best video for soffritto, I have made soffritto over and over again to make perfect taste and find this is the best way (adding carrots first and so on)
Very well done video .. nice kitchen and production values .. and you are the only one who has shown the correct order .. carrots then celery then onion .. no one else does this. Great video!
I agree with you 100% - so many people start with the onion and caramelize them - that's fine if that's what they like but they should at least point out that we don't traditionally caramelize the veg in a proper soffritto (or mirepoix for that matter.) This is my favorite video for soffritto 🙂
When I'm making Puerto Rican style sofrito I like to use a store-bought shortcut to save time I will use a jar of tostitos salsa and I will add lots of garlic and a bunch of cilantro and this will complete the sofrito I also buy the garlic already chopped up and depending on the dish I will add green onion or scallions as some people call them just the green part you can take the white part still on it and plant it in the dirt or suspended in a cup of water so the roots are touching the water and it will grow so long as it has sunlight if you do water you must change the water frequently also trim the roots cuz they do grow very long
Thank you. The ingredients listed at the end are not visible because of UA-cam sign on top. I download the video and watched offline INGREDIENTS 150 grams of carrot 150 grams of celery 150 grams of onion extra virgine olive oil as needed
I think that the point of this recipe is that all ingredients are cooked at the same level. The carrot is harder and that’s why it goes first, or else we would burn the onion
My half italian mom used to tell me that in soffritto the garlic is just an extra but people have an obsession with it in other countries. I cant be sure it had to be true, but i just enjoy the garlic anyways
@@bdr518 you're touching on a beautiful concept. You're slightly right. With each flavour base, we touch on aromatics AND we also touch on the frying fat used to reduce/saute the aromatics. For example, the flavour base for Indian food is ginger, garlic and onion - they love using ghee (filtered butter) as their fat.

"same dimensions" cuts them wildly different

INGREDIENTS
150 grams of carrot
150 grams of celery
150 grams of onion
extra virgine olive oil as needed
When I make my sofrito for Puerto Rican sofrito I put it on the blender that's how I was taught to make it
Add a wet towel under your cutting board to avoid to lose a finger.
Appreciate 🙏
Not needed hater learn to cook kid
I never KNEW that carrot skins are BITTER...
There not
Good vid but I think you cut too much of the onion and carrots’ ends when peeling them. Is there a reason why?
Can be added as per choice.
Hilarious 😂
What happened to "always start with onion"?

Why so much problems with starting the electronic?
👍👍
Great instruction. Please do something about the shitty music.

👍🏻
Yooo. That onion cutting was horrible lol
My thoughts exactly lol
It's more of a mirepoix than a soffrito, right? Soffrito has garlic
True :)
No

I always thought a soffritto was made with olive oil and a mirepoix was with butter.

It's in the English language.
Vc da muita despesa em uma cozinha. Desperdiça muito alimento
What is this, a soffritto for ants?
Treat food with respect! There are places where people go hungry and you throw so much away. Shame on you! 😢
We teach so you can learn and treat others. 😊
Well they aren't going hungry here.
Ridiculo
I agree.
