Hi, Amer :) Thanks for the question. I've sometimes left out the bamboo fibre and simply replaced it with either Oat Fibre or more Almond Flour.. The Oat Fibre is the better option to cut the carbs though.
I can’t find bamboo flour in Canada - could I substitute Oat fibre and if so what would the quantity be? Your bread looked delicious. Well done! Your right! Keto followers do miss bread.
Whenever I don't have Bamboo flour to hand, I simply make up that portion with more almond flour, which works perfectly. :) It even makes the load slightly less chewy.
I am so excited by this. I have missed bread for about 8 years and tried loads of gluten free bread recipes so I can at bread that tastes something like bread but it is all horrible and home made is usually heavy as a brick. Now, I dont know if my digestive issues are about gluten or the damn crap flour that may have wood pulp...cellulose in it. I am willin g to try out a little vital wheat gluten in my keto bread making no w though.
The honey is consumed by the yeast. and yes, many people mix Stevia and erythritol to create a better sweetness. Stevia by itself has a nasty after-taste I think.

A tip on slicing. Turn the loaf on its side and cut that way. This prevents it from getting smashed so much. Recipe looks good

Usually for around 10 ~ 15 minutes on a gentle speed. The dough takes a while to come together, but best done slowly :)
