- Here's the proper way of how to make Goan sausages - By Crescentia Fernandes, the owner of Bernado's restaurant in Gurgaon. Here's the recipe -
Pork meat with fat 1kg, Sea salt 6 tablespoon/90 gm, Dried red chilly 30 number, Cumin 5gm/1 teaspoon,Cinnamon (1 inch pc) 6 number, Peppercorn 30 number, Cloves 25 number,Turmeric 8 gm/1.5 teaspoon,Ginger garlic paste 30gm/2 tablespoon, Goan vinegar 90ml/6 tablespoon, Salt petre (sodium nitrate) 5 gm/1 teaspoon, Sausage casing 3-4 metres, Grass/leaves (wet) for smoking

Nice... Thank you for d recipe... You can use any squeeze bottles easily available in market... like jalebi bottles.. So it will be more easy to fill up meat inside d sheet...

Like im not a cook but i cook watching recipes on the net and in this video you didnt mention how much red chillies did you take and which kind Bedki or Kashmiri chillie

Hi Crescentia, thanks for this video. I just loved the home style of making it, simple vessels, backyard smoker, drying rack etc. You were slow and clear too :) As I was watching the video I could get the smell and taste :)
Seems to be simple and authentic. Cannnot say how good until I compare it with other recipes and try it myself. Thank you Cresentia for giving us a kick start. I still remember the sausages made by my Gt. Grandmother but I did not get the recipe and none of the sausages that I have bought in Goa taste as good. All the latter tend to have too much chilly to the point of being inedible. One question is what leaves/material do you use for smoking the sausages. I believe the smoke will give a taste to the sausages.
Mapusa market sells some good chorizo - branded and unbranded. Been there quite a few times in the past couple of years.
I love Bernado’s in Delhi.. I was there on Day 1 when it launched . Love the food there .

hello Ms Fernandes. Thansk for this recipe, I will definitely try it. can you suggest the best cut of the pork to use for this pls? You mentioned fatty - are we talking pork belly? or is that too fatty? if so, which is the best cut of pork to use? Second question is, is smoking it necessary. I am a home cook therefore don't have a smoker, how would omiting that part affect the taste?

Hello ... I have a query please. Are the sausage casings to washed prior to the stuffing with the meat? Does this mean the meat comes in contact with a moist casing? Will that not affect the meat?

Is salt petre absolutely necessary? It's unhealthy. Didn't know Goan sausages use this chemical. It is used in hunter beef though....and can still be avoided.
