I agree with you that actually making the soup first does indeed make a better tasting product. Even if you thicken it when you prepare to eat it, you have still saved a ton of time and have a wonderful home cooked soup to enjoy with minimal effort at dinner time. When the holidays come around again, when potatoes are cheap, and we have lots of leftover meat, I want to try this then! I am always making broth. My canner comes in the mail tomorrow...and I am excited to get started! I have water bath canned before...but never used a pressure cooker...so I am learning all I can.
I pressure canned this recipe...and now read that using sage in pressure canning makes a sour or bitter taste. Have you tried the soup after it is canned to see if that's true?

Yes I have ate some already and no it’s not bitter! If anything watch your salt. It’s better to under salt and add more later.
