    Peel and boil a potato (yes Jessica - a potato!) with 2 carrots. Throw it in the blender and add pieces of red pepper. Fresh or from a jar works. Add plenty of nutritional yeast (use plenty) with chili powder, etc. I use this with pasta sometimes for Mexican mac n cheese. Its great for dip or adding to bean burritos. Good cold or hot.

      Jessica here! Thanks - This sounds great! Even with the potato ;) I have been wanting to make my own potato based queso, so really appreciate the suggestion. I will be trying it out soon! Also I love the dog in your profile pic :)

      You can add cashews

    • @jan9562
      @jan9562 Рік тому

      I still make this -and lots of it ! (I'm regularly asked to bring it to a buffet dinner). I add a packet of very well soaked cashews, some lemon juice, quite a few cloves of raw garlic, and a few bits of jalepeno from a jar. The potato gets the least blending ie. goes in last, though I'm not sure whether that makes much difference. It keeps for weeks just in the fridge.

    I can't remember where I got this, but someone deserves the credit. It's really good.
    Bring to a boil and cook until tender (about 10 minutes):
    2 potatoes, medium size, red or yellow
    1/4 white onion
    In blender put:
    1/2 tsp. salt
    1 tsp. onion.powder
    1 tsp. garlic powder
    2 tbsp salsa
    1/2 cup nutritional yeast
    1 tbsp hot sauce
    1/4 cup cooking water from the potatoes/onion
    Add potato/onion mixture and blend until smooth. Store in refrigerator.

    Sorry in advance for the long comment, but I just found you guys today and wanted to say a few things. First off, thank you for this video because I LOVE queso lol. Second, my husband and I have just recently found out that we're both gluten and dairy intolerant. We have completely changed the way we eat and together, we have lost just shy of 200 pounds. I've lost 90 and he has lost 100. My husband is at his goal weight, but I'm only halfway to my goal so far. I got up to 346 pounds after my surgery for a rare auto-immune disease completely overtook my life. Because of my health and my weight, I couldn't work and I could barely take care of myself. I have been overweight my ENTIRE life (and I was bullied in school and at home about it) and I am finally, at 32 years old, finally starting to feel confident and beautiful in my own skin. My mental health has improved miles too. I no longer take my bipolar medication. I still have depression sometimes, but not even near where it was. It's been a scary, but powerful and life changing journey. It's so amazing to see another couple that has transformed through healthy eating. While we aren't completely vegan, 90% of our diet is plant based. You guys are inspiring and I am so glad I just found you channel. :) There are more of us than you may even realize, so keep it up!!

    • @KrocksInTheKitchen
      @KrocksInTheKitchen  5 років тому +1

      Ooh never thought about celery! We have actually been using it on top of these mini veggie pizzas we like to make sometimes. We heat it up first so it goes on more even. Then after like 10-15 minutes in the oven, the queso gets a bit firm and adds a nice cheesiness to the pizza!

      I’m loving putting the Trader Joe’s Cashew Fiesta Dip on microwaved potatoes and then loaded up with chopped tomatoes and tons of raw onions. (I love onion!) Of course, adding other veggies would be delicious, like I can think of green onions, chopped bell peppers, lettuce/leafy greens, chopped celery, etc., and of course cooked beans!

    Have you guys tried to hack the Good Foods queso recipe? Ever since I tried theirs from the Aldi special buy, I ditched the potato carrot queso recipe and started using cauliflower as the base. I don't have a recipe, but my current go to is always a combination of these:
    1 bag of frozen cauliflower steamed according to pkg
    1/4 c raw cashew bits
    1/4 c hot water
    1/4 c nooch
    Cap full of apple cider vinegar
    Half of a roasted red pepper (from the jar)
    1 T tomato paste
    Onion powder, garlic powder, salt, dry mustard powder, cumin to taste
    A couple slices of pickled jalapeño for heat
    Sometimes I'll add a tsp of cornstarch or Chia seeds to thicken
    Then I just put it on the soup setting in the blendtec. I'll omit the cumin and jalapeños if I'm going to make mac n cheese with it. All of those amounts are guesstimates, I just do it by eye. You should try it out, it's the best recipe I've used and you have more control over the sodium..and it's cheap.

    Aldi in Germany (we have two versions Aldi Nord and Aldi Sud but yours will be Aldi Nord as they have expanded abroad) - have Italian week, British week, French week, Mexican week and then they have some great options that are there for the week and then gone - it is irritating so if I see something I want in the insert adverts in the newspaper - I make a beeline to Aldi early and buy several - which is why if you arrive late they have run out LOL

It definitely seemed to get a bit more "watery" and wasn't as creamy after freezing, but the flavor was still really good and I don't think you'd notice once using it on something... SOoOoo I went back and got 4 more to freeze today LOL :) The one I froze was in the freezer for 3 days and then I put it in the fridge for 24 hours to thaw. Hope this helps! Happy queso-ing!

    I was looking at Publix and they carry Good Food products as well so i was told if you don"t see a product on their shelves just go to customer service and they will be able to order it for you and have it sent on one of their food orders. They can just about get anything for you.

    Did any taste like cheese? My guess would be Aldis was the closest because it has Nutr. Yeast.
    If you compare everything the aldis one has more protein and ac vinegar vs the 1 st one with distilled vinegar. While your least favorite didn't add salt nor yeast nor vinegar.
    I believe it was the almond butter that made the Aldis one higher in calories so if you don't count calories for nuts and seeds it's all good. Wish Aldis would use Himalayan sea salt and organic ac vinegar, if they did ,should of stated on label.

    I wish I'd seen this episode before I bought the TJ's queso. I can't believe just how wrong it is on so many levels. Honestly, I wasn't that big a fan of faux cheese sauces until I made the E2 cheeze sauce recipe here: engine2diet.com/blog/chili-cheeze-fries-2/. And for Brian's cooking pleasure, I pull out half the spice cabinet to amp up the flavor when I make this sauce, adding smoked paprika, vegan worchestershire sauce, onion, garlic, and anything else that strikes my fancy. You may want to consider doing a video where you make faux cheese sauce in a few different ways (potato/carrot vs. oats vs. tofu vs. cashews).

      Hi Coreen! The Trader Joe's one has grown on me over time... but Brian still doesn't really like it. Aldi just got the Good Foods one back last week on special buy, so we are stocking up LOL. We have so many recipes we need to try out, but homemade queso/cheese sauce is definitely high up on our list! We will definitely try out the Engine 2 recipe - thank you for sharing! You should see me in the kitchen when we are testing recipes... trying to keep track of exactly what spices Brian is adding to things LOL. He doesn't like to measure, but I always want to know exact amounts so we can recreate it if we love it and then share it with you guys! And it is very funny you say that about the video comparing different homemade cheese sauces... we were brainstorming videos the other day and thought that might be a good one :D

      @@KrocksInTheKitchen I just found out a local grocery chain (Cub Foods) carries the Good Foods queso, so I'll be on a quest for it between Aldi and Cub in the near future. I can't imagine how hard it is to keep track of the spices Brian's adding when creating dishes. Jessica is clearly the kitchen hero for those of us who want to recreate your masterpieces.

      Hello! I personally don't feel comfortable calling us "ethical vegans" because our primary reason for switching to a vegan, whole food plant-based diet has been weight loss and improved health. But I will say, this last year has been an eye opening experience. I have so much respect for people who choose this lifestyle solely based on ethical reasons and we have so much more to learn from them! Thanks for watching & commenting!

    I love your videos but you guys have to stop mislabeling the vegan videos as oil free
    Cashews are an oil people will not lose weight eating alot of this it is vegan delicious but you have to understand the serving size is so small and i would eat the whole thing in a sitting so not good for weight loss😂 it is not low fat
    Almonds are an oil as well so it may be vegan
    It just is not oil free.😁

    • @agitpropartrox
      @agitpropartrox 4 роки тому

      Nuts are not oil..they have fat, but when people are omitting oil from their diet they mean actual oils that you cook with (canola, olive, peanut, sesame, etc.) If you're trying to lose weight it does help to limit fat and omit oil - but many wfpb diets allow naturally occurring plant fats (nuts, avocado) in them.
