    I have a question: Could you please explain better how do you pour in slow motion? I have tried several times, even tried to slightly change the ingredients, but the cocktail always pours at normal speed. I would really appreciate an explanation on how to do something in slowmo, thanks.

    Your production and preparation quality has really improved, Nick (not that it wasn't good in the early days). Compared to your other "standard cocktail" videos this one is probably the most well shot/edited, and the recipe variations are also great. Love the continued effort you have made throughout your channel's history to strive for the best quality.

    I saw the big lebowski in theatres for the first time last year and had a White Russian and LOVED the movie and the cocktail
    Made the cocktail at home with the coffee liqueur and toasted cream like nick did at the end. Thanks for the cocktail recipe nick!

      there are some vacuum seals that can do it, I just sucked some of the air out before sealing it. Doesn't need to be 100% airtight

      You can partially zip up a zip top bag that contains a liquid or a solid of any kind, leaving a small length un-zipped. Lower the bag down in a big pot or sink full of water, down all the way as close to the zip to as you can get it without letting water in. When the water has pushed all the air out, zip it closed. If the internal liquid has a heavier specific gravity than water, which cream does, it should work fine. YMMV. I think Kenji on Serious Eats also shows this in a video IIRC, but others may have as well.

      Agreed, wouldn't call Smirnoff a Russian vodka. I've spent quite a lot of time in Russia and never seen anyone drink it there, and in fact I don't think I can even recall ever seeing it for sale.

      The guy that started smirnoff was from Moscow, and had to leave russia and started over again. So it does have its roots in Russia. I was sceptical too but I looked it up and well there we have it. Still don't like the the brand.

That said, however, I think it is a stretch to describe Smirnoff as a "Russian Vodka" when it hasn't been made in the country in over 100 years. The link is rather tenuous, especially when you consider there are hundreds of vodkas actually made and bottled in Russia.

      i can see the logic, but by that standard Guinness is now Canadian to anyone in the Americas because it's brewed there and Sapporo is now American. I understand sentiment behind it, but if it's the same "style" or intent of the original creation i can give it a pass even if it is no longer made in that exact country.

      Fair point and well made Handyandqu, but I think we'll have to agree to disagree here. While Guinness (I don't know anything about Sapporo), is brewed in various location around the world, their head quarters and main brewery is still in Dublin, and can be drunk in basically every single pub in Ireland. Smirnoff on the other hand has had no connection to Russia for over 100 years, and as I said before is something I've never seen on sale in Russia. Fair enough that it is a Russian vodka in origin, but it seems weird to single it out as an example of Russian vodka, especially when there are hundreds of vodkas actually produced in Russia.

    hi! so nice that you are applying the same openness and methodology to cocktails that is being applied to success in cooking by serious eats and others! another cool idea for making the coffee flavor: add coffee grounds to vodka or rum, strain after a few days. it keeps at room temp and you can add simple syrup as needed for whatever sweetness/coffee flavor strength you desire, and you don't risk it ever being too diluted as is possible using the cold-brew technique.

    I've been following the channel here for a while and I really enjoy your content! A couple of things struck me in this video, and some previous ones, that you may find useful to note:
    The framing on most of your shots kind of makes it look like there's just a bouncing torso in front of the camera. Try framing slightly below/above the waist, or slightly below/above the shoulders. Where we're at now really chops up the body and makes the frame look unnatural. See some videos from Binging with Babish for the type of frame I'm speaking of.
    Secondly, we've got the really nice 4k video going on, but man, that auto exposure is killing me! One shot is properly exposed and the next is almost as dark as night. Maybe try finding the best exposure setting for the lights you work with ahead of time and burn them in?
    Hope these notes don't come off as snooty; I'm really just looking to see one of my favorite channels come even further than they already have!

      I think my lack of an apron makes that framing a challenge. I just did a comparison with his videos and we're both framed right below the shoulders.
      I totally agree on the auto exposure, it's an issue with the default iphone camera. I've already recorded my next 3 videos but after that I'll be trying out a new app where I can lock in the ISO

    question: how important is the precision in measuring? Both for these cockails and for all others in general. The dude just pours stuff together? Also, how precise is a normal non-bartender human at "ah about 2cl i guess?"-measuring?

      for a white russian, I don't think it really matters, I use a high ball and do 1 part vodka 2 parts vodka and fill to the top with cream. That being said, i've moved on to my favourite drink, a splash of vodka, 1 part amaretto, 2 parts kahlua, 2 parts Bailey's Irish Cream, and fill to the top with heavy cream. All with ice.

      P Z This is precisely why mixing your own drinks trends toward trouble. After the first, the ratios aren't as important. After your third, four parts vodka, one part Kalua and a splash of cream is just about as good as the first drink...

      Depends on your level of alcoholism. If you make them all the time, you'll be able to do it with your eyes closed. If it's your first time, might as well measure it to get a good idea of where the taste starts. After two or three, it won't matter at all.

    I get the kind of appeal of a cream-based White Russian being a kind of "dessert in a glass", but I honestly think it's better when it's made with regular, full-fat milk. It becomes less overpoweringly rich and sweet because of the reduced fat-content, and the vodka is allowed to make it a more clean drink when it's not suffocated by the cream.

      it's not that easy to get ahold of, but almond cream works really well for me. If you can't buy it you can just blend together almonds and water in a 1:1 ratio by volume.

    1) Polish Vodka is much better than most Ruskie vodkas anyway. Most polish vodkas use potato, rather than wheat. Imo, The purer the starch the cleaner the taste.
    2) ah!, it's like carmelizing white chocolate. I'm woried about scorching the cream in a pressure cooker. Maybe a bain marie would be a safer bet?
    Or what about straight up mixing brown butter and a lighter cream?
    3) Why didn't you use vodka with the coffee grounds? If you're using water then couldn't you get the same result using a pour over coffee?

      Dan R. Both countries have good vodka. Poland has Belvedere, Russia has Stolichnaya and Russian standard. Wheat vodka not worse than vodka made of potatoes. For example, Grey goose is wheat-based vodka. But I agree that most of Russian vodka is not good, because it is made for poor people, who can't afford to buy good vodka. It's quality is bad, but it is cheap, and does a good job killing your life, literally and lyrically.

      Михаил Беднов grey goose is french though and he said the Dude uses Smirnoff which isn't even being produced in Russia anymore. Many people argue about vodkas but in reality it is just grain and water without flavourants so getting whatever for a reasonable price (which doesn't mean getting soapy barf inducing stuff for 4bucks a bottle) shouldn't be frowned upon.

    Cocktail Chemistry - Love the video. I can only speak for myself, but I originally put this video on the back burner because I thought it was just the simple White Russian from the movie. I know I should’ve known better, but then I thought, are other people doing the same. Idk just a thought, but maybe a qualifier in the title like “improved and homemade...” or something like that would draw more? I’m no youtuber, but I do love your channel and wish to see it grow

      @@teukufayzal9998 Both Babish and Cocktail released their first video on cooking/mixing in February of 2016. Babish was about a week later but began with the style he would carry onto other videos. While Cocktail used shots that were similar in style they were only to show off the process and the camera cuts often to other perspectives. Neither copied the other but this guy was definitely influenced by Babish in terms of performance.

    After watching this I took the time to make the coffee liquor and toasted cream at home and let me tell you it’s a skill I wish you hadn’t taught me because I use toasted cream for everything now.
