I've found out that one of the best ways to avoid hours and hours of filtering is just letting it alone for at least 2 hours, better a little longer, and then carefully drop the most you can without the sediment. Now you have an already perfectly clear amount that is actually most of the batch, once you make a little practice with other batches
@Cocktail Chemistry As I highly value your (usually) select ingredients, I'm kind of disappointed seeing you chose ZICO (Coca-Cola) pseudo-coconut water. Granted, nothing comes close to cracking open a fresh coconut. But then again, compared to other bottled (or rather TetraPak'ed) coconut waters like UFC's, ZICO doesn't stand a chance. So, if you can get your hands on some of the good Asian coconut waters, don't waste your money on anything else. If your clarified punch was delicious as is, the other stuff will make it even better.With that said, thanks for the inspiration, will definitely try your improved Piña Colada versions as I'm a sucker for rum drinks. The Painkiller is one of my favorites, would love to see you trying some variations on this one in a future episode. Keep up the excellent work!

I think that's funny but the majority of people in the comments section are either chemists who love to mix and match with alcohol and non-alcoholic cocktails, like me, I love making caffeinated versions of things since I love a good buzz more then being drunk, ofc you get your (pretentious/elevated) alcoholics and your drinkers or drink enthusiasts, but yeah, that's an awesome joke, it just doesn't mix here too well, but kudos to you though, you made my day :D

Ok, so I tested the chemist's recipe. Ok, let's start with the mouth feel - that mouth feel was surprising. Do not expect that super smooth, creamy colada you're usually making - this is something you don't need to process - just a glass and a big block of crystal. Personally, it needed more coconut for my pallet, so I added some coconut rum to bump it up (30ml per serving give or take). Either way, guys you will not understand the painstaking time it took but this really is something else. It's worth it! It is really really worth it! Take this out the fridge and serve this up at a party and people will lose their minds seeing the clarity to how it feels on the mouth. 10/10 would have again

Dunno about you lot but I'm effectively teetotal (no moral objection or addiction issues, just never enjoyed drinking; do it two or three times a year) but I think I've watched every video this channel puts out. I can't speak to the quality and accuracy of the recipes (are they called that for drinks?), but I deeply enjoy the aesthetic dimensions of the videos. I appreciate the effort Nick puts into the presentation, in particular the symmetry of his framing and the pleasing patterns formed as he progresses through ingredients. While I would find someone who tried to mimick this style in real life insufferably affected, Nick's clean editing and the careful curation of the visual vocabulary allow for the art of it to be foregrounded without feeling pretentious. I understand comments drive engagement, and the UA-cam algorithm has enough rubbish it churns to the surface, so I'm breaking my long time silence to identify myself as perhaps a demographic of viewer that isn't first to mind when one considers channels that are how-tos. Keep up the good work, and I'll keep trying to notice more of the little bits (representing a lot of work) that go into the sometimes inexplicable feeling of "oh, I like that channel".
You reminded me the jokes a friend and I make about a man called "Barman in red" because it's the opposite of this channel, he records improvising with no guides, no editing and saturated audio. The difference between the sophisticated style that Nick has and a Spanish old man telling dad jokes while doing budget cocktails is just hilarious.
I cant drink at all because of a medical condition but this is one of my favorite channels. The jokes, the buttery smooth voice, the drinks looking super tasty...it all comes together perfectly. Edit: this channel inspired me to start being my families bartender lol. i love it!

Commented this to someone else, but posting it up here as well for everyone. If you can't get coco lopez, you can make your own. I did last summer at my old restaurant, and it was pretty great. Equal parts coconut cream and white sugar, heat it up do dissolve. Add a pinch of salt, and a taste of citric acid. Boom, you've made cream of coconut. It only takes 15 min, and will keep for quite a while in the fridge.

Just made a quadruple batch of this. One bottle full for me, one for a cocktail swap. It's very good. Might change it up a little next time. I first ran it through a nutmilk bag, then coffee filters. Helped with the volume, and the time.
I've been on a bit of a rum kick lately, and my current favorite is Flor de Caña (7 years). It's a really nice mid-shelf rum that has an actual interesting flavor to it, but isn't super expensive.
So I tried the clarified milk punch colada and he's right, it is AMAZING. I wouldn't mess with the recipe at all fyi. I added a little more lime since I like lime but the drink turned out at touch too lime heavy. But the mouth feel is insane. Agree that all the harsh notes are mellowed out. For me doubling the recipe, 75% of the filtering was done in an hour, so it doesn't take crazy long to get a few drinks out of it. Will 100% do again.

I just made the 3rd version and the filtering part drove me craaaazy. The coffee filter broke like 3 times and all the milk flakes dropped into the clean piña colada....i ended up filtering with a cotton cloth x'D but it worked out fine + took only about 1 1/2 hours.
protip from an actual chemist : wet the filter paper with a tiny bit of water before u strain so the paper sticks to the glass and it will filter a bit faster too without soaking the paper with ur cocktail

Fun fact: "piña colada" (pee-nya co lah dah) literally translates to "strained pineapple" or "bleached pineapple". Both kind of fit so it's up to interpretation
Very noice! I really liked the process for clarified. As a friendly tip I suggest rinsing the paper with water, also if you wanna speed up filtering process you can use two V60´s. Or Just change filtering paper from time to time.
I love this recipe but am really curious how it impacts the alcohol content of the cocktail. It uses about a third of a bottle of rum for 4 servings, but it certainly didn't feel like I drank a third of rum. Do you know how much alcohol is lost in the curd or any ideas how to calculate it?
My virgin piña colada recipe is: Coco lopez Dole pineapple tibblets (both pineapple and the juice from the can) Splash of lime Ice And then I blend them all
not as bad as you think.. It has no taste what so ever from the milk it does have a thicker feel too it but still tastes just like pina colada. However you can mess it up very easily if you are not correct on timing or do something a bit too much or not enough it will turn out like milk juice.

Just made a quadruple batch of this. One bottle full for me, one for a cocktail swap. It's very good. Might change it up a little next time. I first ran it through a nutmilk bag, then coffee filters. Helped with the volume, and the time.
I've been on a bit of a rum kick lately, and my current favorite is Flor de Caña (7 years). It's a really nice mid-shelf rum that has an actual interesting flavor to it, but isn't super expensive.
There are few times I've been this happy to discover a new channel on UA-cam. Summer is starting up, it's time to impress.

So I tried the clarified milk punch colada and he's right, it is AMAZING. I wouldn't mess with the recipe at all fyi. I added a little more lime since I like lime but the drink turned out at touch too lime heavy. But the mouth feel is insane. Agree that all the harsh notes are mellowed out. For me doubling the recipe, 75% of the filtering was done in an hour, so it doesn't take crazy long to get a few drinks out of it. Will 100% do again.

I just made the 3rd version and the filtering part drove me craaaazy. The coffee filter broke like 3 times and all the milk flakes dropped into the clean piña colada....i ended up filtering with a cotton cloth x'D but it worked out fine + took only about 1 1/2 hours.

protip from an actual chemist : wet the filter paper with a tiny bit of water before u strain so the paper sticks to the glass and it will filter a bit faster too without soaking the paper with ur cocktail
Here in Puerto Rico we actually make it in a blender with the ice instead of adding it crushed at the end and a cherry on top

I love how next level this guy is with his drinks. I'd happily pay for such a drink at a nice cocktail bar but rarely do I have the patience to do the more complicated drinks myself.
Fun fact: "piña colada" (pee-nya co lah dah) literally translates to "strained pineapple" or "bleached pineapple". Both kind of fit so it's up to interpretation

Very noice! I really liked the process for clarified. As a friendly tip I suggest rinsing the paper with water, also if you wanna speed up filtering process you can use two V60´s. Or Just change filtering paper from time to time.
I love this recipe but am really curious how it impacts the alcohol content of the cocktail.
It uses about a third of a bottle of rum for 4 servings, but it certainly didn't feel like I drank a third of rum.
Do you know how much alcohol is lost in the curd or any ideas how to calculate it?

My virgin piña colada recipe is:
Coco lopez
Dole pineapple tibblets (both pineapple and the juice from the can)
Splash of lime
Ice
And then I blend them all

not as bad as you think.. It has no taste what so ever from the milk it does have a thicker feel too it but still tastes just like pina colada. However you can mess it up very easily if you are not correct on timing or do something a bit too much or not enough it will turn out like milk juice.
