    WOW! You've been busy.
    My oldest daughter found 50# bags of potatoes, at a Hispanic store near her. She bought 2 bags..$22 each.
    Thank goodness I've got everything I'll need to can them over the next week. Told her to bring her peeler..lol

      Our local store just had a stock up sale, we got 50 pound bags of white potatoes for $11. Where are you located?

      Wow I sold 12 ton of potatoes at $17.00 per 50 LBS, people constantly complained of my new high price, was $13.00 last year.

    This was my 1st year canning food grown from my garden. I started browsing YT in Feb and came across your channel. I ended up watching all your videos!!It got me through the loss of my job, death of a friend from COVID, and death of my brother in law. It gave me an escape from the political climate in the country as well. I feel cheesy saying it,but thank you being kind enough to film your skills for others to learn from❤️

    Food freedom is music to my ears. But like you said it is a lot of work. My wife and I are new to preserving food, growing our own food etc. The things we have learned this year are:
    - We need to grow or buy twice the amount that we thought we needed.
    - plan ahead and don't start canning late in the afternoon
    - buy more shelved to stock the preserved goods

    Wow Rachel! I'm beyond impressed! After watching your videos I have taken up canning again after a 40 year break. I love feeling this productive again! Words cannot express how grateful I am to you and your husband. I've started back with canning pints in an Instant Pot Max and I've ordered a new pressure canner that should arrive any time. (My original pressure canner is being donated. It just needs a new gasket!) You've touched so many people.

    This year was my first big garden ever. I have canned off and on my whole life, mostly jams and pickles. I was really unprepared for the bounty that awaited me. I began to realize in mid-July the beginnings of what was ahead for me. I am a stay at home mom attempting to run a homestead on my own and many, many chores fell by the wayside as I attempted to process vegetables and herbs that simply couldn't wait, while everything else seemingly could. The jar and lid shortage caught me midway through, but we managed. I don't have an exact count, but I believe I canned somewhere in the vicinity of 400 jars of food in 2 months...and I'm not done. Plus freezing, dehydrating...it has been a wonderful, extremely overwhelming season in my life. No regrets...next year I'll be better prepared...

    Thank you for saying how much work goes into canning. I love canning and freezing as much as I can. It makes me smile every time I go to my basement and grab something to have for a meal. It's just me here, but still glad to be able to do it. I also have dry goods, and two freezers in the basement. I make my own mustard too, with brown mustard seeds and jalapenos. I did add some cranberries in it, but next time I will leave them out. Flavor was good, but I didn't like the color LOL. I need to have shelves like yours, but with this virus going on I haven't been able to have them built. I do have the wood though. I have a temp shelving, but I know it's not what I should be using. It's better than nothing though. Keep up the good work and thank you for bringing us along on your adventure.

    i think this is amazing ...i truly do ....i made a lil pantry as living in england we dont get the luxury so i made my own ...book shelves hee hee but this omg ....you work hard for sure ...glad ive found your channel ....🤗🤗

    My youngest son and his wife go “shopping” in moms pantry 😉. I don’t mind, starting a new family they could use a hand up now and then and they are learning to can some things too. Our plumber needed access to a pipe and when he entered the basement pantry his eyes went wide open, he saw canned beans and elk and enthusiastically said “put those two together and you have the best meal ever” 😆.     Nothing so satisfying as a well stocked pantry! I still have my dried beans/peas to do for the year and beef in the fridge we found on sale.

    I lost 75 quarts of peaches to Tattler lids coming unsealed. 😓
    My cowboy candy was way to hot last year. I tried making the cowboy peanut brittle and the syrup cooking was so strong in the air we had every window open in the house when it was -10. 🤣 Our eyes were burning, noses running. It was horrible. All my kids were home because of distance learning and they still tease me about it.

    I wish my husband was on board with me. He thinks that I'm crazy for stocking up and trying to be prepared for total shut down, meaning no more water/electric. I bought wheat, oats, rye and barley seeds. He almost blew a fuse. Lololol. I seriously feel like I am going at this completely alone. We live in town, wanting to move out near natural lake or on someones land where we can buy livestock, swine, game etc and have an ole fashion water well. Unfortunately don't know anyone like that much less others that are thinking like me. This is scary business and I don't like going through it alone. Seriously looking to get into a community. FAST!

    I also pressured canned my fanny off this summer/fall.... It was a lot of work but I'm so glad I did it, my pantry is packed. Also dehydrated and dry canned a ton this year, also pressured canned new-potatoes w/skins on for the first time (turned out beautifully). Love your channel you do a fantastic job! ❤

    You are such an inspiration! I also love canned potatoes!!! Ive done 28 quarts of sliced potatoes in the last few days, and did about 15 quarts of chunks in July.. i have added the pickled coleslaw to my list for next year! Have already gotten my seeds for the cabbage too!
    Can you share a recipe link for your pizza sauce?!
    I’m hoping to slowly bulk up my homestead needs this winter.. with a dehydrator, a nice blender, a larger pressure canner.. etc..!! So exciting!
    Two friends came over last night and we dispatched and processed four meat birds that were given to me, so i will be canning chicken and stock for the first time! About to rewatch your other videos on that!

    Yes, you must make mustard! I've been making this one for years. I've blended it really well, not so well and really not much at all. Comes out wonderful every time. I do not use the rosemary as my husband doesn't like it. Hope you try it!
    DIJON MUSTARD MAKES ABOUT 6 (4-OZ./125-ML) JARS
    2 cups (500 mL) chopped onion
    2 cups (500 mL) Pinot Grigio or other dry white wine
    1 cup (250 mL) white wine vinegar (5% acidity)
    1 tsp. (5 mL) salt
    6 garlic cloves, coarsely chopped
    4 black peppercorns
    1 rosemary sprig
    1 cup (250 mL) yellow mustard seeds
    1 cup (75 mL) dry mustard
    2 2/3 cups (650 mL) water
    1. Combine first 7 ingredients in a large stainless steel or enameled saucepan. Bring to a boil over high heat; reduce heat, and simmer, uncovered, 15 to 20 minutes or until onion is very soft, stirring occasionally. Remove pan from heat: pour onion mixture through a wire-mesh strainer into a glass or stainless steel bowl. Discard solids.
    2. Stir mustard seeds and dry mustard into wine mixture. Cover and let stand at room temperature at least 24 hours, but no longer than 48 hours.
    3. Process mustard mixture in a blender or food processor adding water until consistency of cooked oatmeal.
    4. Transfer mustard to a small saucepan. Bring to a boil, stirring often reduce heat, and simmer, uncovered 5 minutes.
    5. Ladle hot mustard into a hot jar, leaving 1/4-inch (5-cm) headspace. Remove air bubbles. Wipe jar rim. Center lid on jar. Apply band, and adjust to fingertip-tight. Place jar in boiling water canner. Repeat until all jars are filled.
    6. Process jars 10 minutes, adjusting for altitude. Turn off heat: remove lid, and let jars stand 5 minutes. Remove jars and cool.

    yes it is a full time job and I pretty much can from June to Jan. I work full time outside the home also with two hour commute. There is nothing better than having filled jars on the shelf!

    I went to the farmers market a lot this year . I just ordered another pressure canner, I do have one, everytime I to the store I get more jars. I will be canning more next year and grow more veggies.

    I do green tomato pickles with a clove of garlic, teaspoon of dill and half a seeded jalapeno in each jar. The longer they the better they get.

    It takes a long time for me to can. Washing, prepping the foods, filling the jars and then processing....at times has taken 4 to 6 hours. Its a lot of work..but so nice in the winter. So good job Rachel!!

Today my husband and I opened a jar of bread and butter pickles we made 2 months ago. They were the best we ever had. I'm hooked. I'm constantly sharing your videos with my friends and family.     I only recently discovered your channel and haven't had a chance to watch much, but I wish I could sit down and pick your brain. I have so many questions. Many of the homestead and garden channels I watch are in totally different areas of the country, but you are the only ones I know of that are in Michigan which is where I am. I'm in Metro Detroit area. I'm really excited to work my way back through your videos so I can learn more about growing in Michigan

    Yes, thankful to God for what he does provide. I also canned a lot more this year. I was running out of jars and my mom just brought me 400 - 500 jars that she is no longer using! And I have already filling some of them as I finish the canning for this year. I will have to try that onion jam it sounds good.

    Beautiful harvest! That's a lot of hours of work to be very proud of. We go through so many jars of pickled onions, both red and sweet white, it's not even funny! We also like red cabbage and the pickled coleslaw looks very tempting.

    I did quite a bit of canning aslo.. 4 jams, tomatoes, tomatoe sauce, pasta sauce, ketchup, beans, corn, applesauce, chili, veggie soup and beef stew, and rhubarb and pepper relish.
    Plus froze alot too.. tomatoes, beans, rhubarb and a few other things

    Spot on video. I haved canned more this year than all others put together. It is a TON of work, but when the snows come, we don't have to get out if we don't feel like it.

    Your pantry is amazing! For me when I watch your channel it's about inspiration and what can I and maybe should incorporate in mine. I hope other people are watching and growing a pantry that works for them. I dis-like canned beans, you will not find them in my pantry, now I do keep them in my freezer- un-blanched. I have a fridge completely dedicated to drinks, it's one of my favourite to organize.

    I do canning more as a hobby than as a need. It's fun, and I get a lot of enjoyment out of it -- even though it IS a lot more work than just buying from the store. I don't have room for a large pantry, though. Thank you for all the tips and instructional videos.

    I like how you said “He yields the harvest.” Because I’ll tell you what, this is my first garden. I also have a toddler, two dogs you might as well call furry toddlers because they’re so messy and needy, AND my female became a first time mom about a month into the season. Managing pests and diseases became a very low priority and because of that, my first true flush of peppers…never existed. Haha. I also wasted a lot of time managing my tomatoes, looking back now, because I never got rid of their disease, but I’m still ending the year at over 100lb. But now that the majority of the chaos is over and I have time, I’ve been blessed with a husband who was at the ready to throw down the money AND build me a greenhouse. Now I’m wondering, will the weather last until my second flush of bell peppers are ready for harvesting? But at the end of the day, or the season, it is all very much an enormous learning experience. And if you don’t think a whole lot about the money put into our first year, I still have a decent amount of tasty treats on the shelves. Will it sustain my family? Haha…no. But will it be an exciting experience to pull a bag out of the freezer or a jar off the shelf? Hell yeah.

    Rachel, you are a wonder! You worked your tail off this year! I’m surprised you didn’t lose 50 pounds as hard as you worked. Your pantry is amazing, so beautiful. Now you can rest a little and enjoy the fruits of your labor(and Todd helped some, too). Here I am patting you on the back, you’ve gone beyond being an inspiration, I will never catch up! Lol, of course, I am probably 20 years older than you, so slowing down on energy and strength. God bless!

    I use tattler lids for both water bath and pressure canning , have not had any issue water bathing them :)!

    You did a great job at explaining the time it takes. Many times I’ve been scoffed at and told to just buy it at the store. I’m not being questioned this year! I actually like all the work involved and knowing where our food comes from.

    I was really looking forward to seeing you make apple butter (I tried it myself this year for the first time - not too bad) anyhow I can wait until fall 2021 to watch you make your recipe. This is not meant to make you feel bad! Your pantry looks amazing and reflects all your hard work, not just in the time spent canning but also the long hours cultivating and growing vegetables etc. I’d be super proud if I had done half of what you’ve achieved. Good job.

    WOW! That is amazing!! I just starting canning this year and am glad I did, It is not hard to do you just got to stop thinking about doing it and just do it!! So rewarding. My goal is for my pantry to look like yours by next year ! :)
