Your smooth calm style definitely beats the flashy celebrity cooks failing at being funny and making things horribly over complicated at the expense of the flavour. we used to deep fry regular egg rolls, my mom trying to be healthier tried baking them and they were terrible, we tried air frying them straight and that wasn't any better than baking them in the oven.... BUT if you brush them in oil and air fry them they get crispy with the little bubbles in the wrapper like when you deep fry, and they are way less greasy and don't give me a stomach ache and my house doesn't smell like oil after. Its really win win win

Dude you can put almost anything in an eggroll and it'll be amazing!.... I ate a pulled pork with coleslaw eggroll once freakin awesome.... and a buffalo chicken dip eggroll and a philly cheese steak eggroll.... all amazing!

I can say with certainty that peanut oil is a top oil to fry with. Me and my dad used it to fry turkeys for Thanksgiving for our family, neighbors and friends. Sometimes we would end up frying about 20 turkeys and the peanut oil lasted through all that.

i do something similar when making cheeseburger pastelillos (empanadas,) it’s just such a good filling for just about any kind of vessel, whether it’s egg rolls or discos.
I did something similar at a bar and grill I was working at but instead of bacon I did lettuce, pickles, onions and tomatoes. Also used American cheese but left out the sauce and used yum yum sauce on the side to dip. Was fire

For the sear. By making flat patties and getting a sear on both sides it provides flavor that couldn't be accomplished by chopping ground beef right on the cooktop. Also keeps the beef from drying out
