To Make a White Fricasey - The Art of Cookery Made Plain & Easy, 1774 edition 1 rabbit, cut into sections bone-in OR deboned and cut small Half a pound of mushrooms, I used button mushrooms 1/4 pint of cream 1 cup of milk 2 cups of water 2 tablespoons of butter 1/3 teaspoon mace 1/3 teaspoon nutmeg Salt & pepper to taste Into a pot place your cut up rabbit with water & milk enough to just cover it. Simmer gently till tender, or about 10-15 minutes. In a separate skillet combine cream, butter, mace, nutmeg, salt, pepper & mushrooms. Stir frequently and cook until the mushrooms are soft, or about 5 minutes. Take the rabbit out of the pot and place into the skillet with your cooked cream & mushrooms. Stir up well and cook for a few minutes more before platting up. I wouldn't be surprised if similar breads were eaten here. I use Rouge de Bordeaux flour, the most likely variety that was grown here in the early 1800s. Ooh we have a similar dish, here in Ukraine, but we cook the mushrooms in sour cream and we also fry onions and garlic before adding anything else. Meat is often on the side, but it’s always delicious nonetheless.

I've ate rabbit before but can't remember the taste. I was so little in the 50s. I remember a rabbit box to trap the rabbit. Also traps to catch fish and birds. That's how we got our meat. ❤
I was thinking of Mish-Mish when I watched this video. What a beautiful cat! I wondered when cats first came to the US. I found some neat articles on how cats first came over with the colonists on boats and were used to protect food stores. In the 1700s they were used to control mice and rat populations. Cats weren't really considered the dear companions they are today until the 1800s, and they weren't really common house pets either until 1940 when kitty litter was invented.
We had a rescue cat many years ago when the kids were small. Although he was a neutered male he felt it was his duty to care for the children. One morning he left a baby squirrel minus the head on the front porch. He provided the best part for us. So kind.

Rabbit is so delicious. I wish it wasn't so expensive anymore. I'm used to get a whole rabbit for about six bucks and now they're close to 20 bucks
