I think this is the most beautiful, perfect food prep video I've ever seen. Such a master should be considered as creating not just food, but art with food. It was just magical to watch. Great choice of background music as well.
Which is why it's classed as a Michelin starred restaurant. Definitely on a different echelon of appreciating food altogether.

So the brush he used to brush the fish... he placed back into pot... isn't that unsanitary and cause of bacterial growth from the fish?
I had the pleasure of eating at Cagen a while ago with my family. Absolutely astounding experience. The cards in the video are the ones that he showed us before each course, and it was such a pleasure watching a master chef prepare everything right in front of us. I was dreaming of fish for days afterwards. I highly recommend Cagen for anyone in the area!

@Eater, an Omakase series?! Thank you!!! I've only recently started trying the Omakase courses here in Orlando; Seito in Baldwin Park and Kabooki near Downtown. Both were incredible experiences and differed greatly. I'm looking forward to my third Omakase meal for my birthday in a few weeks. Terrific video!!!!!

The sole reason why Omakase-Style sushi always expensive is because you didn't pay for the food but for the skill of the chef, most of Michelin star sushi chef had an experience more than 20 years.

Where i live, the sushi restaurants are run by mexicans, vietnamese, pilipino, etc. The chef are young and they don't know real japanese quality sushi. They focus only on sushi roll and make it look pretty that's about it. I wish i can go to real authentic japanese sushi shops.
