We are from New Mexico. We have authentic enchiladas. Roasted Hatch Green chile. I've never tried the southern style enchiladas. I can't wait to try them. My family is from Louisiana and arkansas. They never made us the southern style enchiladas. They all learned how to cook New Mexican when we came to New Mexico. However, when it came to Southern food, they still cooked food from their roots. Louisiana and arkansas. So I have louisiana, Arkansas, and New Mexico in my style of cooking. I can't wait to try your enchilada recipe.

This is an easier way to make enchiladas....and not with all the oil with frying the corn tortillas to soften them. I really enjoy all your popular sayings like "oh yes I will" and calling the chicken and other things..."him". Very well done videos and Fun! Love that Ya'll pray before every meal. Why do you just use 1pkg of enchiladas seasoning for 2lbs of meat. I'm dying to try this recipe but I'm just curious about the seasoning to meat ratio. Thank you!!
@@kellysmith5441 hey girlie. The 1pkg is just the right amount of seasoning. After you make it taste your meat and make sure you like the amount of seasoning. If not you certainly can add more. But remember there will be more flavors added with the sauce and the cheese dip. To me it is a perfect amount but you may like more.

This looks awesome. Mexican-type foods are some of my favorites! Even if not authentic lol! Have you ever made the white sauce with sour cream to pour over your enchiladas? I’ve never made it but when I lived in Shreveport we used to go to El Chico’s and I always got chicken enchiladas and they had this sauce over them. So good! Another Mexican-type food I first had at a church ladies meeting was Mexican Chicken. I still make it from time to time. Are you familiar with it? It is a layered dish with tortilla chips, velveeta, cream of chicken and mushroom, rotel. If you like extra spice, you can add jalapeños and use the medium or hot Rotel tomatoes. I forgot to add the chicken! Lol! I only use tenders or breasts and pull apart after I’ve cooked them. If you’re not familiar with this recipe and would like it, I would be happy to email it to you. Becki yes I didn’t freeze with the cheese sauce. Honestly the frozen ones do break a bit snd aren’t as good as the fresh ones.
