I am starving, trying to be more plant based novice. 😅 I am trying to apply and learn meal planning and prepping for the week, but the struggle is so REAL! Grilled PB&J's and popcorn aren't cutting it. Right now, I am more focused on breakfast as it is my favorite. But I need to try to plan at least one vegan meal to the week just for either lunch or dinner. So many goals so many struggles! But thank you for the ideas and motivation!!

Haha I love that!! If I'm not too late, I wouldn't recommend freezing your soy free tofu. I only freeze my soy-based tofu. Sometimes the soy free tofu will break down easier if it's frozen and then thawed.

There's a good amount of fiber. Im pretty use to it but drinking a good amount of water and moving your body may help get the digestive system going
