eyes sparkle when she thinks about it and her mom, it's probably the main reason I watch these videos, to see those moments of pure love. Finally something so weird and unique like chocolate dipped eggplants is one of those beautiful odd little "secrets" that for some reason only history can give, because it's the type of creativity that people in the past had, it's like a dish ancient romans would eat, it's the "rock food of the ages", if you know what I mean.
I am from the Pacific island of Guam, and we grew eggplants as one of the vegetable groups. My mom used to cook it in coconut milk, after she roasted in the fire. Added shrimp, crab meat and chilies. Delicious. Try itt
Roasted sounds great....did she boil or fry the eggplant in coconut milk ? How was It mixed with the crab, etc ? Sounds like you may need to write a cook book 😉

Eva, DEAR SISTER, I thank you from the bottom of my heart. Eggplant is my absolute favorite vegetable. I LOVE it! My family, however, does not...of should I say DID not?!?! We run a small, organic, no-kill farm in the Missouri Ozarks. I grow A LOT of eggplants and have eaten them alone. But now, now I can eat my favorite veggie with my favorite people, thanks to you! 🙏🏼 So far, I’ve tried your stuffed eggplants (tonight). FAMILY IS IN HEAVEN! I’ve tried Her Majesty four times since I first saw this video a couple weeks ago. And the side dish multiple times with a total of ten eggplants. AWESOME! You’re the best! I’ve NEVER liked cooked tomatoes and tomato sauce was depressing to me. YOUR RECIPE is AMAZING! Now, I LOVE tomato sauce, if it’s YOURS. Thank you! PLEASE consider writing a cookbook! I would gladly be first in line to buy a copy for me, each of my children for their collections, and all of my extended families’ households. Amazing! 🙏🏼 God bless you, Harper and all of your loved ones in Jesus’ Holy Name. 😁🙏🏼❤️
I've always struggled with my weight and emotional eating. I dieted for years and lost 52 pounds but covid hit and I gained it back. I'm new looking to develop a healthier relationship with food. So I'm trying the Italian way following your videos. I grew up in very Italian Lodi, NJ and my best friends grandmother I think was Sicilian and she taught me her sauce recipe but other than that I didn't learn much. I'm trying to prepare and eat good food that's satisfying but healthy. Health is also an issue for me as I've always been very sick and struggle with asthma. I love this channel and you both have inspired me. I LOVE Italian food and I love fresh food. Thank you for doing these videos and teaching Italian recipes. 💗
@An Austrian Painter, Hey now, I could have found something to get offended about. You could have said I wasn't gender fluid enough for this comment section. We could have at least made an attempt to start a fight there. 🤣
I'm sicilian and for sicilian people the eggplants is like water :) We eat it one day yes and one day not, but you, from far USA, made me discover eggplants dessert, thank you !
Eva and Harper, I watch your channel with my 5 year old granddaughter. She loves to hear you talk, Eva and thinks you're so beautiful! We made the eggplant side dish, and it was heavenly! Thank you for channel and recipes. Much love to you both from Ella and her Bubbi ❤
You guys are just awesome. I am growing eggplant for the first time in my garden this year and have SO many eggplants and zero recipes. Thank you so much for this video!!! I’m definitely a new subscriber!
it cracks me up how harper is always surprised about how much he likes eva's cooking. like he expects to like it but not to that level, then he takes a bite and he's like "oh gosh this is amazing" and then he looks at her like "you did it once more"
My husband and I gave the eggplant salad a try, it truly is amazing and so unexpected a result. Eva, you can tell your mom that salad coud make an eggplant lover out of anyone. Keep them coming!

I HAVE TO SAY, YOU HAVE A GREAT WOMAN. SHE COOKS WITH LOVE. I LOVE HER HANDS, THEY TELL A STORY OF A WOMAN WHO IS NOT AFRAID OF WORK. TAKE CARE OF EACH OTHER.❤️
Yay, I agree with your message, I do want to point out that typing in capital letters is equivalent to yelling online, we can hear you when you type with caps lock off. Thank you.
I just tried the eggplant parmigiana recipe, and it was mindblowing! I've always loved eggplant, but this dish was spectacular. Even my grandmother was impressed with it, and she's an excellent cook. Thank you very much for sharing this, I will be adding it to my recipe book!
Eva is the best! Very talented, friendly and an encyclopedia of Italian food. She is also a great Italian language teacher. These two made the lockdown so much better for us.
Because of this amazing video, I am now planting FORTY-FOUR eggplants this year just for our family’s consumption!!! My market garden has even more! THANKS, HARPER. LoL You and Eva are influencing our farm production! 😁🙏🏼❤️
Fun fact: Eggplant is in the plant family Solanaceae, or the Nightshades. Included in this family are eggplant, potato, tomato, tobacco, bell pepper, and chili pepper.
When eva says harper and then looks at him with a smile, she looks like a proud mamma and also sooo beautiful.. even my mother cooks awesome eggplant dishes though not italian ones... so seeing harper enjoy them is our victory too!!
They taught the French. French cooking was based on Italian. I have to say, I prefer Italian. It's more elemental and less fussy. But both depend on the best ingredients. There is no substitute for fresh, local vegetables, fruit and real cheese.
WOW!! I mean I LOVE eggplant, but I know only 1 or 2 ways to cook with it. Thanks to Eva, I can now try these DEEE-LICIOUS dishes. I really appreciate her expressions and smiles so much after she takes her first bite. And, she always tells us where the dishes were first created and/or a little history of them. I DIG IT ALL!! I think first one I'm going to try is the Eggplant Antipasto, then the Parm dish and so on. Thank you Eva and Harper!!! You are both FABULOUS to me!! Arlene
This was just so fun. I didn't want the video to end. I also could listen to her accent and her way of speaking all day. I'm in such a joyful mood after this. Thanks.
I rewatched your eggplant video and decided next weekend I am making several to all of them. I love eggplants. I use to grow them in my garden. I look forward to your new shows all the time.
I absolutely love Eva and all of her ways, but I do love Harper's descriptiveness. How you can basically tell us what it tastes like and how jealous we are that you are eating it and not us. 😆
Harper: "What the heck is happening today? I'm eating an eggplant dipped in chocolate!" LOL! Dude, I wouldn't have thought it would work either, but I guess you shouldn't doubt Eva. Just saying. She has proven her kitchen skills are amazing. Thank you for sharing.
Walking through the produce section today, heard a beautiful eggplant calling my name. Brought it home and whipped up “Her Majesty” and OH MY! I’ll NEVER eat that breaded eggplant slop again! This was so delicious and light. Thanks you for sharing that treasure with us, Ava! Next I’ll try the rolled up ones with the pinoli nuts….I’m wondering how it would taste with just a drizzle of honey on top instead of the olive oil 🤔…
Something magical about these videos. Besides the food, I really am impressed by the love I see. Love of food, love of each other. Just lots of love. It's precious.
Eva cooked with all her heart, and i would heart her beautiful hands for this reason. I had a really bad day...but this video brought so much love and joy for life out in me. 💗 Love the spirit you both are rising.💗
🌟 Buongiorno ... I'm having my espresso ☕ & watching ( I couldn't wait for today ) My garden has beautiful aubergine 🍆 LOVE them 💗 ... Eva & Harper have a wonderful Sunday ...Enjoy ... Stay Safe & Much Love ~
Yes, I agree eggplant is delicious. And if you're into gardening even a little bit, they're easy to grow. To prove that point, even I can successfully grow eggplant!
Maybe you guys should do a whole series of exploring different vegetable themed dishes. I would recommend fennel next. I wasn’t raised with fennel and have no idea how to use it properly.
I just made Melanzane di Mamma Rosa as a side dish for our lunch and it was an amazing success. One of the best eggplant dishes I've ever had, thank you so much for the recipe and thank you to Mamma Rosa!
I agree, I missed parts of the beginning of the video, during it I kept wondering why is she looking at him like she wants to devour him or something. 😃😂😂 That is what I get for not paying attention.
I love eggplants! It's a staple in levantine cuisine as well, and when it's done right, it's done rIGHT. I have to try out some of these recipes sometime, they look delicious
From a you tube suggestion, to a devoted pasta grammarian... You two are like long lost family! I can't get enough. Like Harper, I have to admit my eyebrows raised at "eggplant 🍆". But Eva & Harper got me crawling out the bed to get to the store to buy some 😅. A dynamic duo you are ❤ Thank you for sharing the love with us!
I love this channel because I cook for a lot of people with food restrictions. That last dish is perfect because it’s low FODMAP (I’d probably substitute the garlic for garlic infused oil, but it still works in that regard), dairy free, gluten free, and vegan. Finally, I can cook for everyone.
Those dishes are so delicious! Melanzane alla parmigiana is my all-time favourite, and I usually make eggplant rolls with walnut paste, Georgian style. That dessert seems a bit odd, but I'm sure it's yummy. Mille grazie!
it's fantastic to see Harper being stunned when he tastes dishes that we normally do in Italy ... but how lucky we Italians are with food ... good Eva ...
And (sadly) the North American versions don’t compare. The quality of vegetables in Italy is ASTOUNDING. I’m not sure what it is (the soil?), but vegetables there have far more flavour. Ours are somewhat bland (which is why we season, herb and garlic-up everything so heavily).
@@jjpp2216 surely the Mediterranean climate favors the cultivation of fruit and vegetables ... but believe me, even here in the large distribution fruit and vegetables are less tasty than some time ago ... if one is lucky enough to have fruit and vegetables grown in the grandmothers' gardens , feels a crazy difference
Thank you! I made the Parmigiana di Melanzane tonight. I have been making my family's recipe for decades with the dredge, egg and breadcrumbs. This recipe rocks. It is much better than my family recipe because the breadcrumbs tend to weigh down the eggplant and mute the taste. Molto Bene!
I’ve made many different “authentic” versions of melanzane parmigiana, and this is one of the two best. All of the flavors are clean and pure. Bellissima! Grazie Eva!!!
My bf is Southern Italian, and I am Canadian born. We find both of you so relatable, and it sparks so much discussion between us. Keep up the great work!! Can you do an episode on how both of you met
I’ve watched this video again and again. I agree that the roasted eggplant dish is AMAZING. I’ve made it four times this summer using my garden’s Chinese String eggplant. I’m sure I’ll love the others as well But this video in general is one of my all time favs. You guys are awesome ❤️
I made the first recipe for my husband and I. I used almond ricotta and balsamic vinagrette and roasted tomatoes. I did add a little chicken. It was amazing! We loved it! It was so filling, too.
I don't think Olive Garden would permit cameras, lights and tripods to be carried into the restaurant. Besides, if OG is very displeased with Eva and Harper's review, they may ban them from the restaurants for life, and that may not be a risk worth taking.
Summer Tummer hahaha Eva shitting on Olive Garden food would be golden! I was imagining more authentic Italian restaurants albeit with American- Italian recipes. I want to see Eva like something that’s American-Italian, I like what is cooked at home, because it’s just not made well and wonder if she’s just missing out because she’s not exposed to the good stuff.
When I was a kid I never liked eggplant though my parents ate it all the time. Now I can't get enough of it! One of my favorite ways, and my folks too, was to slice it down the middle and bake it face down. When finished she'd scrape it and mix it with garlic, lemon juice and s &p. I appreciate how good this spread is now. My parents are gone but when I eat this they are there right next to me!!

There’s a lodi in us? 😳
Please don't ever do reality TV with a crew in your home... They will ruin the perfect chemistry, and respect you have with each other. God Bless
Agree!! Never let those bastards in!! Build your empire yourselves we’ll support! Love from Jamaica 🇯🇲 💕💕💕
They wouldn’t be able to because of COVID
I agree with everyone in this section! 😉
@An Austrian Painter, why not, lol?
@An Austrian Painter, Hey now, I could have found something to get offended about. You could have said I wasn't gender fluid enough for this comment section. We could have at least made an attempt to start a fight there. 🤣
I'm sicilian and for sicilian people the eggplants is like water :)
We eat it one day yes and one day not, but you, from far USA, made me discover eggplants dessert, thank you !
😗😗😗
You didn't let him taste the breaded and fried eggplant, eaten hot they are heaven! 🥰🥰🥰
You guys are just awesome. I am growing eggplant for the first time in my garden this year and have SO many eggplants and zero recipes. Thank you so much for this video!!! I’m definitely a new subscriber!
It’s so fun to watch how comfortable Eva is becoming in the US. Nice to see her smile so much
This woman spoils you.
Keep her.
it cracks me up how harper is always surprised about how much he likes eva's cooking. like he expects to like it but not to that level, then he takes a bite and he's like "oh gosh this is amazing" and then he looks at her like "you did it once more"
It's 3 am in Argentina, and I got up from bed just to make Mama Rosa's eggplant recipe. All I can say is I'M IN LOVE 🥰
😄😄😄
My husband and I gave the eggplant salad a try, it truly is amazing and so unexpected a result. Eva, you can tell your mom that salad coud make an eggplant lover out of anyone. Keep them coming!
I LOVE eggplant in all its forms. The two of you rock! Thanks.
"What is happening " says he. You sir have had the good fortune of marrying an amazing Italian woman.
Does Italy have any single jainist vegans tolerant of protestants? That could be a tall order.
@@katemorgan4690 ???
@@francesca_415 I’m a Jainist eater. I make films with Indians from India and went to school with Indians from India and do missions work in Africa. I am descended from the Originally Catholic Welsh dissenter protestants.
@@katemorgan4690 ok?
They are such a sweet couple. I love them.
Who all got this channel in your recommendation and are watching since.
Me lol
Yup!
ME!!! I just love it
When my brother was searching present tense grammar he saw this. LOL
Me!
I'm not even Italian but bless your mama for teaching you how to cook every man I don't care what he says loves a good cooking woman
Harper your reactions are priceless!!!
Ava keep him guessing with surprises your whole marriage- that is the true SPICE OF LIFE!
May God Bless all your Sundays together!
Thank you!
Thank you.
Harper: you scored big time in the marriage game. We love Eva ! Great cuisine. Great kitchen. Fun to watch you two together !
Eva seems like such a sweet person. I like watching you 2. She’s such a good sport.
I cannot stop cooking with eggplant after watching your video. Thank you so much for sharing your recipes with the world.
I just tried the eggplant parmigiana recipe, and it was mindblowing! I've always loved eggplant, but this dish was spectacular. Even my grandmother was impressed with it, and she's an excellent cook. Thank you very much for sharing this, I will be adding it to my recipe book!
Yeah!!!
I love Eva's reactions when trying her own food. Everything looks so good!
Trying your first parmigiana di melanzane changes your life, in 90% of cases it instantly enters the top 10 foods list.
it's a fact.
Because you never heard about panino con la parmigiana!
I have a moma Rosa god bless our Italian momas their food keeps us smiling like when I watch you guys
Mamma Rosa😉 and I agree with you
Eva is the best!
All of these foods come from the New World. Except for the mysterious eggplant.
Almost a meat substitute...
@@kmaher1424 eggplants came from the middle east
@@claudioferraro1652 it originated in India most probably, middle east is not suitable for eggplant and is not found naturally there
does that mean I can eat tobacco?
Aubergine and mozzarella, happy memories of Locorotondo and Martina Franca. Well done Eva!
When eva says harper and then looks at him with a smile, she looks like a proud mamma and also sooo beautiful.. even my mother cooks awesome eggplant dishes though not italian ones... so seeing harper enjoy them is our victory too!!
I have watched this several times. I am so impressed with this wonderful Wife! She is a Blessing! Molto Bene Senora! ♥️♥️
Eggplants are one of my favorite foods. But the way the Italians and the Chinese cook them are absolutely mouth-watering.
Not gonna lie, this is one my new favorite channels. So happy the UA-cam algorithm pushed you on me. Keep up the good work, guys!
Thank you!
same here! so great to find something special in all the youtube crap...
Italians just know what they're doing 👌
True
Yes, of course because we live in the Garden of the Mediterranean.
About food, you can be sure.
At least with eggplant
They taught the French. French cooking was based on Italian. I have to say, I prefer Italian. It's more elemental and less fussy. But both depend on the best ingredients. There is no substitute for fresh, local vegetables, fruit and real cheese.
Fantastic! Do an episode for mushrooms!
He got the jackpot 🎰!! she is charming and has great style plus she is a great cook 👩🏻🍳 full of passion and craft!! Simplicity is everything
Arlene
Georgia 🇬🇪 cuisine has similar to the antipasta dish - but inside is crashed walnut. I love it. Now I can’t wait to try Eva’s ricette! Grazie mille!
This was just so fun. I didn't want the video to end. I also could listen to her accent and her way of speaking all day. I'm in such a joyful mood after this. Thanks.
Eva, ho appena finito di pranzare, e mi hai fatto venir voglia di ricominciare con queste prelibatezze, complimenti ❤️
Grazie!
I also absolutely love her majesty ❤️
Its also great when you grill the eggplants.
I have made this “stuffed” eggplant twice now!! It’s amazing!!!!! I messed up and bought fresh mozzarella and it’s still so so so good!!!!
Damn i promised to myself to not get ever emotional again in front of the Majestic Parmigiana...
But She get me every time... 🙇👑
Aww Eva is so proficient. Cooks with absolute finesse. I love both of you. May God bless this couple!
You are a lucky, lucky, man. Every Sunday?! Wow!
Only came here to say. YES DEFINITLY UNDERRATED
Love the spirit you both are rising.💗
🌟 Buongiorno ... I'm having my espresso ☕ & watching ( I couldn't wait for today )
My garden has beautiful aubergine 🍆 LOVE them 💗 ... Eva & Harper have a wonderful Sunday ...Enjoy ... Stay Safe & Much Love ~
Yes, I agree eggplant is delicious. And if you're into gardening even a little bit, they're easy to grow. To prove that point, even I can successfully grow eggplant!
I find them hard to grow in Canada. The warm season isn't long enough it seems.
Maybe you guys should do a whole series of exploring different vegetable themed dishes. I would recommend fennel next. I wasn’t raised with fennel and have no idea how to use it properly.
Eva’s Eggplant dishes sound absolutely heavenly!
I just made Melanzane di Mamma Rosa as a side dish for our lunch and it was an amazing success. One of the best eggplant dishes I've ever had, thank you so much for the recipe and thank you to Mamma Rosa!
The way Eva looks at Harper is the stuff dreams are made of ❤
I agree, I missed parts of the beginning of the video, during it I kept wondering why is she looking at him like she wants to devour him or something. 😃😂😂 That is what I get for not paying attention.
I love eggplants! It's a staple in levantine cuisine as well, and when it's done right, it's done rIGHT. I have to try out some of these recipes sometime, they look delicious
Eva never fails! I love you Eva!!!!!!!
I love you too! ❤️
A dynamic duo you are ❤
Thank you for sharing the love with us!
This was amazing!! Makes me want to fly to Southern Italy immediately! Loved the chemistry between you two
Eva should be a contestant for masterchef
No, Eva is on a higher level than any MasterChef contestant or judge! Hers is a cooking for enjoying food, not for putting it in exhibit.
I’m sure I’ll love the others as well
But this video in general is one of my all time favs. You guys are awesome ❤️
We call it chinese penis eggplant. 😋 😋 😋
WOW....That's a lot of spices and dishes....You must entertain a lot of people....💘....
I made the first recipe for my husband and I. I used almond ricotta and balsamic vinagrette and roasted tomatoes. I did add a little chicken. It was amazing! We loved it! It was so filling, too.
I want to see Eva go to Italian restaurants here in the U.S. (not just Olive Garden) and have her judge their dishes based on authenticity and taste.
We have a TV show on this, it's called Little Big Italy :)
Maurizio Navarra yea but we want to see Eva’s reactions :)
Maurizio Navarra thanks now I have another show to watch. Fun stuff. But I am still very interested in hearing Eva’s opinions specifically.
😮 Made the Melanzane di Mamma Rosa recipe today to have with dinner and omg its so good. The fennel is just perfect
she improvised so perfectly.
Ok-----Harper is raving about his mother-in-law's side dish. Maximum points. Well played sir.
I always say that if you don’t like a food you just haven’t had it cooked right. Thank you for the ideas 🙏🏻 I love eggplants 💕💕
