    If you put a few drops of water under your wax paper it will keep the paper stuck to the counter making rolling out the dough much easier!

      I always use wax paper to roll out cut out cookies. It’s easier than parchment.

    Oh Wesley... You have made me soooo happy! You just Keto-fied my Grandma's Dutch Ice Box Cookies!!! Her's you don't roll thin... you roll the dough into a log, refrigerate overnight, then slice into approx. 1/2" slices. Of course, the original log would be rolled in colored sugar crystals. I might add the color into the dough... like a swirl design... and then roll it in white or brown Monk-fruit crystals. Thank-you! Thank-you! These were such a part of my holiday memories! Love you and your famous cooking show!! :-)

    I used a small amount xylitol sugar with red food color to make sprinkles for on top the cookies. Wonderful! I’m sure any sugar substitute would also work.

    Holidays call for Christmas sugar cookies! Just because you're on a low carb diet doesn't mean you have go without. Check out my recipe for these Low Carb Sugar Cookies - they're sugar free, gluten free and perfect for a keto diet!
    Low Carb Sugar Cookies
    by Highfalutin' Low Carb
    2 cups almond flour
    1/4 cup coconut flour
    1 scoop (3 Tbsp) Perfect Keto collagen (or 1 Tbsp unflavored gelatin)
    1/2 c. powdered erythritol (like Swerve)
    1/4 tsp salt
    1/2 cup unsalted butter, cubed and softened
    2 tsp vanilla extract
    1/2 tsp almond extract
    Optional Icing
    3/4 cup powdered erythritol
    2 Tbsp heavy cream
    food coloring as desired
    water as needed for consistency
    1. Sift together the almond flour, coconut flour, collagen powder (or unflavored gelatin), powdered sweetener and salt into the bowl of a standing mixer. Mix on low speed for a bit to help combine the dry ingredients.
    2. Turn the speed up to medium and slowly add the softened butter cubes one at a time to the flour mixture. Let the mixer run for 1-2 minutes to incorporate the butter, but do NOT over-mix. Dough should be crumbly and slightly damp. Add in the vanilla and almond extracts and combine for just a few seconds.
    3. Using your hands, make a ball with the dough and knead it together for a few seconds. Wrap tightly in plastic wrap and refrigerate for 30 minutes.
    4. Roll out the chilled dough between two pieces of parchment paper. Dough should be about 1/4” thick. Place the rolled dough back in the refrigerator for 5-10 minutes to ensure it is chilled. This is how the cookies will maintain their shape while cooking.
    5. Cut out your cookie shapes from the chilled dough and place on a parchment-lined baking sheet. Do NOT overcrowd the pan.
    6. Bake on the center rack of a preheated 325 degree oven for 13-15 minutes. For soft and tender cookies, do not over-bake.
    7. Allow the cookies to cool on the baking pan for about 10 minutes, then transfer to a cooling rack to firm up.
    8. If icing the cookies, mix the powdered sweetener with the heavy cream. Separate into 2-3 small bowls and add food coloring to each batch as desired. If needed, add small amounts of water to reach desired icing consistency.
    9. Once the cookies have fully cooled, decorate and enjoy! Store in a tightly closed container with parchment paper to separate the layers.
    Makes about 20 cookies.

    I was living a ketogenic lifestyle for about 5 years and then I decided to make a career change and go to law school. Ummmm, yeah. 1L year was full of sleepless nights, lots of tears, a deflated self-esteem, and a lot of carbs! I gained 22 pounds and had to buy new clothes. I actually understand your pain - I’m in the middle of a cross country move because my partner of 23 years closed his private practice to accept a teaching position at a law school.     FYI, the average bake time for regular sugar cookies is 9 to 12 minutes, so if almond flour cookie dough burns quicker than regular cookie dough, I'd say start checking them at around 9 minutes.

      Exactly right. I would agree. One of the variables here is that this dough and the pan need to be chilled well, and in general “regular” sugar cookies do not. Combine that with difference in thickness and size, and it’s best to just keep an eye on them because each pan from the same batch of dough can have different bake times.

    Hi Wes! Thanks for your video...I have made these cookies and find them to be the typical icky almond flour cookie...buttttt! I have added a twist to the cookie to make them actually way better. I use 1 c almond flour and 1 c carbquick 1/2 tsp salt 1 egg 1 stick of butter 1tsp vanilla 2 tbsp unflavoured whey protein 3/4 swerve sweetener...icing is the same as your but I put almond extract in my icing...I truly am telling you these are the very best cookies...they taste the same as the real deal I swear!

      Keto Lisa Is Carbquick Keto? or is it just the low carb you are going for? I looked up the ingredients and here is what it said.

    Hi. You can roll dough out on your cooking sheet, cut them, and remove the scraps. Then you don’t have to move the cookie shapes. 😊

    This is so much like my family’s X-mas butter cut-out cookie recipe (except it’s not keto). A butter cookie, not a sugar cookie, so no egg. Powdered sugar. Almond extract (the secret ingredient for both cookie AND icing). Instructions about the same. I always made them for my brother…they were his favorite…but he died of covid last January. So this year I will just be making this keto version, just for my husband and me. Thanks for this recipe.

      Jolly Joan egg replacer at health food store is a good "go to" depending on your diet.
      It works suprisingly well as the binder.

    I would make them 3X's thicker and only cook for 10 minutes tops, AND cook on a stone, they will continue to cook a tiny bit after taking out of the oven, they would be just like a Lofthouse cookie then.

    I use to make a sugar free banana pudding for my diabetic dad...well Nila wafers are the only ones to use. But they stopped making sugar free Nila wafers...soooo I bet these would work.

    Hi, Wes! Thank you so much for this video! I’ve been searching for the perfect cookie dough base that would satisfy my Beloved husband’s sweet tooth. We are following Keto for the medical benefits and disease prevention. We’re discussing the use of this hydrolyzed collagen powder versus just using packets of Knox gelatin that we’ve put through a spice grinder and found out why you’ve chosen to use the collagen...even though they are essentially the same thing. It’s obvious: gelatin gels during cooking while hydrolyzed collagen does not. Hmmm...the mind boggles. I’m going to definitely research this to make it a sustainable part of our everyday lifestyle. I can see myself making large batches of this “dough” (and freezing them in batches) after incorporating pecans and rolling the warm cookies in powdered sweetener for “Russian Tea Cakes” or “Mexican Wedding Cookies” and so many more applications. Ohhh...I bet this dough would be perfect with lemon extract, fresh lemon zest and a cream cheese and powdered sugar icing! Thank you SO much! Christmas came early for this Keto Family! ❤️🙏🎄🎁🔔⛄️

      Denise Gasparini Hi, Denise. Keto is only as expensive as you want it to be, in my honest opinion. My roots are Southern, so I’m used to cooking with all kinds of proteins and fats, from making my own ghee to rendering my own lard to beef jerky using spices and flavors that are as Keto-friendly as possible while still being cravable. Knox gelatin powder WAS the first thing I thought of but like Wes said in his comments, the gelatin will not produce the same consistency as the collagen powder. I hopped on Amazon and typed in “unflavored collagen powder” and poof...’found a 3 lb. jug for under what the vendor offered Wes for sponsoring his video for a 12 oz. canister. I’d never buy collagen for anything other than making these cookies as I saw the potential...empanadas filled with pumpkin pie filling or “apple pie” filling...oh, yeah...and of course, pie crusts...tart crusts...even a galette filled with frozen berries? What if I added chopped pecans to the batter and rolled it up in a ball, baked them until just golden then rolled them in powdered sweetener then again after they’d cooled for Mexican Wedding Cookies (aka Russian Tea Cakes)? What if I made up several batches and could make cookies at will with a dough that didn’t disintegrate if they were made of just ground almonds. I really hope this works!

    I think the type of almonds they use to make flour is different then the almond base. Those have amaretto and I’m pretty sure are sweet almond flavored.

    Wouldn't this be a shortbread rather than a sugar cookie? My aunt was always adamant that sugar cookies have egg and baking powder, shortbread does not.

    Almond smells and tastes like cherry to me. It’s my secret ingredient in cookies, frosting…sweet potato casserole…all kinds of stuff.
    The nice thing about winter is that I can just stick these in the garage to chill since there’s no room in my freezer 😬

    Wow! Just found this video and yesterday I started collagen for the same reason! I hope it helps with my nails too... plus I am female, 72.. plus I have lost 60 lbs in the past 6 months on a keto/carnivore/fasting diet so yeah.. wrinkles.. :D Been looking for a sugar cookie recipe... thanks for this hun..

    BTW---Use Vit E & Keratin on your nails, through oil or hand lotion and you'll see a hige difference. Especially in the winter.:-)

    Recipe looks good. I usually did slice and bake cookies(homemade), pre-keto. Do you think I could roll this dough into a log, chill, then slice and bake? I'm a bit lazy, so I hate making the pretty cookies with cookie cutters.😁 Love your videos. You always make me smile and usually laugh, too. Keep up the good work.

    The other day I made keto Chocolate with imitation almond extract by accident, (the bottle to the vanilla and the almond look almost the same) Chocolate still tasted good.

    These sound amazing and as much as I love almond extract in baking, I may try some with cookie butter baking emulsion. I am hoping for a light spice flavor. So maybe some nutmeg and/ or cardamom too.

    You give the best instructions! Even for people who cooked pre-keto life need to adjust to using keto friendly ingredients. I’ve been keto for several years, and have tried baking several low carb/keto baked goods, and there’s an art to it! I think your an expert after all your trials and experiments you do for us. It must be expensive! Thank you for sharing. I’m going to try these this week. I’m also going to try keto spritz cookies, and I’m going to try to make colored erythritol. Adding color might make it melt, but I’m going to try. I’m going to buy some perfect keto. Thanks 💖❤️👍😻👊👌🏻

    would be nice if you could also add the grams not all of us use cups and if i'm right a cup size in the USA is not the same in the EU
