    Amaretti, which is called Italian almond cookies.
    This cookie uses ingredients that are very similar to macaron.
    it's also called Italian macaron.
    +It's also made like macaron by adding sand cream.
    It's a simple cookie made with almond powder as the main ingredient without flour and oil.
    It takes less than 30 minutes to make.
    It takes less than an hour to bake.
    The flavor of almonds is the most important, so I recommend using 100% almond powder that is fresh and doesn't contain starch.
    You can add lemon zest to make it look like it's not boring at all and gives a clean finish. :)

    72g Egg White
    190g Almond powder
    130g Sugar
    1 Lemon Zest
    5g Lemon Liqueur or Lemon juice (Optional)
    + Sugar, as needed
    + Powder sugar, as needed

    -. Use 100% starch-free fresh almond powder
    -. Wash the lemon clean to make zest.
    -. I used a medium-sized lemon.
    -. Lemon liqueur can be replaced with an optional or lemon juice.
    -. When you beat egg white meringue without sugar, it breaks easily and becomes rough because it is unstable.
    -. When you roll the dough, it becomes very sticky when you touch it. Put a little sugar on the palm of your hand, round or split dough, slightly sugar on the front and back, and round.
    -. Coat the dough surface in sugar powder order after sugar.
    -. The crack is thin when you put sugar on it, and if you put sugar powder on it, the crack comes out thick and thick.
    -. Coat it with sugar powder and brush it off all over at once.

    작게만 만들다가 레시피대로 해서

    혹시 설탕량을 줄이면 바삭함이나 식감에 영향을 미칠까요???

    머랭에 설탕 넣는거랑
    아몬드가루에 설탕 넣는거랑
    식감이 어떤 차이가 있을까요?

      머랭에 설탕을 넣으면 안정적이고 단단해지구요. 기포가 잘 꺼지지도 않아요~ 설탕없이 머랭을 만들면 불안정적이고 기포 유지가 잘 안됩니다. 이 부분이 식감에 영향을 주게됩니다:)

    머랭칠때 설탕을 넣으면서 하면 맛이 달라질까요??

      맛보다는 설탕없이 머랭을 치면 불안정하고 금방 거품이 꺼지는 경향이 있는데, 설탕을 넣으면서 만들면 안정적이라 식감이 달라질 것 같아요~ :)
