    Hi Josh and Carolyn! Merry Christmas!! Thank you for choosing my question for your Pantry Chat today. It was great hearing what Carolyn had to say about fermenting Cranberry Sauce. Yes, I have been with you for a long time and have learned so much from you. I love learning from you and am looking forward to what you have in store for 2025 including Homesteading Family as well as STS. I follow you two more than I follow anyone else!

    I use a brake bleeder to vacuum seal jars (with the ball attachment). Works great. No batteries.

    "It's hard to find joy when you're overwhelmed." So true! Even when it's something you enjoy. Slowing down or maybe changing priorities is a must, especially when we are enduring personal difficulties such as losing a loved one or other hardships.

    I wish I had found you 20 years ago. I am 74 yrs. young but have learned alot from you just the same. I learned how to make ekderberry syrup, juice wuth a juicer you advertized. I grow my own elderberrys, beauty berries and blueberries and this spring thinking of combining all 3 and canni ng combo juice. I love it over crushed ice in the summer with a splash of 7-up. I have it every nite i er crushed ice andso healthy. Thank you. ❣️

    It’s always good to watch you/your family. It brings into focus that my husband and I are on a similar track, even though he is still working. We are going along steadily just like you and getting the animals & vegetable varieties figured out. My kids are doing the best they can where they live and we just keep praying we can all be closer whether it is on our ranch or by them. We saw Homestead last night and we realized that we hadn’t thought it through if/when the time comes.

    I don’t ever recall hearing that “homesteading is easy” on any homesteading channel I follow. In fact quite the opposite. Part of what I enjoy about your channel is that you don’t say anything you’re doing is easy. Instead you navigate processes to help simplify and manage tasks or educate to give folks ideas and a realistic understanding of what it will take to do whatever level of ‘homesteading’ one wants to pursue. Personally, my ideas, wants and dreams are always more than I will ever be able to do. But I’m also a realist who thinks through my options and when a change has to happen (which always is the case) I make the change, whatever change looks like for any given idea, and move forward from there. My heart longs for so much more but I know it isn’t ever going to be. We are a very small fish in a big pond and frankly at our age will never be anything more than this. If we had family that wanted to live more along the homestead way, it would be very different. So, thank you for your rational voice in an increasingly loud world of opinion. You are a blessing!

    Love these videos. I've downloaded them and listen to the audio at work (work as a gardener). Recently bought a property and wasted no time turning the front and backyard into a productive garden. Still plenty of work to do but I appreciate all knowledge you're sharing from planning on what and when to plant to all the canning and dehydrating food storage videos.

    We freeze dry extra every time I do a batch of something so I have things for us but also to help other folks who may be having a harder time. I have sent so many bags of Freeze dried eggs to family who really needed the help. Love that idea of creating a panty just for that

    I vote for freeze drying for a future need for your community.
    Perhaps 10% of what you produce gets freeze dried and tucked away for the unexpected.
    Currently I have Helene victims on my mind. Having food nearby is what has saved many in the rural areas.
    I run a food shelf in a far north small community. All of our food comes from at least two hours away.
    Our topography is rocky, heavily wooded or lakes. Growing food here is very difficult.
    We are working toward a food resiliency model and freeze dried food has to be one of the components.
    It is nutritious, lightweight and has a very long shelf life. It would likely survive a flood, an earthquake or a blizzard.
    Just my two cents worth.
    Thanks for doing such a great job of providing useful information.
    I still remember the first video of yours that I watched during Covid.
    The two of you sitting outside. Unafraid. And teaching people how to be resilient. Good JOB!!

    I have heard on the internet that people are focusing on the bad effects of pink Himalayan sea salt. Have you heard of this and do you think there's cause for alarm?

    Sorry to post a second time but at some point can you tell us how you grow egg plant in the west? I have never gotten them farther than starts or from the store but they eventually just didn’t do anything. Such a challenge; yet, I can grow tomatoes and peppers.

    Unfortunately, in the UK, unless one is registered (at a cost) with local authorities, that involves confirming you’ve read, understood and agreed with all the rules, regulations and potential fines, we’re not allowed to sell or even GIVE AWAY home grown produce on a “regular basis” other than to close family. “Regular” is listed as annually, monthly, weekly, daily or “any other time that could be deemed as regular”. Some Foodbanks can give away fresh vegetables, fruits and perishables like dairy, eggs or meat if they have refrigeration and if they take detailed notes of the source of the food including home grown produce ONLY from those of us who’ve registered with local authorities and adhered to all the bio health and safety standards and procedures. This, by the way, includes ensuring salads and vegetables that may be eaten uncooked being grown in a slug and snail free environment.
    From what I gather from US homesteader videos, states are implementing similar policies as ours in the UK and the EU. I suspect it’s part of the process to align farming and food production procedures ahead of so called free trade deals. Although in the UK our strict animal welfare and crop production regulations (and strict net zero carbon tax laws) do not apply to cheaper food imported from thousands of miles away.
    It’s maddening that I have to compost my excess produce or risk being fined £2000 if I gave it to a neighbour who is only being offered processed food by the local foodbank.

    Maybe its not the best path. Try Carnivore. First 2 weeks suck but this diet is amazing for us. PURE meat. 16/8 tk start. Fat n meat. Fasting is good for you . Think about it. Its what how all humans evolved. Meat water excersize and fasting!
