Very popular in jakarta Indonesia too. We got sweet version too. Popular all year around. I live in England for 18 years now. Missing it so much 😢 I'm going to give this a go... never made this savoury version before

@@jeromeloo1122 in jakarta we have sweet murtabak too. We actually call mARtabak. The sweet ones are filled with peanut and chocolate they're so yummy

In Indonesia we call it "Martabak Asin", just perfect in time. Ramadhan here.😋
In East Java, Borneo, Celebes, etc., we called it Martabak. Jakarta's Martabak is called terang bulan in every other island in Indonesia (all but Sumatra, Babel n Western Java). Just fyi, peace.

Delicious! Quite popular in Arabia, especially Yemen. But not cooked in a lot of oil, just a tawa wiped with oil

You’re my new favorite chef. I cook at least 2 of your recipes a week. All so delicious
Phyllo or spring roll sheets makes an acceptable last minute substitute for the dough. Won't have the exact same soft inside texture, but will produce the necessary outside crispiness once pan fried.
Also, our dipping sauce is a bit simpler in just that it's thinly sliced shallots in a vinegar and sugar mixture. Best let it pickle until the concoction is dyed pink by the shallots.

Indonesian ( Our Local ) called Martabak...for sure more delicious add some spring onion inside and duck egg... let's try with pickles and chili sauce...

I love the way the street vendors flip the pastry dough to stretch out out.
Also, in Malaysia, they serve it with a bowl of curry. So good.

In Indonesia this is called martabak named after the Egyptian muttabaq which means folded in Arabic. But I think in both Indonesian and malaysia the condiment served is called acar, not ajat.
These remind me of Jamaican beef patties but a little easier imo. Thanks gonna have to try some day

I made it today it is really awesome but I made it with chicken breast and used food procesor to grind the meat. and I also added cheese. it really enhance flavor.
The water will also vary with the humidity! Oh I hope i can make this. Going to try!

We call this moglai porota in Bangladesh. Though its mostly made with eggs, onion, chili,coriander leaves and few spices. But this is so tasty!

I suggest pan fry with much less oil, instead.
In India its known Baida(egg) Roti or Mughlai Paratha. Exactly the same recipe. How similar are our cultures.

Ok I made them! Some notes for anyone else who is thinking of making them. *at first when my dough came from the fridge it seemed hard, but softened to little pillows as it came to room temperature. Make sure you make the dough thin enough as mine wasn’t even though I thought it was. The dough didn’t cook inside and wasn’t crispy enough. I will flatten much thinner next time. The dip is amazing. I had made other foods to go with this dish and we put that yummy dip on everything including rice. So good! So ya make these, just flatten incredibly thin.
Wow this looks very similar to, what we have in India, Mughlai Paratha. Wonder how many recipes are cross-cultural in Asia?!
probably the arabs brought this recipe to malaysia. thus the name (it's arabic).
I thought Martabak is from India.

Here in Singapore, we usually dip it in curry. I just had mutton murtabak two days ago. Marion's version looks do-able. Usually when I see the mamak stall make it, it looks more tedious...slapping, twirling the dough on the counter, etc... that's why I usually just buy it :)

The dryness has to do with humidity and the flour I live in a very dry area and have to add a little more liquid when using flour in batters and doughs
