Wow, everything looked incredible today. Makes me just want to get in the kitchen and start baking.
The second loaf of bread is how I make my cinnamon bread. With a few more twists to make it almost round. I pop it in the Dutch oven so the butter doesn't spill out. It becomes a pull apart bread and is delicious!!

Beautiful bread and a lot of prep completed! I bought Sue’s book from your recommendation and I am loving it. I haven’t started the recipes yet, I am reading it word for word first. He is beginning the recovery process! We are so thankful the surgery was a success. This was his 2nd open heart surgery, so, recovery is a bit harder, but, he is making progress! Her book has been a life changer for us!

I enjoyed this video very much. I ordered Sue’s book from your link. I started with a nutrimill like you have, and a few years ago upgraded to a komo- style mill from Pleasant Hill Grain. Now I do you like you showed, just milling the amount that I need for each recipe. Thanks for putting out these videos.

Hello, Mary. Your loaves do look beautiful and yummy!! I have a Danish dough whisk and love it. In fact I've been using one for quite a few years. I bought my first one from King Arthur Flour back before I ever ordered over the internet - back when we mailed in the order forms from catalogs. My next gadget will be the little rolling pin you use. I know the large pins have their place in baking, but I'm looking forward to using the smaller one.
I love hear you talking about Casey. I haven't watched all your videos yet so you may have featured your husband in some of them. If not, would you consider including him in a video - unless he's camera shy. Your comedic short videos are much appreciated.

How many cups of all purpose flour do you recommend for the muffins?
2 1/4 cup would work with all purpose.
I made the onion bread recipe from the book by the Beckers, and followed it carefully. Both of my loaves baked with an air pocket in the top of the loaves which left large holes in the slices. Do you have any idea why that happened?
I would say the possible reason could be in shaping. I've gotten better at this type of shaping as I have made them. You have to get it really tight without tearing. I would try making the bread even tighter next time.

How do you make kifer
You pour milk over grains that you purchase called milk kefir grains. You let it sit on the counter for 24-36 hours until it ferments and strain it then refrigerate it. It's like a pourable yogurt. I keep a batch fermenting all the time. We love it!
Can I use Sue’s book and add sourdough instead of yeast?
Yes, add 1 cup of starter in place of the yeast and adjust the flour as needed to develop a soft dough.

Did you only use kamut for the muffins or part kamut and part hard white? Same question for the loaf breads. Thanks!
I usually use Kamut for the muffins. I use half hard red and half hard white, or 1/3 of those 2 and 1/3 of kamut for the bread depending on the day. The muffins come out so light and flavorful with the kamut. Thanks so much, I appreciate that!
