Pachamanca is an underground hot stone oven style of cooking from the Andes mountain regions of South America. There is evidence that humans in the region have been cooking pachamanca for over 8,000 years, and it was a common way Inca’s prepared food as well! It was a huge honor to have this opportunity to have a traditional, no shortcuts, pachamanca when I was visiting Cusco, Peru.
From Cusco, Peru, it was about an hour drive. We met with Julio, the leader of the small Quechua community, and he brought us to the village, high in the mountains, and an incredibly beautiful place. We were immediately met by the amazing community, beautiful people, who welcomed us in and showed us their immense hospitality.
The first step in prepared in a pachamanca is heating hot stones, but they have to set up the stones in an absolutely genius stone structure in order to build a fire and heat the rocks. They showed us the entire process as I watched in awe. The rocks must be heated for 4 - 5 hours before they are ready to cook.
When the pachamanca was heated and ready, they first tossed on the variety of potatoes, then the meat (including alpaca) which was marinated in spices and wakatay (Peruvian black mint), then layers of rocks, fava beans, and then covered the entire pachamanca with an herb to seal it in. Finally they covered it with earth to seal in all the smoke and steam. It was astounding and beautiful to see them as they prepared the entire pachamanca, an ancient Peruvian cooking tradition.
Moraya - Ancient Inca technique of freeze drying potatoes - In addition to the pachamanca, they also made a soup made with moraya, an Inca technique of free drying potatoes to preserve them. The soup was delicious, and so warming.
The pachamanca was absolutely delicious, all the ingredients sort of steamed and roasted at the same time. Some of the ingredients were charred from the hot stones, which added to the incredible flavor. And along with the delicious food, the experience of being able to watch them load and unload the pachamanca, was something I’ll never forget.

When I we t in 2014 - I found most Peruvians I met very cold people. Complete opposite of what you just described. Then again maybe it was relative. I had just spent 2 months in Colombia before going to Peru. Colombians, now they are truly warm humble and beautiful! And happy and festive! I wouldn’t even classify Peruvians as Latino they were so cold and non-festive

This brought tears to my eyes. Be glad you can travel and see so much of the world....and with your family. Peru has been the one destination I’ve wanted to travel to since I was in my early 20’s. Of course at that age we think we’ll live forever!! Now that I’m almost 50, my health has deteriorated rather quickly and without warning, so Peru isn’t an option anymore. The elevation is not something my body can tolerate. But my son promised he’ll take some of my ashes to Lake Titicaca after I’m gone.

It really is amazing how those women built that pit from just random rocks and pure skills. We were so impressed how they cooked the food on the stones and method of how they layered the food starting with the potatoes is amazing. The strategic knowledge of all the ingredients and how they just know how to use the elements of the earth to cook. Loved how you enjoyed that alpaca at 21:40 The meat is really tasty with the the Huacatay. It's such a timeless tradition and it's wonderful you were able to enjoy that experience. I'll tell you it was life changing for us to witness and I'm sure you feel the same. Great video Mark.

I think it's more impressive to build a modern stove. All the inventions and progress seem more impressive. Not only did it take most of the existence of humanity to create modern stoves but it took more effort and intelligence. Honestly this is a primitive and inferior style that is neither impressive nor inventive.

The first to conquer the Quechuas were the INCAS, they took advantage of their culture and language. Evil in the world begins within the very communities you are referring to. The problem today is that they blame the "white" or "modern" man for something that the indigenous people themselves did to others.

Peruvian heart and core from the beggining of the andean civilization through jungle, mountain and coastal was and always will be community and collaboration between people. Thats the most precious thing we inherited from our ancestors and we didnt lose when Perú old ancient world had contact with Europe and the rest of the world. Peru is rich in land , products , nature but most importantly their people who work together as one to keep building the great nation we started to build so many centuries ago.
Episodes like this are the reason I found and liked Mark, and they're still my favorite. Traditional, historic.

If you're so concerned about the quality of modern food, you should probably know that this old cooking method is definitely not the healthiest. Charred food has been shown to contain high levels of carcinogens. It can be very tasty, but it's not just "pure goodness" in terms of healthiness.

With all the hard work that derived from this process it’s healthier than most of the crap in the world today. If your background is from these ancient ways you’d know what this is really about. I’m concerned either way modern or post, it’s the methodology and how you approach it. Natural yet still tainted by people who’ve never lived this ever.

Hi, the best part about pachamanca is that people still makes it in a lot of places. It's not like you have to go to an specific place to eat it. You can find Pachamanca everywhere! (maybe not in the jungle, but everywhere else lol)

What I really love about the American native cultures, is how everybody jumps in to help in the preparation and cooking of the food.
And just as importantly everybody sits down together to enjoy the feast, being very observant that everyone else is served and seated before you start eating. Just simple manners that strengthen bonds and promote good spirits.

They are not Incas, but their language, certain aspects of their culture and way of life do persist in modern-day Peru.
