Eggplant used to be my least favorite vegetable... until Eva completely changed my mind in a previous video: • 5 Recipes That Will Ch...
Now I can't get enough of it! We're back on the subject because since releasing the first video, we've accumulated a handful of eggplant recipe that, for various reasons, we really feel the need to share. On the roster we have a long-awaited classic, a personal favorite, a shameful secret, and a point that Eva needs to prove.

I have so many favorites ,on pasta but have say my Nona. caponata was amazing you literally lick your finger eating it with Bread yummmmmmmm
I thought the only way to wait eggplant was eggplant Parmesan. I have a recipe which takes all day, but we love it. It’s the only reason I ever grew eggplant.

I'm in Eva's Italian for Beginners class and one thing we learned is that she's a second generation teacher. Mama Rosa is a retired teacher and definitely passed on those skills to Eva. Our class also made the decision in our humble but accurate opinions that Eva is (more or less) the Italian version of Julia Child!

The similarity would be Eva bringing REAL Italian food to the masses, versus the fake many in the U.S. know. Just like Julia did with French cooking. That plus the difficulty finding the same ingredients here in America that they have in Italy, as Julia did with French ingredients. There the similarity ends. Eva's recipes are far easier. Julia's recipes are much more difficult and time consuming in their combinations and specificity. The Anti-Chef channel does the series Jamie and Julia where he does Julia's 60's recipes from Mastering the art of French Cooking. There is no comparison as far as prep, time, and step by step accuracy. Eva's are far far easier.

Eva should open an Italian bistro. She is professional. Every time i watch your food videos, i get mouthwatering for days until I try to find the dish or trying to imitate her dishes.....and never comes quite right. I rather go eat her Italian cuisine when she open her own restaurant... Seriously...... 💕

@@WinstonSmithGPT Yeah, I don't have any experience other than watching Kitchen Nightmares, but just that has taught me more than anything that the road to hell is paved with good intentions.
Eva would have to make sure everything works like a watch, and for instance, teaching the cooks how to cook and then asking them to do it alone for weeks is not the fun you have when cooking at home. She would NOT be able to cook for the guests herself. Ironic, I know.
But maybe she knows this;
IIRC, she loves MasterChef. Perhaps she's seen Kitchen Nightmares as well?

Eva has to do at least 1 to 2 videos not on anything else but her hair, which is healthy, shiny, bouncy and AMAZINGLY gorgeous here !!!

Southern Italian locks always seem to be impossible to work with, but, strangely enough, never need too much work anyways 😂
Most of my family's isn't quite as curly as Eva's, but, I know for mine, as long as I keep it thoroughly shampooed and conditioned, I never have any issues with dryness, split ends, or knots (except for my beard, which for some reason, I need regular latherings of beard oil to actually keep it respectable)

I absolutely love eggplant dishes. But especially the way the Italians and the Chinese do them. When I traveled to Italy a while back, probably my favorite meal of the trip was also the simplest. Just grilled vegetables, including lots of eggplant, brushed with high quality EV olive oil and sprinkled with a kosher-style salt. Served with fresh baked Italian bread.
@@dolcemaddalena I'm sure there are countless Chinese eggplant dishes in China. But the one I love in the US is usually some kind of garlic or spicy garlic (sometimes called Red Cooked Eggplant). Especially when they use Asian eggplants which are smaller and more flavorful that the typical ones you get in the US. I do also like Eastern European eggplant dishes, which I imagine are similar to Turkish. Sadly, not a lot of those restaurants where I live.

Me and my wife toured Sicily for our honeymoon many years ago. We only ate bread and caponata because we couldn‘t afford anything more expensive 🤩😋

My Mom doesn't like eggplant so I made Eva's first recipe and she's changed her mind. Not only that, but she had seconds! I made a few alterations to the recipe, tho. Sorry, Eva! I used a few more cloves of garlic, chopped and left in, and I added a splash of white wine. It didn't suck at all! Thanks so much for the help. I was desperate for an idea for dinner tonight! MAMA ROSA IS A CULINARY GENIUS. More recipes from Mama Rosa, please? Years ago, my Mama created her own cookbooks. She wrote out all her recipes and slid them into the plastic sleeves of photo albums so that she could keep them neat (one photo album each for fish, poultry, beef, breads, desserts...). Mama Rosa's recipes deserve to be preserved for posterity.

Caponata is one of our favorite dishes as well! Every household and restaurant have their version of this typical Sicilian sweet and savory dish! BRAVO!

My Nonna is from Messina (the rest of my family is from Catania) and it looked pretty accurate to how she used to make it. Unfortunately I wasn't old enough to learn from her before the dementia really set in, so it makes me really happy to see such an accurate recipe for one of my favourite meals she used to make (which, coincidently was 2nd only to her caponata)

Eva, I love your interpretation of Pasta alla Norma. I know that because of the MiddleEastern influence in Scilly some recipes add chopped mint leaves along with the pasta. Vincenzosplate has a wonderful version as well. Eggplant is my favorite vegetable even though it is a nightshade plant. Thank you for your channels. As a non-Italian American, my favorite cuisine by far is Italian followed by Japanese. There is a simplicity with few ingredients that is filled with mind blowing umami flavor.

The use of raisins in the caponata is not something that comes naturally to many of us but it's got to be tried.
The liccumie would be a great followup to the caponata when eggplants are in abundance.
Finally, we all love our mamas but Eva's ability to step up and cater for sub standard ingredients to equal their versions is what elevates Eva to another level.

My sister married a man named Eric and my parents, and all the relatives in Italy, couldn't say it. He is now Herrica. With a heavy H at the beginning for some reason.
And believe me the caponata is so much better the next day you wouldn't believe it I totally agree. I ate it over pasta and it was phenomenal!
I actually found Italian eggplant ... just once 😔... and made this. Adding a few summer garden fresh tomatoes and a handful of kalamata olives and fresh basil made this really shine!! Hoping to find the Italian eggplant again before summer is gone. Thanks for a great recipe.
I've always hated eggplant. My mom would cook it to absolute mush and it was like eating boogers. After discovering some eggplant dishes I actually like, I realized it was the preparation method. This video made me realize it wasn't just that, but it is also the variety of eggplant!!! I should try the smaller varieties.
I actually like mushy eggplant in baba ganoush, but otherwise it needs a bit of texture.

This is awesome because this year I'm getting an enormous amount of eggplant for my garden. I've had a lot of health issues lately so it's difficult for me to stand by the stove for any length of time. This looks awesome and easy and quick. I'm sure I can handle it. I have a refrigerator full of eggplants that need to be cooked and I'm so anxious to get to it. This video could not have come at a better time for me. Getting old sucks so anything I can do quickly is a gift. My legs are in rough shape from a recent fall so I'll be struggling but I know I can manage these quick and easy concoctions. I also think those desserts will be perfectly fine with my diabetes. As always I love you guys.

My grandmother made this and called it Caponatina. It was very similar to this, but she included anchovies and very tart olives. Its my favorite!!!

I so fell in love with eggplant parmigiana I started making it with homemade sauce (thank you Eva) about every week. I even now have 2 eggplant bushes to have all fresh ingredients.

Veggie cobbler is a new favorite and great way to use eggplant. I wanted to make ratatouille but was feeling lazy... so I just cubed eggplant, zucchini and tomatoes, sauteed them and topped with a walnut, breadcrumb, parm cheese topping and 😘 yum

I find the choice of music very nice, instead of the usual “Tarantelle” (which are obviously also beautiful) that many abroad put on with videos of Italian recipes. But Italian music, as we well know, is not made only of Tarantelle.

I am a better cook for my family because I watch Eva. I don't read the recipes, I watch what she does. My mother-in-law was Italian and a good cook and it's because it's not the recipes but the love you put in the cooking! Its the WAY they do it, the method. You add good fresh ingredients to love and boom! Fantastico
