How Did They Make Candy 200 Years Ago? - 1830s Caramels
Вставка

- Deliciously sweet caramel has been enjoyed for over 1,000 years, making it one of the oldest sweet treats still being enjoyed today. Originally, caramel was made using only 2 ingredients: sugar & water. The variety of sugar was important for achieving different flavors, with red sugar and molasses sugar being popular in the use of caramel making by the Arabs since their invention of the sweet dish sometime around the year 1,000. Caramel remained that simple from it's invention in the 11th century until the mid 1800s when dairy was first added to the crystalized sugar in order to make the, "soft caramels" that we still enjoy today. Sea salt caramels became popular in the 2nd half of the 20th century 1970-today.

Hard caramel is a very easy dessert to make, with the biggest obstacle being how to cook it over a fire without a candy thermometer & not burning it. If you feel comfortable trying this at home you can make your own caramel with only sugar & water! Below is the recipe:
*Pre 1860s Caramel (from The Cook's Dictionary, 1830)
1 cup of white or brown sugar
1/4 cup of water
In a sauce pan combine the sugar & water. Set it over medium-high heat and stir until it starts to bubble. Once it bubbles do not stir. Stirring it while boiling will ruin the caramel and make it grainy. While cooking, if you have a candy thermometer be sure that the temperature does not exceed 375 degrees or it may burn. The ideal temperature is 320 degrees. As it boils the color will gradually change into a caramel brown. Once you've reached that beautiful color it's done. Carefully pour into your desired mold or a plate lined with baking paper (lining tins with paper is a practice that goes back centuries). This settles quickly and should be ready to enjoy within 20 minutes.
*These would make delicious, homemade lollipops. Quickly pour the molten caramel into molds with lollipop sticks placed over them.
*Post 1860s Caramel. This recipe is my own, inspired by a compilation of a dozen or so real recipes that I've seen published between 1860-1900. The main change between this caramel and earlier variations is the addition of dairy. This results in a different end texture which is soft, cuttable and chewy. This will still not be like the ultra-modern caramels that you may be familiar with though. Those usually contain corn syrup. Although corn syrup did exist during the 1800s, it did not become commonly used in cooking until the 20th century so I omitted it for more accuracy.
1/3 cup heavy cream
5 tablespoons of unsalted butter
1 cup of white or brown sugar
1 teaspoon of salt
1/4 cup of water
In a sauce pan combine the sugar & water. Set it over medium-high heat and stir until it starts to bubble. Once it bubbles do not stir. Stirring it while boiling will ruin the caramel and make it grainy. While cooking, if you have a candy thermometer be sure that the temperature does not exceed 375 degrees or it may burn. The ideal temperature is 320 degrees. As it boils the color will gradually change into a caramel brown. While that boils in a separate saucepan combine the cream and butter. Melt over medium low heat until the butter is a liquid. Once the sugar has browned nicely carefully pour the melted cream & butter mixture into the cooked sugar. Add salt. Stir up well & then cook for a further 2 minutes on medium heat. Carefully pour into molds or on a pan lined with greased paper. Allow to set in a cold place, such as a refrigerator, for at least 2 hours before slicing & enjoying. Sometimes it can take up to 24 hours to set up.
*Be very careful when working with hot caramel as it can cause serious burns if it makes contact with your skin or eyes.
If there is no thermometer, it may be helpful to use the drop method to check what stage it is at, like soft ball or hard crack.
Pre 1860: Enjoy as a hard candy, or pour over pastries before hardening, OR use as windows on your gingerbread house 👍😁

I find it interesting your cat's name is mishmish in Hebrew that means Peach... The way I used to do it without a candy thermometer when I was macrobiotic and making it with rice syrup is when it would come to a boil and if it comes off the spoon slowly you know it's done then turn it off and let it you know don't pick it up too quickly cuz you can burn yourself if you pick it up too quickly and then I would just pour it slowly out into well an ice cube tray. That's almost 30 years ago... Gosh do I feel old.
Some used to use drops of lemon or orange to give it a little extra flavor. I'm talking about your hard caramel kind.
When Mish Mish meows, my cats come in the room and look around. 😂
Mine too!
Here too
My stray, now mine, come looking around as well!
When Mish Mush meows, *I* look around, because he sounds just like one of my cats! 😂😸
I have one of my 6 in the room with me and although she was sleeping, every time that Mish Mish meowed Sprinkles got up and looked around!
Mish Mish is cute. I Love cats.
I got 3 right now. 2 are foster, owner died a few days ago. Waiting for the cops to find his next of kin to take them. If they don't, I'll be looking for new home for them. I also have a dog. They all get along (thank God).
1.2mil is still not enough subscribers for this channel. Still deserves more. Pleasant, educational, wholesome.. perfection.
Yep!
Agreed

Absolutely!
2:50 Mish Mish thinks "Welp, time to get back on the roof".
Mish Mish chatting away always seems to get my cats at home all worked up. There looking at the TV trying to find him 😂
I LOVED THIS!!! Your interactions with the Mish Mish were too too CUTE!!!! ❤❤❤❤❤❤
I think what i like the most is that your videos are so immersives and we forget there's cameras, micros and computers around😊
Can anything top fresh-baked cookies? 🍪
Thank you for solving a mystery for me that went back decades. After WW2 Mom and I lived with my English Grandparents in a small Yorkshire village for several years. My grandmother would make this brown candy of which I never learned its name, until now. It was only after Mom and my grandmother passed away that I remembered that treat. It's the small things that stay with you through your life. I'm now 80 years old and you took me back to my grandmothers' kitchen. Thank You.
Both caramels look great. Thank you, Justine for the recipe.
Mish Mish has been mischievous.
I love caramel to the point where I think I prefer it over chocolate (a dangerous opinion, I know) and now I know what my next mission in life is: to make this receipt myself! 😋
I used to like chocolate but over the years I prefer caramel…..
Just have both! 😀
Me too!
I'm going to miss this sweet, cozy cabin and the surrounding property, but I'm also looking forward to seeing the new house.
Loved this! Thank you.
I love Carmel! I make a Thick Carmel Sauce just like your post 1860 recite except I add more cream, butter & vanilla. I mix chopped pecans in with the Carmel . I use it as filling & topping on my Black Devils FOOD scratch cake.
Anything I crochet , I keep away from my dog . Mish Mish is too much and so stinking adorable 🥰.
I wish I was this calm when I cook.😮
I think I’d pick post 1860 caramel. Using the pre 1860 to drizzle while warm sounds interesting. Like the first hard shell topping. 😊❤
Looks like amber-colored stain glass. Very pretty. Great job Justine!
I thought the same! It's so pretty.
MishMish at the door trying to leave the scene of the crime lol
Such a pretty black catto. ⚫️ 🐈⬛🖤🐈⬛
Justine has her caramel colored dress on! Lovely, too.
Pre 1800 caramel is more like rock candy. Both versions look yymmy!❤
Mish Mish wants to be a chef's assistant. That is why kitty took the pot holder....
Ron and Justine!! I’m riding my bike through Springfield, MO but will check this out at the next rest stop (ie. Home)! So glad you posted!
I absolutely love your dresses, Justine. Do you sew them yourself? I always look forward to your videos … ☺️💕
My mom always made her own homemade caramel sauce for ice cream. It was so good! I used to tell all of the younger kids in the family that it was “adult caramel” so they wouldn’t eat it all!
When I was a kid I somehow accidentally made a chocolate taffy it was so good. I think I used a jar of corn syrup. I thought I was making brownies, lol.
Aw, poor Mish Mish ruined your pot holder. My kitty, Minka, goes through scratching posts like they're going out of style. I love your dress, it's really pretty!
I love the dress too!! My cats have scratching posts, but they prefer clawing out little concaves in our fence-post wood trimming. Everywhere in the house, from shin to thigh height, the fence posts have been stripped to pale wood ^u^
I love the hilarious kitty!!!❤❤❤❤🐈⬛🐈⬛🐈⬛🐈⬛
I made an old 18th century caramel that used lemon and it was really tasty. I used it for show and tell at our book club. It was a soft chewy kind.
YUMM! Kids here grew eating scottish toffee which is right in the middle of both . Creamy and sweet like the 1860s but the best was brittle enough that you could smash it into bite size pieces. When i was a kid a box of MacKintosh toffee cost 10 cents and every kid bought one at the Saturday matenae . The sound of 200 boxes being slammed onto the floor was deafening 😂
Scottish toffee sounds good! I'll have to see if I can find some!
These both looked delish, and Its always a treat seeing mish mish.
LOve Caramel Candies ---- and especially soft Caramel drizzled over Ice Cream.... Old Fashioned Pecan or Peanut Brittle is another favorite..
I have eat the dark candy my mom would make for us when we were young . Love it stay safe
The pre 1860s reminds me of my childhood here in Australia. My mum would make this and pour it into mini muffin trays lined with paper cups, then stick a popsicle stick in them or sprinkle with hundreds and thousands. Here we call it toffee
Looks delicious as always 😋
You both are so great. Hit so many boxes. Asmr, history, family, cooking. Love it!❤
pulling that wagon up so the cat can jump down!! haha just makes one smile!!
love this channel!!
I love how the re 1800s caramel looks like stained glass!!!Absolutely love your dress Justine!!!
Happy good friday and happy Easter
I prefer the creamy caramel. It looked so delicious! Thanks for sharing these cooking videos. They’re so enjoyable!
Omg!! Such a naughty kitty!! I absolutely love Mish Mish!!❤❤❤🐈🐈🐈
Caramel is my favorite, along with butterscotch too, yumm.
Wow I thought caramel was a fairly new thing. Justine I love your dress the colour is wonderful on you. Happy Easter to you and yours. Cheers from the pacific northwest. Canada side.
That color looks so nice on you, Justine ❤
Aw, thank you!
@@EarlyAmericanyou’re so welcome ❤
Mish Mish is just too cute. That caramel looks really yummy.
Very interesting. Great video, keep up the great work.
I watched my Gramma E. Make the Carmel with butter and cream recipe. She said always make small batches at a time in a small enamel saucepan. These are soft carmels.Really good. Wrap in waxed paper and freeze.
I would all of that in a day. 🤣 Mish Mish is so cute!
Hi Justine. I've been a subscriber for quite awhile. Actually I'm subscribed to both your channels. I really enjoy both of them. I'm also so happy to see your subscribers getting so high. Thank you for teaching us how to make caramel in two different ways. You are so talented, just a joy to watch.
Thank you for your videos and the time that you put in to them how people ate back in the 19th century very interesting. But what I love the most is the kitty. I’m not sure if it’s a he or she but the kitty has a fun personality that makes me smile And I love the way she talks to you. Thank you for putting out wonderful videos. Hello from the Texas Hill country.
Yay 🎉🎉🎉🎉🎉 😊 I always smile when I see you made another video 😊
First time hearing about the channel! It's so beautiful, in terms of decoration, scenery, and movie-like setting.
As always, I truly enjoyed your video. What a welcome reprieve your videos bring to me and my family. Many blessings to you and yours! Thank you!
Loved this episode!!
Looks like a beautiful day mish mish seems to be having a lot of fun Love the video
Thank you for pointing out the difference. I never knew this existed. And MishMash will come down when you cook the 1800's equal of fancy feast. Lol.
Wow ❤ i adore this lifestyle and the beutyfull recipies😊
Enjoyed the video Justine That Mish Mish is so mischievous ❤❤
Just a tip when you make caramel get your sugar level in the pan and then add the water. Never stir it, that is what causes the crystallized sugar on the sides of the pan.
Amazing. I'd love to try this!
O Justine that particular dress is very nice! Very becoming on u!! Love it. Looks comfy actually! Perfect color for caramel making!
That Mish Mish is so smart! Lol! 🐱. The candy looks delicious! 💕
Happy Good Friday
God bless 🙏🙏🙏❤️
Greetings from Redondo Beach 🇺🇸Watching your video brings me back in 19th century. Very effective. Cheers 🥂
I love the bit with MishMish and the wagon 😂 too cute, both of you!
Thank you for sharing very humble to watch
Lol! That booger knows he’s being a pain! I love cats & I do think there is an unusual mischievious spirit about black ones! Great candy video!
Mish Mish is the real star of the show!
1:11 That's both cute and hilarious 😅. I love me some Mish Mish.
I love miss Mish Mish meows! He answered you so darn cute!
I envy people who can make candy. Sugar and I just don't get along, I always burn it! Both caramels look delicious!
Interesting comparison. Yummy amber shards.
Mish-Mish is short for mischievous 😂 we forgive him 🥹
That was so easy and looks delicious. My kinda receipt! MishMish was having none of it. Lol. He wanted out.
Yummy! Mish Mish is a sweetheart!❤
Love these videos. Taking notes! (Kitty wanted to be co-star.)
What a naughty kitty 😺 😅
It definitely looks delicious and different from werthers.
I love your kitty. My neighbors cat got on my trailer roof once. My cat sat in my home meowing at it😅😊
I wish I were there to enjoy some of that! I bet some enterprising 1830 cook added butter to the sugar and water - only butter. I I bet it was really good too!
When I was little my mom made candy like this, but she poured it on wax paper in small circles about the size of a saucer. Then she put some kind of heavy string and made a loop that hung off the edge. When they dried. We strung ribbon through the loop and hung them on our Christmas tree. Then she would let us take some off the tree and eat them like a safety sucker.
Mish Mish-"But trouble is my middle name!" 😂
Justine, I love this channel and Frontier Patriot so much! Watching you cook with such a serene and calm expression is so satisfying. Thank you for inviting me into your home 💜
My cat Sprinkles does the very same thing, climbing on the roof and waiting for me to rescue her. Only I use a large garbage bin for her to jump down onto! They do love our attention!
Cats are such showboats 😂😂😂 I love it.
Lovely as always Justine. The dress you're wearing is very pretty 😊
Looks delicious, Justine! I think Mishmish is going to have a ball finding trouble at the big house. Thank you and have a blessed Easter! xoxo
That cat is not going to stop getting up there, lol. He's having too much fun!
New Dress? Looks good. Wish my lovely would try these styles. Maybe she will one day.
I'm imagining how everyone felt the first time they tasted/discovered that caramel went great with chocolate😊😋
I admire the authenticity and educational facts to learn about candy making, reminds me of Willy Wonka and Honeydukes from Harry Potter. Hope you have a blessed Easter Sunday 😊!
There goes the pot holder 😂 Mish Mish improvement ❤
I remember going through the same scenario with my cat when I was a kid, lol. She always acted like she didn't know how to get off the roof and it scared me!
Three difference between the two caramels is surprising! I've never seen one clear like that. The second reminds me of pralines minus the nuts.
Very yummy and interesting video!! And Mish Mish is so cute and smart 😻
Mish Mish is a natural actor.
I’m always impressed with what you do Justine but this amazing! Anyone that thinks cooking anything on an open hearth is going to be easy let alone candy.most people can’t get it right with modern technology.
Fantastic they look delicious 😋 please be careful with your dress around the fireplace 😱 thank you for the video 😊
When Mish Mish meowed, my kitten Danica jolted awake on my lap and raptly STARED at the rest of the video 😂
They both look delicious and pretty easy to make! Is there much difference in the taste of the 2 kinds of caramel ?
My kitten, also black, does the same thing.
