It's hard to believe that dandelions are not native to the Americas considering how prevalent they have become! It's thought that the first dandelion flowers were introduced to what is now the United States sometime in the 1600s. They may have even first come on the Mayflower, as early settlers commonly used dandelions as both food and medicine. They spread quickly. So quickly in fact that it's now hard to imagine a time here where we didn't have dandelions everywhere! Dandelions are native to Eurasia (Europe & Asia). Please try to make this at home if you live in an area that supports dandelions. Dandelion jelly is INCREDIBLE and underrated. Dandelion Jelly, Justine's own 1 cup of dandelion petals 2 cups of water The juice from half of a lemon 1 cup of sugar Half a box of pectin powder, or 0.8 oz Starting from mid-morning through the afternoon collect dandelion flowers. Do not collect them in the dark as the flowers will be closed, making them harder to process. Once collected rinse them in water to remove any dust. Using scissors or your fingers remove the yellow petals from the green stem. It's ok if you are not 100% perfect in the removal of the green base, just be sure to remove as much as is realistically possible. Boil 2 cups of water. Once boiling pour the hot water over your flower petals. Allow it to then sit for 1 day (24 hours is ideal and no more than a day and a half). Strain the dandelion tea in a fine mesh sieve. Into this tea add lemon juice & pectin and bring to a simmer. Once simmering add your sugar, stirring all the while. Simmer for 2-3 minutes more only and remove from your heat. Pour into a jar and set aside for 24-48 hours, or until the pectin has firmed up the liquid into jelly.
Yes I will and they are really great for your health. I have picked the greens and mix them with kale and mustard cooked with some bacon fat and topped with hard boiled egg and vinegar, yummy! Spring tonic!
When I was little, my grandma would fix me fried dandelion blossoms. She soaked them in salt water for about an hour. Baptized them in egg, rolled them in flour and fried them up in a skillet full of lard.

Growing up in Massachusetts in the 80s it was a school field trip staple to go to places such as Old Sturbridge Village, Plymouth Plantation and also on a long field trip, Colonial Williamsburg. I was always interested in the ways people lived in the "old days" History is awesome!
Everyone is talking about dandelion wine, but did you also know the leaves can be used in salads and stir fry. Plus you can ground the roots for coffee! I definitely plan on foraging as many of these wonderful plants as possible when I start homesteading

I had a big jug of apple juice and I decided to make some Spiced apple jelly the day after I made the dandelion jelly. I put the same spices in as I would do my apple better. Which was cinnamon and cloves and I put a lot of brown sugar and white sugar in and it turned out so good! I really love all of your recipes so much. I have dinnerware, cookware, bakeware, decor. I simply love it. I got my first piece as a child. My grandmother gifted me a brown crock. She got welfare cheese (long ago Velveeta) in crocks with spring latches during the depression. I moved on to collect everything. I love my collection.
A lady in Azerbaijan made dandelion honey on the site Kand Dadi /A taste of village life. She does most of her cooking outdoors. It's amazing the techniques she uses now are so similar to the 1800s.
Dandelion greens are edible too! They're great-- VERY strong and somewhat bitter-- so they're really excellent to throw a handful of into other things like colcannon or rice dishes for some extra punchy greens flavors.
I was raised like this on my great-aunt’s farm. It brings back so many fond memories and I can still smell the fireplace and hear the crackling of the wood. They were hard times but very, very good times 🥰🙏🏻

We had a bumper crop of dandelions this year. But i mowed them when i mowed the grass. Next year i will be making this jelly. I only wish i had seen this earlier.
I did it! And it is wonderful! My husband was amazed at how good it tasted. I made 2 ball jelly jars with this recipe. Will do it again. Oh, and I also put a piece of cheese cloth in the sieve to catch any pieces.
An old-fashioned Dutch way to eat dandelions is as "molsla" (mole's lettuce). Put a bit of soil over a dandelion plant (or look for a molehill), so the young leaves start growing but stay white because of lack of light. These white leaves are not as tough as normal dandelion leaves.

I have never made jelly before, but I have picked dandelions from my yard (because I know that I don't spray any pesticides) and made dandelion salads for my husband and I to try them. I used an avocado dressing, and it really was delicious!

As a Mennonite I learned from my mennonite grandma what wild flowers and wild herbs and wild mushrooms and wild weeds and wild plants and wild nuts and wild fruit and vegetables can be picked and cooked with and can be eaten. I learned what fruit tree leaves can be used to make tea and medicine. People nowadays never learn how to get food from their back yard and form the wild and wood. People need to learn how our poor father lives before the grocery stores.

Our jam is made from flowers, which also release pectin (so excess pectin is not necessary) and jam with petals and flowers, that have become transparent is especially awesome.

Dandelions make good tea and wine.
I make dandelion salve for sore, rough hands and to help as an anti-inflammatory. I love it! The leaves can also be dried and used for tea as well.
My sister adds the petals to shortbread cookies. My niece and nephew love them.

My dandelions are tall enough to be weed whacked, I guess that’s too old… never tried dandelions in anything before, I will have to try next year…

As a Mennonite I learned from my mennonite grandma what wild flowers and wild herbs and wild mushrooms and wild weeds and wild plants and wild nuts and wild fruit and vegetables can be picked and cooked with and can be eaten. I learned what fruit tree leaves can be used to make tea and medicine. People nowadays never learn how to get food from their back yard and form the wild and wood. People need to learn how our poor father lives before the grocery stores.

Beautiful! Dandelion jelly is one of my very favorite jellies, but it is so time-consuming to make a batch. Every time I make it, I say I am never making it again. Lol!
I'm definitely going to try this. One summer I made jelly from lavender flowers and it was fantastic. I love experimenting.

I made dandelion jelly last year. I also bake bread. Can only confirm that it's heaven on a slice! They're not out yet here but I'll definitely make it again this year.
Now the kids and I have a great activity to try when the dandelions start to pop up! So very curious to taste it now…
Have heard it called the poor man's honey. But with the white sugar, not so sure about that. LOL. I tried to make some last year, and ended up with green water that I threw away. I didn't take the green back of the flowers off. May try it again this year. Thanks for the showing of how to do it.
I never thought of dandelions as anything but weeds-but this has given me a whole new perspective on these “weeds”. It looks delicious-like sun shine ☀️
My grandmother used to make salad from the greens.
There are so many “weeds” that are edible and beneficial….early day medicine
Our jam is made from flowers, which also release pectin (so excess pectin is not necessary) and jam with petals and flowers, that have become transparent is especially awesome.

I remember in the early 80s, my mother and I were picking dandelions on the lawn near an old furniture store in Sovgavan, for jam. What a delicious and fragrant jam it was.🤤
Dandelion blossoms taste divine as tea, too! Naturally sweet, so the tea doesn't need sweetening. Too bad we just got 8" of snow yesterday. No dandelions here! Yet.
