Curried Fish Pie | Jamie & Buddy Oliver
Вставка

- Jamie takes the principles of a classic fish pie recipe and gives it an incredible curry twist. Generous pieces of haddock, salmon and lemon sole are gently cooked in a spiced base along with large succulent prawns and hard boiled eggs. With Buddy on hand to help Jamie tops the pie with smooth mashed potato and bakes it until golden and bubbling. The spicy temper drizzled over the top really makes it a dish to die for. Trust us, you’ll love this one.
This recipe first aired on channel 4 in 2014 as part of the Comfort Food series. - Навчання та стиль

+ellawelly The BBQ sauce video.
+themadbatter haha it is the same! its so cute when people's voices change around little kids
Buddy is the cutest, he is a little clone of your own, Jamie.
And that fish pie is looking fantastic too!
4 cloves of garlic
1-2 fresh red chillies
groundnut oil
2 small handfuls of curry leaves
1½ teaspoons black mustard seeds
1.2 kg Maris Piper potatoes
2 large free-range eggs
1 small knob of unsalted butter
semi-skimmed milk
2 onions
1 thumb-sized piece of ginger
1 teaspoon fenugreek seeds
1 teaspoon turmeric
1 X 400 g tin of light coconut milk
200 g baby spinach
½ lemon
4 ripe vine tomatoes
3 x 60g lemon sole fillets, skin off and pin-boned
150 g haddock, or ray fillets, skin off and pin-boned
150 g salmon fillets, skin off and pin-boned
150 g large raw peeled king prawns, deveined
Method
I’ve done a few fish pies in my time, and very nice they are too, but there’s no way I could do this book without including one, so I was faced with the question of legitimately where I could go that’s different from where I’ve been before. Well, the answer is India. This comforting curried fish pie has amazing perfumed layers of flavour that will slap you round the face yet still give you delicate fish and a crispy potato top. Throw this into the mix at a dinner party and you’ll be winning on both the surprise and the flavour fronts.
Peel the garlic and finely slice with the chilli (seeds and all), then put into a frying pan on a medium-low heat with a good couple of lugs of oil. Add the curry leaves and mustard seeds and fry gently for 5 minutes, or until the garlic is lightly golden, then remove from the heat and put aside (this is called a temper).
Peel and roughly chop the potatoes and cook in boiling salted water for 12 to 15 minutes, or until tender. Boil the eggs in the same pan for the first 7 minutes too, then remove them to cold water. Once cooked, drain the potatoes and mash really well with the butter, a few splashes of milk and a pinch of sea salt and pepper.
Meanwhile, peel and finely chop the onions and ginger and scrape into a heavy-bottomed pan with half the temper, the fenugreek and turmeric. Cook on a medium heat for 5 minutes, stirring regularly. Pour in the coconut milk, tear in the spinach and finely grate in the lemon zest. Bring to the boil, removing from the heat once the spinach has wilted and the sauce has thickened. Transfer to a nice high-sided baking dish (28cm square). Roughly chop and scatter over the tomatoes, then leave to cool.
Preheat the oven to 180°C/350°F/gas 4. Peel and quarter the eggs, then dot over and poke them into the sauce. Cut all the fish into bite-sized chunks, and intersperse around the dish with the prawns. Top with your mash - go rustic and scuff it up with a fork or, as this dish is a bit more elegant, go 80s retro-style and pipe it on with a star-shaped nozzle (it creates a larger surface area and looks and eats very well). Bake for 40 minutes, or until golden and bubbling at the edges. Reheat the remaining temper with a splash of oil just before serving, and spoon over the top to finish.
Omg....look how cute and little buddy was. I have always loved the casualness and family attitude in Jamie's videos.
That's a wonderful looking dish.
And I love your adorable kitchen helper.
+EZGlutenFree Indeed looks good, so many flavours and textures. Kitchen helper and outdoor setting make it evan better!
Nauman Malik because i cum in pies
Nauman Malik it tastes like a calcified rock lodged in my urethra
The fenugreek seeds need to go into the temper right at the beginning along with the mustard seeds. Then go the curry leaves followed by the ginger, garlic and then the onions. Also, half a tea spoon of turmeric is more than enough for this much curry. A little goes a long way. This is the most traditional indian temper used in almost all vegetables and dals in every household every day. Loved the idea of used this combination in a fish pie.
+rohan kamath Why do the fenugreek seeds need to go in at the very beginning? Is the flavor much more enhanced this way? It was my first time using fenugreek so I followed Jamie's recipe exactly the way he did it.
Maria W - Frying off the seeds in the oil at the beginning is typically how the tempers work. The seeds crackle and pop and release a much nicer flavor. If they are added at any later stage, they they are boiled and not tempered which tastes a little different and the seeds themselves end up chewy when you bite into them.
Check this link for some more details on how it works and why:

+rohan kamath thanks for the descriptive response. I will cook it this way next time. 👍🏻

ohhh I always wondered what curry was made of. I knew it had tumeric , but does it also have ground up curry leaves or something?
Looks great😃
А жаль перевода нет на рускиии язык 😏
perfect 👏👏
Beautiful twist!though going on easy on the fenugreek and turmeric would be easy on non-Indian palette!
Jamie for the win!
It would be really good if he makes a show with Cake Boss.
Espectacular

very goood
Dayum son, I just can't find these mustard seeds and curry leaves.
+MusikKritik versuchs mal in asiatischen/türkischen supermärkten. dort bekomm ich meine "speziellen" gewürze immer super günstig her
+MusikKritik Look for an asian supermarket in your area.
*****
er hat n deutschen namen und deutsche videos in seiner watch list ^_^
Hapi djus Jo liegste richtig :D
Looks Delicious , to many steps for me though. I have to get someone to make this for me!
Do you have any recommendation if you need to switch the fish too something vegetarian?
Naaw his kid's so cute!:)
Buddy is sooooo cuteeee
What were those seed like ingredients after tumeric, again?
Thanks!
Lol he looks so much like joolz now :)
in my experience fenugreek is quite tough. is there something I'm supposed to be doing to it to make it more edible?
***** thanks for the tip! I'll try that next time :)
Niiiice!
there's petal, poppy and daisy aswell
Buddy is sooo cute
I love all of your videos Jamie! However, I genuinely think they are both better and feel almost more personal when you do them without a voice-over and speak directly to us while cooking. I hope the tone of this suggestion is far from criticism as I love your videos regardless.
did he name his son buddy?
Yes
Jonathan Hsieh oh dear :D
+RazoRaptor It's a trap :D
That's a boy??? He can't be a boy, his too cute to be a boy..!
+bit 8 what are tryna say boys ftw
ooowwweeee yumm yumm
I want someone to make this for me XD
God I'm hungry
I want Jamie to make hot spring eggs as they are pretty tough to make with out and actual hot spring.
When does Buddy get his own show?
