Quick and Easy Thai Red Curry | Aromatic, Fresh & Full of Flavour!

  • Today I'm going to show you how to make my quick and easy Thai red curry. Its an easy Thai curry made with shop-bought red curry paste, chicken and coconut milk. So fresh and aromatic!

    Ingredients for the Thai Red Curry:
    1 tbsp vegetable oil
    1 onion peeled and chopped
    3 chicken breasts about 720g chopped into bitesize pieces
    2 cloves minced garlic
    1 tsp minced ginger
    1 tsp lemongrass paste
    1 chicken stock cube crumbled
    1 red pepper sliced
    4 tbsp red Thai curry paste
    14 oz 400g tin coconut milk
    2 tsp fish sauce
    1 tbsp palm sugar or light brown muscovado sugar
    8 oz 225g tin of bamboo shoots, drained
    10 fresh Thai basil leaves
    1 tbsp fresh lime juice about half a lime
    To serve:
    Boiled rice
    5-6 Fresh Thai basil leaves
    4 sprigs fresh coriander cilantro
    2 Thai chillies thinly sliced
    1 lime sliced into wedges

      Your parents didn’t cook traditional currys if you think thats a good curry. Looks is one thing, taste is a completely different thing. And you aint gonna get that when you use jarred curry paste mate.

      @@JohnDoe-pe9ew Pretty sure they were definitely traditional, I said the curry in the video looks good, I’m not sure if it would taste nice. Also, I didn’t refer to the foods I grew up with as curry only. I had Noodles, Pad Thai, Tom Yung Koong, Tom Khao Gai, Egg Fried Rice, Pad Ga Praw. I could go on forever ‘mate’

    Made this last night for friends coming over for dinner and it was just lovely. Best Thai red curry I think I’ve ever had. Three finely diced Thai chillies with seeds as a garnish at the end was perfect for our guests. Thanks Nicky

    I couldn’t believe what I was eating! So I didn’t follow your recipe to a T but combined some different recipes online and just sort of meshed them together, but I kept referring to your video as I was cooking the curry as a reference! Couldn’t have done it without you!
    My wife wasn’t a believer and didn’t want to eat it at first but then couldn’t get enough. I’m making a second and much bigger batch tonight!!!

    Just made this with your instructions, I’m a good cook and make lots of curries but never red curry. I am so happy as it tastes delicious, I made it with chicken cutlets and will try chicken cubes next time, I’m in lockdown so used what I had lucky i had everything else in 💜 thank you so much and much love from New Zealand 🇳🇿🌸x

    Thank you, we just finished eating it, it was very tasty and easy to make... i added zucchini, and more fresh herbs on top mint , leek, Bessel and green peppers . It was amazing... next time i will add fresh pomegranate seeds on top ,, but I know it won’t be Thai food hahaha

    I've made this twice this week. It's delicious. I did substitute greek yogurt instead of coconut milk I'm not a fan and use chicken tender loin strips. The flavor was awesome. Thanks for the recipe.😋😋

    Made this tonight. Swapped tamarind paste for lemongrass paste and zucchini for red pepper because that was what I had. Delicious. Family loved it and requested that I make it again.

      I got 2 very large meals out of it, I'd maybe add another chicken breast and add about 25% more of each ingredient for 4 people

    Absolutely delicious....though could not obtain lemon grass paste... Still worked to make it a knockout meal!. Great with homemade garlic bread too.

      i think if you have raw lemon grass and a microplane grater, you could get the same. i just boiled the lemon grass, cut it up and ground it in the pestle and mortar. It's more involved, but the result was great

    I used to cook Thai food alot but I discovered that all that high glycemic white rice and coconut milk is flattening. Now I use whole grains and replace most of the coconut milk with almond milk.

      I was excited to eat Thai red curry. But then now I looked it up, it turns out that the coconut milk is quite unhealthy for you. I thought it would be healthy because of all the vegetables that would be put in. But now I’m slightly disappointed

    @kitchen sanctuary, Love your presentation. How important is the fish sauce, is that a key ingredient? I can't stand how it smells and have been making a Red curry without it. Considering starting to use it to make the curry as authentic as possible, but first I wanted to know if it makes much of a difference.

    It is easy, but quite a few ingredients, but had them all and it was awesome, except I forgot the lime. Still good. I added one Thai hot pepper to it. A little more spice.

    If you use Mae Ploy paste you won't need to add half these ingredients. Looks yummy still 😋 just more work.

    For better results add the coconut milk in stages, not all at the same time. You will get a better taste this way

      I make mine with heavy cream. The coconut milk has no flavor and is boring

    Breast chicken should always be cooked at last minute otherwise it'll be too dry as the end result otherwise nicely done looks beautiful 😍

    Winter, Brrrrrrrr. This is just the remedy for that. Yummy & so warming from the inside. I make a portion of it very hot for myself, although not for the wife. She is a sissy when it comes to hot stuff. After eating this curry she sits by the fire, I can afford to sit a bit further away and still be warm and satisfied. Thanks to you.

    Read garnishes at end too fast, tired of rewinding, didn’t sound like easy garnishes to come by, to be labeled quick and easy.
