My favorite bread recipe made with YEAST!

  • I almost always make sourdough bread, but, sometimes, I need a quick, yet healthy loaf of bread. This recipe comes from the Food Nanny cookbook, For the Love of Kamut.     Mary, you are such a blessing! I have been poorly for a week or so and praying about better ways to feed my family and achieve optimum health. Found you, which led me to Sue Becker and a whole new way of life! Received my mill today, and my first sack of grain.     Hello Mary, this bread looks yummy. I love the bowls you used in this video from Walmart. I really need to look into getting some of those although they probably don't have them in the store by now. Maybe I can order them off of the website. Looking forward to watching more of your videos.

    Hi there I made your sandwich bread looks so good ,also made your favorite yeast bread was the recipe for 1 bread or 2 as I just put it into one pan but as iam baking it it’s risen so high

    You are certainly my “go to Guru” on bread. I have been working on getting better at making your recipe for yeast bread. You have been so kind to answer all my questions. I am going to get a thermometer for my oven as you suggested since my bread always takes a lot longer to bake. I made your recipe this week and my bread did hit 205 degrees and tasted good, however, it looked a little “spongy” if that makes sense on the bottom of the inside of the loaf. Almost like a slightly different tint to the bread. I’m not sure how to explain it but I thought maybe the bottom wasn’t cooked enough or do you know if something else can cause that? I recently bought King Arthur’s baking school book since that is the flour I prefer and have gotten some good recipes from them. Thanks again for all your help.

      A lot of the time its how long it rose. Sometimes baking it before it rose enough will cause the denseness on the bottom. Thank you so much!

    Mary, I watched a bread recipe that you added lemon to your bread for softness. You never commented whether you could taste it or not or if you did I did not catch it. I am making bread tomorrow and want to use the lemon. How much did you use? My recipe makes two loaves of bread also. Thank you for all you do. You have taught me so much. God bless you!

      It's 1 1/2 tbsp of lemon juice for a 2 loaf recipe. You can not taste it at all. Thank you so much! God bless!

      I have never use red fife, but, I've added barley before. I think it gives a touch of a sweet flavor. I really enjoy using barley in my baked goods.

    Thank you for this.....I can only make bread using my Kitchen Aid. That being said, about how long would the dough knead in the mixer? Thanks in advance. Is that a danish dough whisk you are using?

    Going to try to make bread for the first time ever using this recipe. Can someone please tell me how to store homemade bread and how long does it keep before going bad? Thanks in advance.

      I store my bread in a plastic bread bag with a clip on the counter for up to a week. I will also slice the bread after it cools, put it in the plastic bread bag with the clip, and put it in the freezer until I need it.

    Most of the "shower cap" plastic covers on Amazon don't indicate what size they are. My largest size to cover is a Banaton Oblong and it's the big one. Are the plastic covers you use big enough for that? If so, I'd like to get some.

      @mllemaster1 well, in the summer, it's fine. Our home is pretty warm. In the winter I keep a pint jar of honey at a time and put it in some warm water to liquify it if it crystalizes.

    So glad to have found your channel Mary, I love following along!
    New to fmf and yours is the first recipe I tried! I milled the Kamut fine, not the finest setting on Nutrimill, but close to it and my Kamut dough had a much grainier texture than yours. It did rise well for the first 2 rises but didn’t rise any more once in the oven. It didn’t have the stretch/cling on dough stirrer as yours did after the first rise. While kneading, it was grainy to feel and sight, not the smooth or soft look as when you were kneading yours. After last rise in bread pan, prior to baking, I did the dampened finger test which did stay depressed as your example did. It turned out a bit dense and grainy but flavorful. What did I possibly do wrong?
    I appreciate your help!

      Are you using the nutrimill classic or harvest? One trick can be to soak the flour and water for up to an hour to soften the bran and make it a smoother dough.

      @@TheRoseHomestead It's the Harvest grain mill. So, mill the flour and then soak the fmf and water prior to beginning the first step with adding yeast and honey?

      @@cindy-dwellings-theheartof7858 I would soak the flour and water for 45 minutes to an hour, when you have about 10 minutes left of the soaking time, proof your yeast in a little warm water with the honey. You can account for the water by adding a little less to the soaking. That should give you a much softer dough.

    I apologize for all of my questions, Mary...if I choose to add less honey to the recipe, is that okay or does it have to be exact? This looks very good and my grains are coming in tomorrow, so I want to be able to prepare to begin making bread and muffins and such. I don't have Kamut, yet, but I purchased hard red and white and soft white wheat berries. Thank you.🙂

      You can use as little or as much honey as you want. It doesn't have to be exact. You can even leave it out if you prefer. Happy baking!!!!

    Where is the recipes printed out, can I copy it. This is also the best tasting bread ever!
    I use 1 cup,wheat flour and 2.5 cups reg. White flour. What flour do u suggest to use instead of wheat berry which I doubt most people have . I have whole wheat, rye, all purpose, unbeached, and bleached , breadflour, No wheat berry.

    If using a Kitchenaid mixer, how long for and what speed would you knead it on?

      I would do speed 2 or 3. Knead for about 5 minutes and let it rest and then knead another 5 minutes.

    Hi Mary I went ahead and got my berries in my Vitamin and I ground them I think enough. My question is , is this flour a little grainy? Because if it's not, oh oh I have to begin again😢😮 please let me know. Thank you once again for your expertise

      If you are going to use a Vitamix, I would recommend grinding for 1 minute and letting it cool a bit and then grind another 1 minute until you get to the consistency you prefer. That's what I did when I first started and was using the Vitamix. I hope that helps!

I want to make the recipe that you add the yeast to and get the sponge. Just need to get all the ingredients. All I have here now is the King Arthur unbleached all purpose flour or the King Arthur unbleached bread flour. Can either one of those be used to make this bread?

    This looks yummy and I have never made yeast bread. If you were using your mixer, would it be best that I mix it in a bowl for the sponge, then add the other ingredients and then put it in my mixer to knead? How long do you usually knead it and do you have to add extra flour since you’re not adding flour while you are kneading. I so appreciate you always allowing me to ask so many questions. You may be getting more from me since I unfortunately just lost my best friend who was my cooking and baking go to girl.😢. She’s the one who sent me the link to make your sourdough sandwich bread. We used to send each other pics of our finished product. My son says it’s the best sourdough bread he’s ever had and since we are originally from San Francisco, that’s a big compliment.

      Oh wow! Thanks! Just mix it all together in the stand mixer bowl and knead for about 10 minutes or until it's smooth and elastic. Just add enough flour until the dough releases from the side of the mixer bowl. Start your kneading time after that. Let me know how it turns out!

      @@TheRoseHomestead since I’m making the yeast one, do I need to make the sponge first before adding it all to the mixing bowl? I really am a novice at this, I didn’t even know what a “sponge” was when making yeast bread and thought a sponge sat in it.🤣

      You can make the sponge in the mixer bowl and let it sit before adding the other ingredients. It makes a difference in the end result. Ha ha! I hope it turns out good!

    Just to confirm, you didn’t sift the kamut after you milled it, right? I just ordered the food nanny book (hasn’t been delivered) and since she carries her own kamut “white” flour, I wondered if I could make the recipes from the book but with freshly milled kamut instead.
