I love this recipe! I would add a sprinkling of Parmesan at the end. Even though cheese with fish is somewhat controversial, since you’re using smoked trout I think it would enhance the fish, and of course cheese with asparagus is classic! What does anyone else think of this idea?
save the ends - blanch them in some warm water, and BLEND them before straining. youll have some strong asparagus soup stock. Some fresh asparagus/cream and its like instant cream of asparagus soup =D
I can’t always find creme fraiche and I’m never sure what to use as a substitute. Sour cream mixed with cream cheese or heavy cream to make it slightly less tangy? I’ve made my own years ago but it takes a couple days.
You can skip the long blanching even 30 seconds is plenty and if the asparagus is tender just toss it in hot pasta and it will be perfect! Also the lemon juice will cook it…
I bet the majority of American grocery shoppers have no access to smoked trout. For most of us, the "deli" counter is where they slice cold cuts. There are no fancy foods there.

Perfect meal, this is lovely and a little different but still very doable. I have everything but the trout in my fridge, gah! :D Must get some asap.
Any canned fish including tuna or shrimp, crab or clams would be great!
