Thanks so much Sharla! I'm vegan and I spend the summer semester in Tokyo this year. I always had issues with cooking there. I was just so used to cooking with an oven and also to cooking western dishes and eating bread (I'm German, cliche, I know :D) that I had a hard time adjusting. This looks all so very yummy, can't wait to cook this when I'm back in Tokyo, hopefully sometime after I graduate next year. Oh, and I love that you are so open to vegan food! Wish a lot more people would realize that eating vegan once in a while is already beneficial (in a lot of ways) and you don't need to be a vegetarian/vegan to do this. Been watching your videos for some time now, they always helped me while I was staying in Tokyo. Best wishes from Germany!
I am not Japanese but I have found many variations of vegan miso soup (dashi) broth from vegan sites. Even many homemade vegan ramen broths will use a kombu stock as the base. For a more rich flavor, I always soak the kombu overnight with the stems of shittake since the stems are too tough to eat. You could also soak dried shittake with the kombu but I find dried mushroom to be too strong in flavor! Hope you give it a try!

+Sharla in Japan You should check out Peaceful Cuisine Ryoya! He's amazing and completely plant based. I think the only thing is, he orders many of his more special vegan products online (he's mentioned it in the description box or comments on some earlier videos) so going the vegan route could end up costing a bit more if you crave variety and want to eat more western dishes. I found in Japan that it was a bit tough because yeah, there seems to be fish in many things, but if you like to cook a lot at home and you meal plan, it's do-able. :)
+Sharla in Japan, I mainly follow the diet because its a healthy lifestyle in England and helps the environment, but i might have to give it some leeway when i do go to Japan as food looks so tasty! (i do feel slightly bad knowing that ha). I also feel like it might be harder to maintain, but i will let you know how it goes and i will try to keep the brave mindset (^o^)

I'm originally from Nagoya, Japan. I love that kind of food. My American family always say there is no meat. I like light tasty veggie and tofu oriented food. My family esp my meat lover husband will never understand. He will eat it but he feels it's not complete without meat. I'm not a vegetarian but veggies provide most of my fav food. That's so cool. They gave a vegan option. Is Japan becoming more vegan friendly? My wife and I are planning on going to Japan for a vacation. I know we can maintain our ethical status after watching Sustainable Vegan's videos but it would be so much easier if Japan had more vegan options. Great video.
+Vegan for Good Can't really say for certain, but I don't think Japan is changing much. Ever since Japan open trade with western countries, consumption of red meat became more common (although fish has always been a staple). Although with that said, Buddhist vegetarianism (Shojin-ryori) has been around for a long time so it's not too impossible to live/travel a vegan lifestyle. If you feel like going to a restaurant and want to feel 100% certain that your food is vegan, you might want to try out restaurants around temples that serve Shojin-ryori.

What I meant by more options is from what I understand, a lot of Japanese citizens don't know what veganism is but after watching her video it seems like veganism is becoming more understood in Japan. I've heard of a few vegan restaurants in Japan but maybe by the time we go in a couple years it will be a little more common which would be a really good thing. I would feel bad being a complicated customer.
Also, if you need to describe your dietary preferences, the term "vegetarian" might not be understood in Japan the same way like Westerners do. The servers are more likely to understand your dietary needs by describing that you eat a diet very similar to Buddhist/Shojin-ryori.

I ran into a problem my sister can't eat tofu what can i put into the middle. My mother like you know Paige doesn't eat tofu i bet you could guess my reaction.
Are e.g. soy protein cubes out of question too? Quorn products (vegan in some countries AFAIK, but not all, so be careful) or mushrooms (please don't use white button mushrooms - shiitake or oyster mushrooms could work as a replacement) could be a decent option if you want to replace it with a meaty vegan product.
Please do a tonkotsu ramen, and spicy miso ramen tutorial. I suck at cooking but I want to learn because my local ramen house is so good but it's expensive so I want to learn to make it at home.
Hey sharla, been loving your video's, I've been to Japan a few times now, but your video's have helped me in my travels recently. I'm interested in moving to Japan, however finding work worries me as I do not have a university degree, so I would love to hear your thoughts on working in Japan, average pay and also how you went about getting an apartment. Most of breads in Japan aren't even vegan :( it's best to eat whole foods and cook everything yourself.

I ran into a problem my sister can't eat tofu what can i put into the middle.
My mother like you know Paige doesn't eat tofu i bet you could guess my reaction.
Are e.g. soy protein cubes out of question too? Quorn products (vegan in some countries AFAIK, but not all, so be careful) or mushrooms (please don't use white button mushrooms - shiitake or oyster mushrooms could work as a replacement) could be a decent option if you want to replace it with a meaty vegan product.

Hey sharla, been loving your video's, I've been to Japan a few times now, but your video's have helped me in my travels recently. I'm interested in moving to Japan, however finding work worries me as I do not have a university degree, so I would love to hear your thoughts on working in Japan, average pay and also how you went about getting an apartment. I do speak a little Japanese, but I'm going to study hard get a cert. for it. So hopefully it helps in finding a job. Thanks, all the best :)

I remember watching this video before, I didnt know you beforehand and I thought you were already vegan here and I got so disappointed when I learned that you were only trying vegan foods in this video. A few minutes ago, I saw your video from your other channel and learned youre already vegan. I just wanna tell you how happy I was learning that. Being vegan is fun, and I hope you enjoy it. UA-cam is so vegan-friendly- and by that I meant tons of recipe videos you can try. One more tip: Watch all the youtube videos of Gary Yourofsky and the 101 ways to go vegan + great docus like Cowspiracy, Forks Over Knives and Earthlings. :)
