Eggless Soft and Moist Vanilla Chiffon Cake Recipe

- Eggless Vanilla Chiffon Cake - I got this request for eggless vanilla chiffon cake from time to time. Here you go, easy, soft and moist chiffon cake. If you do not have a chiffon pan, any 6 or 7 or 8 inch pan will be fine too. Just follow all the steps closely, you’ll get this delicious soft and moist chiffon cake. I hope you’re inspired to make this ultimate eggless chiffon cake. Enjoy!

Ingredients:
15 cm chiffon pan, greased
180g [1½ cup] cake flour
8g [1¾ tsp] baking powder
5g [1 tsp] baking soda
2g [¼ tsp] salt
275g [1⅛ cup] plain yogurt
130g [1 cup] powdered sugar
50g [4 tbsp] oil
1 tsp vanilla extract
15g [1 tbsp] milk
Dusting sugar (optional)
Instructions:
1. Preheat oven at 180°C/355°F.
2. Grease the pan, set aside.
3. Sift all the dry ingredients: cake flour, baking powder, baking soda and salt.
4. In a large mixing bowl, add in yogurt.
5. Sift in the powdered sugar. Mix vigorously until well combined.
6. Add in oil and vanilla extract. Mix until well combined.
7. Add in the sifted ingredients, spoon by spoon, mixing at the same time. Mix until combined.
8. Transfer into the pan. Tap the pan on the table to get even surface. Use a skewer to mix and swirl the batter.
9. Bake at preheated oven at 180°C/355°F for 30-35 minutes.
10. Remove the cake from the pan once the cake is a little cool.
11. Dust some powdered sugar on the top (optional).
12. Cake is ready to serve.

This is an amazingly fluffy and yummy cake. I baked this in a sheet pan. And made layer cake with it. It's so good my son prefers this cake to the usual cakes with eggs.

I tried the recipe. It was simple yet the results are amazing. I always try your Recipes. The cake rise to Perfection, that beautiful golden brown colour was everything. I baked my cake in otg oven at 180°C but it took 45-50 minutes. Since my mom is pure vegetarian she doesn't allow me to bake cake with eggs in her oven. In India Eggless cakes are a big deal and even expensive than cakes with eggs. Looking forward to more Eggless Recipes. I have already tried your ferrero rocher cake( it was a big hit) , chocolate cake, tres leche cake, Lemon brownie, etc., and all those Recipes were successful and tasty. Never failed. Your Recipes are just perfect with perfect measurements. Love your work.

You're right Valentina. Eggless cakes turned out to be pretty good on thin layers. However if you consider the chiffon pan, where there is a funnel hole in the middle, it helps a lot in cooking the thick and tall cake giving a better circulated heat all around. You can keep in room temp for 2 to 3 days in airtight and with a napkin inside the container to prevent moisture

Hi dear. Yes you can substitute half with cream cheese with half yogurt. Just make sure your cream cheese is room temp and soft consistency, otherwise it will be hard for the cake to cook.

Hi dear. So sorry for the late reply. Yes you can use a regular pan. Just bare in mind for eggless cakes, the tall deep pan is harder to cook, may need slightly longer time to cook, probably another 5 min or so ☺️

Is there a reason to put powdered sugar?
Fine sugar is alright too. Just that you need to mix on high speed for extra longer time so that it's well incorporated. Powdered sugar is used as it's easier to combine in this recipe. I normally use fine sugar or caster sugar in most of my cakes. So it's fine ☺️

Hi. For the yogurt, you can replace with silken tofu. As for milk, yes you can either replace with coconut milk or soy milk ☺️

Shall we use whole wheat flour instead of baking flour
If you're using whole-wheat, I suggest that you do a 1:1 ratio of whole-wheat and normal flour. That way your cake will not be so dense. A full whole-wheat will be quite dense if that's what you expected ☺️
What is the difference between a chiffon sponge and a normal regular sponge
For eggless chiffon, we can only do the best to make it as light as possible. Here I'm using a chiffon pan to assist in the rising on the middle. The regular one doesnt use this pan. In this chiffon recipe, I'm using powdered sugar, the regular one just normal castor sugar

Yes, you can substitute with normal wheat flour, however I prefer cake flour as it is more refined for cakes.
Yes you can use this recipe for chocolate cake too. Just deduct 30g of cake flour and substitute 30g of cocoa powder ☺️
