I generally sub smoked paprika for liquid smoke, seems fine. Another very lightly processed protein sub is soy curls, smashed and rehydrated.

Yium! My family has a version of this with, instead of spices, an envelop of onion soup mix and 2 tbs of oregano. But I will try this mexican version!
