I've watched every TV chef for the past 40 years. I've enjoyed all their shows, but none compare to Jacques Pépin. He is in a class all his own. And he always will be.....

One of my heroes! Over the years he has showed me that cooking does not need to be complicated to taste great. His Fast Food My Way book(s) are incredible. Even he has to trim off a little freezer burn sometimes. His frugality is a breath of fresh air too!

He is the master. None of the famous TV chefs on Food Network have his heart. They may be technicians and cook well, but his heart and soul go into his food.
To get the omelette in perfect shape at the end with all that stuffing is impressive.
I just know that when I try to make this, the taste might be there but I'll need a lot of practice to match that perfect shape :)

I made this omelette for lunch today. I used cod instead of scallops, added a jalapeno, and omitted the cream. Alongside I had some scallion gratin, steamed broccoli, and half an avocado covered in some Rick Bayless-style salsa. It was delicious; highly recommend!

Sometimes when I watch his videos I become afraid that he's grown very frail in his old age. This goes away when he starts whisking eggs.

Jaques Pèpin is the original Chef who brought simple and elegant French cooking to the TV and the whole world fell in love with his recipes.
I discovered Jacque pepin a few days back, in these few days I have fallen in love with the man. Not only he's a magnanimous cook and great teacher who makes everything look so simple, but he is also a very fine human with a humble personality. I have never resonated with a person this much in such a little time. And I think everyone in the comments section have a similar experience. I wish him all good health and happiness that the world has to offer. I wish he lives a long life. Also sadly, his wife passed away a few months back, probably because of which he isn't uploading videos for a few months. I pray he gets through the great loss and I believe his wife would be smiling seeing so many people love her husband for the man he is. I really hope nothing but happiness for the man and his family. ❤️

I remember watching Jacques Pepin on PBS in the SF Bay area on channel 9. I always enjoyed his cooking presentation. I met him and Julia Child at Williams & Sonoma up on California street in Laurel village in the 1990's doing a book signing. He was exactly the same way in person as he is on tv.

My mother was notorious for cooking the life out of everything. Imagine my delight when I left home and discovered that you could make eggs like this! So much better than those dried out scrambled eggs I got at home! A few years ago, I made some simple scrambled eggs for my brother, and he complemented me on them! I guess I’ve learned to cook them well!
Such humble cooking without over doing the ingredients unlike most restaurants out there ❤ always a joy to watch!

This is a great way to use your tuna fish (cheap) or leftover salmon, have done both and taste great with herbs or cheese. My pop was a chef at Adolphus Hotel Dallas Pepin reminds me and my sister so much of him. Memories RIP Pop...

That looks incredible. Chef Pepin makes it look so easy. I think the hardest part for me is folding the omelet and placing it into the plate without falling apart.

I will make this for my wife! We live a little north in Maine so getting the shrimp and scallops fresh is easy.
There is a wonderful video of Jose Andres describing Chef Pepin making an omelette. He describes all of these techniques with such respect and amazement.

One time I saw Jacques cooking with Julia Child and she was making a dish with mushy peas and she said, “you have to bruise the peas, Jacques, bruise the peas.” And he said, “why?” “Have they been mean to you?” I’ve loved him ever since.
