    Well, there are some changes that should be made to your technique:
    1. The mushrooms should be cooked without the lid. This allows the steam to escape, thus reducing the liquid quicker, and you won't overcook the mushrooms.
    2. Mix the eggs in a larger bowl with a whisk so the eggs will be more thoroughly beaten. Don't over mix or the eggs will become rubbery.
    3. Do not add salt to uncooked eggs. The salt will break down the egg protein making the eggs runny and flat. The eggs should be more fluffy with more body. Add salt after you cook the eggs.
    4. After cooking off the onions and mushrooms, mix them into the egg bowl, then quickly pour them back into the pan. Don't just dump the eggs on top of the onions and mushrooms. You want all the ingredients to be mixed.
    5. Turn the fire down to low and cover the pan. Don't cook eggs on medium or high heat. Eggs are delicate! Too high a heat will cause the protein to squeeze out the moisture making the eggs dry. Consult Bon Appetit Magazine or Gorden Ramsay
