Brown sugar is gorgeous is cakes and I love it on my morning porridge - it’s cold and wet here in the Scottish highlands and porridge with brown sugar is definitely a gorgeous breakfast.
You are an actual legend ✨️❤️ Myself and my 3 year old son *just* made this recipe and it is absolutely glorious. On top of that, preparing the recipe and putting it into the patty-pans really took it out of him so he ended up napping as they baked - and he is NOT a napper. He was so pleased with himself after helping me, and I hope we've made a lasting happy memory for him to keep 💗 (I feel guilty because I cooled and iced them, then tried one all whilst he is napping.) The cupcakes. Are. AMAZING. So soft, light, and fluffy. The dreaded word "moist" has been said around the house because of it, hahaha The icing is 100% top tier. Thank you, from one happy Australian 🇦🇺 .

They look delicious! I need to make these! I have some bananas in the freezer that need to be used up. I bet the addition of rum extract would add a nice touch as well.
Never thought of using the oven to accelerate the starch to sugar in bananas. If I do not use all my bananas, I freeze them, which causes the bananas to darken, which means the starch turned to sugar and are just right for baking. I also use yogurt instead of sour cream; don't know if that matters much??? I'll use either a vanilla or honey vanilla yogurt, which may add a teeny bit more of flavor. I am making this recipe next time! Looks soooo good!! 💕💕💕💕

Might be too late for you, but for anyone reading this later you can make buttermilk (I do that, he has directions for this on his blog) and you can replace sour cream with Greek yoghurt.

Can you freeze these? I was going to make banana bread but this looks much more appealing. Can I make them and freeze them with the cream cheese frosting or would that ruin them?
