What a treat it must be to be taught in person by Chef Pepin, a teacher willingly and happy to show you the correct way to do things.

I still need to practice my knife skills, specifically putting the knife against the hand holding the food. I do cut down and forward instead of straight up and down like I used to. But getting coordinated with my knife hand and other hand still needs practice.
I hold the handle with 3 fingers and pinch the base of the b lade between my thumb and forefinger,
that way the blade has less chance of twisting, especially while cutting something rounded.
Based! This is like adulting 101 for college students! Ima go buy a cucumber now…I also need to learn how to cut an onion.

These are simple indications but they should not be underestimated: a young friend of mine severed a tendon in his hand by cutting a tomato incorrectly
