I will absolutely be trying that cucumber tip, stoked for that! the baking soda tip though....folks, toss the meat with the baking soda first and let it sit for fifteen minutes, then add the rest of the ingredients and cornstarch. Marion is right, the trick of baking soda really does work...but, you have to let it work before you add other stuff. You can't just mix it all together.

Interestingly, 30 years ago was the first time I had ever had Thai food. It was in Tampa Florida just off of the McDill Air Force Base. And the first dish I had was the Thai sweet-and-sour chicken. Absolutely love it! My then fiancé took me to this little shack that look like a hole in the wall and I was very skeptical and concerned that I would not enjoy this dining experience and it was absolutely one of the best!

You know what I love about your recipes, that you make things easier, sometimes using a package (broth) is just as good as making it from scratch. And I am not kidding sometimes the broth made from scratch is lacking so much flavour you wish you had not put in so much effort :-)

I made your chicken sweet sour Thai but yours has a little bit of a red color to it - ours was just a translucent sauce even though the fish sauce had some color to it but by the time I added the vinegar and the corn flour my sauce became more of a translucent. I also didn’t pick up the sweet sour more of a salty sour- don’t get me wrong it wasn’t bad but it’s not what I recall getting in a Thai restaurant- we followed recipe / video but I feel like I missed something-
Perhaps you can add some tomato ketchup or chili sauce and mix it with the corn starch or separately-that is what I do usually or some Chinese restaurants will add to the sweet sour dishes.

Marion I do not drink what does the alcohol do ? Does it kill like the alcohol and leave a nice flavor or what ?I really want to try cooking with Chinese cooking wine but don't want to feel the affect of the alcohol you know what I mean ?
It's not super necessary. It's just tradition. However the amount she uses isn't enough to get you drunk, especially after cooking away a bit of the alcohol. But remember, alcohol is never cooked away completely, and about 25% of the original alcohol content remains in the food.
