I made this omelette for lunch today. I used cod instead of scallops, added a jalapeno, and omitted the cream. Alongside I had some scallion gratin, steamed broccoli, and half an avocado covered in some Rick Bayless-style salsa. It was delicious; highly recommend!

Not only he's a magnanimous cook and great teacher who makes everything look so simple, but he is also a very fine human with a humble personality. I have never resonated with a person this much in such a little time. And I think everyone in the comments section have a similar experience. I wish him all good health and happiness that the world has to offer. I wish he lives a long life. Also sadly, his wife passed away a few months back, probably because of which he isn't uploading videos for a few months. I pray he gets through the great loss and I believe his wife would be smiling seeing so many people love her husband for the man he is. I really hope nothing but happiness for the man and his family. ❤️
M.Pepin is always ridiculously amazed me with used his Simple ingredients/ tools & methods, turns a normal dish into a sophisticated, luxury one. Wonderful. What a privilege to have chance to learn from whatever he’s offered. My deep admiration, respect, and grateful for. Thank you for the post.

You know he almost died in a car accident in the 70's or so? That's why he can't really lift his left arm. The man is a legend. You should read his book.
My mother was notorious for cooking the life out of everything. Imagine my delight when I left home and discovered that you could make eggs like this! So much better than those dried out scrambled eggs I got at home! A few years ago, I made some simple scrambled eggs for my brother, and he complemented me on them! I guess I’ve learned to cook them well!
