But now they've changed the recipe. Anyways this kind of looks like the kind of recipe I'm looking for with the spices & I love pineapples . I did not even make the frosting, but they were so good both warm and at room temperature. It was hard to resist eating the whole pan full. Thank you for this yummy recipe.
Note: You have to double the frosting recipe for a Vitamix blender, or else it will not blend. It made two 1-cup Mason jars. I used one, then put the other one in the freezer. : )

I tried this recipe last night. It turned out stellar without the frosting. I tried another vegan cake before this not from Jill my husband refused to eat it. This one he has asked me to make it again.
Oh, my, these are Scrumptious, Jill!! I only had pineapple tidbits, so I added them to the blender with the soy milk, dates, etc and it worked beautifully. My husband absulutely loved these and couldn't believe they are whole food and plant based! Another winner from Jill's kitchen. Thank you thank you!!!!
I Made these today, except, I used 3/4 cup oat flour, 3/4 cup almond flour, and 1 1/4 cups dates... And it came out excellent and perfect! Tastes amazing too! I don't like to make vegan cakes and vegan donuts with oat flour only cuz it tastes too much like baked oatmeal... I think the oat flour and almond flour go great together! This recipe is a keeper!!

Hi Jill, I made the carrot cake yesterday. I did shred my carrots very finely and I wasn’t sure about the pineapple if I had to drain it well ? The taste was really good but the texture was a little heavy. Do you think it was cause by too much carrots and juice from pineapple? Thanks! I had to freeze some pieces because I would eat it all😂

Also do you have any people who have reported improvement for macular degeneration ? I have the warning stage before it develops . I live in France and some ingredients are hard to find like soy curls which would cost me 72 euros for a bag if I buy online ! I'll have to skip that one :) I so appreciate your cooking show.

I keep them in a glass storage container in the fridge. They should last for a week.
