  • In this episode of Off-Script, Sohla el-Waylly is here to show you how to make any kind of chicken soup you want. Learn her method to make a very simple broth for when you really need warmth and comfort. She shares her recipe for a gingery chicken soup with hearty lentils and potatoes as well as a spicy version with cabbage and sweet potatoes. Just what we need on those cold days.

      @@oddhuman She's been a consistent host for the History Channel, Food 52 and New Yorker food channel. Nobody has dropped her besides BA.

      @@alicekelly9790 I thought the same thing. Having watched a lot of both of their content, I also think that Babish is a much, much less experienced chef, so I see why she would branch off.

    What Sohla really taught us is recipe development. She gave us guidelines and how we could riff-off any recipe we want. This series was a true masterclass.

    I just love how encouraging Sohla is. She’s like if you want to do this great if not that’s okay. It’s still gonna turn out great. And don’t go out and buy all these specific things, use what you have it’ll taste delicious. She’s all about having a good time, using what you like. These videos are my favorite because she’s not just wanting us to learn a recipe but technique you can apply to so many other dishes. She’s the best.

      Love off script. This soup when your sick épisode is timely. Don’t want to deal with chick carcass when I’m sick. Leave it to Sohla to distill the yummiest tips and relax the fussy when your sick. Good luck with the book. But, gulp, come back Sohla, our millennia mommy.

      Sohla is my favorite for this reason. Her and J Kenji Lopez-Alt are the only two cooks I really watch, because despit their obvious skill and experience they both show techniques and tell you how to use what you have on hand instead of just give you recipes. Other people can be fun, but if I want to actually learn the whys and hows instead of just a recipe, they're the best.

      When she said scrape the paddle like every 2 mins in that episode, 1. I felt seen and understood and embraced and 2. I knew I could trust her 110%.
      The way she explained how she makes the broth...I've been doing that with whole chickens and just large stalks of celery, giant chunks of carrots and like quartered onions and whole cloves of garlic, salt and a spoonful of peppercorns for years, and to see her do it and explain why the connective tissue and bones add flavor and silkiness...she did it again. She's a gem.

    This series has been such an enjoyable time for me. I make Sohla's pound cake, wings, and nut butter all the time. Thank you so much for the inspiration to go off script a bit more, really study how I can make recipes my own, and just plain good food. Sohla, Best of luck on your book and enjoy the break!!!

    I love how this episode was like a clip show. I didn't realize until the end that this was the finale, but I think this was a perfect sendoff. Here's to more great Sohla content for years to come!

      The clips were giving me a vibe that this was the last episode, but I was hoping it was just a season finale rather than the end of the series. I was so happy to find Sola doing videos again after the BA scandal. It's sad that she's going to take a break for a while. At least it's on her terms.

    I love how she never bashes any food. Some UA-cam personalities say how they wouldn’t eat processed foods or talk down about the original version of something. She is always positive about all different foods.

    I love this series so much and I will miss it! It's given me the confidence to whip together ingredients without a recipe or go off script with real recipes. I make the greens/beans/pasta dish at least twice a month, if not weekly during the winter. Even though I don't eat meat, I find myself watching the meat videos because I pick up on little tricks or ideas. Don't stay away too long Sohla and happy writing!

      yes! my boyfriend is a vegetarian so I don't really cook much meat but I still watch them because you just learn so much

    Sohla's vids are such delightful bursts of knowledge, thoughtfulness and joy. They make me so, so happy. The off-script series is one of the best series in my decades of watching cooking shows - so much skill, explained in the most relatable, smart, encouraging way. Her cooking knowledge is just remarkable. Can't wait for her book, take the well deserved break, will be rewatching vids to keep my greediness for sohla-wisdom fulfilled. Thank you, Sohla!

    When I'm sick, I can't stress how much matzo ball soup makes me feel better, because my mom, a supreme non-cook, would make it out of the box for me when I was a child, when I wasn't feeling well. We're not a Jewish family, but my mom grew up surrounded by Jewish people growing up, so they'd bring the same thing over to the house when she wasn't feeling well too, as a child ^_^

    How timely! I just made chicken soup yesterday, with thighs! I used the basics--celery, carrot, but I added a bunch of collard greens (I like how well they hold up) ginger, and lemon juice in mine. I also like to season with soy sauce. I feel it adds a bit more dimension. Can't wait to try the lentil soup!

    I have loved this series so much. The chicken paella is my go to dish to make (and impress) others. Ive made the wings the black and white pound cake changed my life and the mochi cornbread has been practically worshipped by my gluten free friends and family. Thank you Sohla for enriching my cooking ideas. I adore you and love when you say “whoah” to a good food idea! Thank you!

    I saw your butternut squash soup recipe on instagram a few weeks ago and I took it off script using the stuff I had at home, cause I was sick and couldn't go out shopping. This series really inspired me to start throwing things into pots and seeing what works, so thanks for giving me that confidence

    At the start of Covid, I made the goal to be more confident cooking w/out a recipe - when this series came out, it was the stars aligning. The flashbacks made me a bit emotional! Please make sure there is a 2nd run of this 🙏🏻

    I like your pragmatism when making a chicken stock. Sometimes I think cooking videos get hung up on unnecessary steps because the chef is a perfectionist and it's a lot for a regular to person to go through for something like soup.

    These look DELICIOUS but I gotta agree, Sohla's mochi cake is a giant hit for me. I've made it 3 times so far, once with peaches, then with apple and pear in the fall/winter. Each time it blows my mind how good it is (well, you make caramel twice and also there's a step where you just have a bowl of caramel mixed with fruit puree and I have to stop myself from eating it all with a spoon). These recipes and videos are so valuable for teaching someone HOW to cook, not just how to make one specific dish. Loved this series and love pretty much anything Sohla does. :D

    I did this just last week, I had yellow mole, poached chicken, and roasted veg in the fridge. Threw it all together with some crushed tomato and black beans, came together in 30 minutes.

    Because a little bit of Chipotle in Adobo sauce goes a long way, and a whole can is more than we can tolerate, I use a little and freeze the rest in a cube tray, and then store in a freezer bag. I use in chili more than anything.d But it is a great addition.

    I loooooooved the strata episode, I made it part of my winter breakfast routine while I was still working from home. Preheat the oven, brush my teeth, put the strata in the oven, take the dog on a walk, and then come back to a hot breakfast 💕

    My take away here: bloom the spices and add them last... at my childhood home the ''sick soup'' was just the strained chicken broth with white rice. It did the job, and far less steps, but I think the spices hit at the end would elevate even my mom's 'sick soup'.

      I'm sad that the series ended and that she's taking a break from videos, but "tragedy" is going a bit far. She ended it on her terms so that she can work on her book. She's in a good place, and we should be happy for her.

    Making “sick bed” chicken soup, I like to make the Julia Child’s garlic herb broth, get chicken breasts, cut into chunks. Add fresh chopped vegetables as desired, then add chicken breast pieces and medium pasta and cook until pasta is done. Serve immediately

    I like adding medium-sliced white onions and red, yellow, or orange peppers right after the soup is done. The residual heat cooks them enough to have a slight al dente crunch. And if you have the energy, almost-done deeply roasted cauliflower in at the same time is great.

    I love taking out the scummy stuff. I saw this technique before. Great! Also love all the " Lazy" stuff. Love how this woman is proud of the fact that "everything was eaten" yep.

    Sola is such a beautiful person, inside and out. The editing lays the "fun personality" on a bit thick, which she doesn't need, but her enthusiasm and wonderful teaching technique makes up for it.
