    Updated Recipe: Mac N Cheese for 100
    3 Gallons Whole Milk
    3 large Vidalia onions
    9 sprigs of fresh thyme
    1 ½ lb. gruyere cheese
    1 ½ lb. parmesan cheese
    4 ½ lb. mild (or sharp) cheddar cheese + 4 cups for sprinkling
    3 lb. mozzarella cheese
    6 sticks unsalted butter
    3 Cups All-purpose flour
    Spices:
    3 packets Goya Sazon sin achiote
    1 ½ packets Goya Chicken Bouillon
    6 Tbs. Garlic Powder
    3 Tbs. Nutmeg
    1 ½ Tbs. White pepper
    3 Tbs. Kosher Salt
    9 - 16 oz. boxes penne pasta (cooked al dente)
    1 ½ Cups Panko bread crumbs
    *You'll need about 6 full-size deep foil pans

    I cook for a small school and make mac and cheese every 3 weeks for 100 people. Putting the onion in the milk is a great tip. Thanks! Best to you!

      Schools make the best mac and cheese. If adding bacon grease, it is good to give people a heads up it contains pork so they're aware, as I doubt anyone expects it in their mac and cheese. Our school is usually pretty good at listing ingredients so we know which days are PBJ's or Sun Butter option days.

      Steven Johnson I agree. I fell in love with her as soon as she opened her mouth. I felt like I was standing right there. I absolutely love that she explains why to add this or that and what you want to be cautious of. I've shared recipes with friends and family for years and what aggravates me most with them is when they say "I followed your recipe to the T and it didn't taste or look like yours". When you ask them if they also followed the instructions to a T they say..."No, that's too much work and I'm not as nitpicky as you are"! And I tell them if they want to keep being disappointed and embarrassed by the turnout then by all means continue dumping everything in at once and praying for a miracle. That's is exactly why this tutorial is to the 9's...you cant ask for a better lesson than this one. Perfection!

    One to one butter and flour is a common misconception - it's really like 3:4 flour to butter.
    I LOVED the onion/fresh thyme technique - I'm definitely gonna try that.
    Also, try 60% whole milk, 40% heavy cream.

    Thank you for explaining why the sauces can get grainy! I can get it to taste good but the texture is gritty. Also love there is no velvetta!!

    Excellent Nathalie, just got my arm (pinky, actually) twisted to volunteer to cook at a church soup kitchen. Have a questions on making it in advance & heating it up the next day from the reefer. I believe I should hold off on the panko until I am ready to cook it?

    I like Mac and Cheese but I'm not crazy about it. This is a great video and recipe, though. I may try it if I ever have occasion to cook for 30 people. Or, half the recipe and freeze some.

    Put the panko in a skillet with a small amount of butter and bacon fat before putting on top of casserole.... Gives an extra layer of flavor

    So the first batch got 2/3 of the béchamel and the second batch got like 1/3 but then you say this is 1/3 of the total for a hundred. Is one pan 33 people or is 2 pans 33 people and what are the quantities for 100?

    Please still add half and half and more cheese in the pan mixture to prevent dryness it should be super wet before entering the oven

    How big are the 6 pans I would need?

      The size should be Length: 20 3/4 Inches. Width: 12 3/4 Inches. Depth: 3 3/8 Inches.

    A basic bechamel.. makes cheese sauce or any white sauce stay completely consistent for 1week+ ..
    I only use cheddar, parmesan,and Monterey.. but I bet it's a least 2 and a half full pans of Mac left .. unless it's just 100 people just eating Mac & cheese

    What would have happened if if you added the seasoning with the flour and butter. Then you could have avoided lumps. Then it would have infused into the milk.
