Just dropped this Ninh Binh food tour and it's a wild ride! The tamarind sauce that you dip the goat meat is in fact sticky rice and soya sauce called "tương bần" in Vietnamese. There's a saying in Ninh Bình "tái dê chấm với tương gừng" that means goat meat has to always be accompanied with sticky rice soya sauce mixed with fresh ginger
The grilled ground pork is Nem Nuong ( a specialty of Nha Trang/Ninh Hoa and the Mekong Delta area ) and the pork skewer is Thit Xiêng Nuong . Usually we eat those BBQ meats with veggies , pickles , aromatic herbs , rice vermicelli , wrapped in rice paper and dipped in a special sauce ( a secret formula of each restaurant ) .
FYI Bai Dinh pagoda is actually not the biggest Buddhist complex temple in Vietnam . There is a much bigger and more beautiful one named Tam Chuc located in Ha Nam (closer to Hanoi than Ninh Binh) . I strongly recommend you to check-out that site on your next trip in Vietnam .
I'm sad too. 90 days is not nearly enough time to be there. These will definitely go into my Spreadsheet for "next time". I assure you I will be back soon

I was in HK 2 weeks ago and was expecting 65°F, but it was 85° and humid! I took my long sleeve shirts, puffy jacket, and a couple fleece pullovers on a tour of Asia.😂
It was blazing hot while we were in Ninh Binh. Hanoi had a few days of extreme heat too. It is even worse here in my current location. Got in a couple day ago with the intention of filming as soon as I got here and have given up on day time filming until Monday. If you don't see a new video next week you will know why😂
Yes, fresh goat blood with some fish sauce added to it. The blood isn't the issue. It was the texture of the whatever the innards were they put it in it

I have eaten many things that taste nothing like what they consume. Chicken being probably the most common of them Most chickens are fed a steady diet of corn yet I have never tasted corn when eating chicken. It's really not out of the realm of possibility that I was surprised it tasted so much like jackfruit
