I can't believe I never knew you could shred raw shitake mushroom stems! 😮 I always just saved them to simmer with stock because I was told they were too tough to eat! Thanks, Miwa!

@@MiwasJapaneseCooking I shredded my shiitake stems for some soup I just made and it worked great! The stems cooked just like the sliced caps. No toughness at all.

I am so excited to try this! Thank you for showing us how to shred the shiitake mushroom stems! I have always thrown them away, but now I know how to use them and I don't have to feel bad about food waste!

I'm glad you found a new way to enjoy stems! The tip of the stem could be too tough, so you can trim off then shred^^

BTW I really appreciate that you showed us you can put anything into a miso soup. What you get as "miso soup" in restaurants here is usually really just the broth with some tofu cubes and a bit of spring onions. I don't think too many Europeans going to the restaurants realize what miso actually is and think that miso soup is a soup with tofu idk. So thank you for introducing us to a variety of different miso and ingredients for delicious soups on your channel. :)

I use an a;most 18 year old dutch brand that can only cook or keep warm. I got it from my grandparents when I moved on my own and have been using it ever since.
I think sukiyaki is so the image with beef it is hard to imagine but if you think about it vegan sukiyaki is very versatile. Tomatoes and beef both have umami so that is a great one to add, different mushrooms of course, different tofu, like firm or grilled, atsuage, abura age. And I think egg plant if you slace it thinly and roast before putting the sauce on it would be a great one in this dish as well.

Thank you for sharing Joshua! I know you are a rice lover according to your post in a club, so your opinion speaks louder to me! I'm thinking of switching to Zoujirushi. It was too expensive for me, and still is... 😂 but if I use it everyday, why not invest ?! type of mind came through recently. Anyway, we will talk more in the club!

Have you tried cooking without oil? Oil is very inflammatory to our bodies and of course high calorie. You can sauté with water or vegetable broth :) I rarely use oil now.
I love sukiyaki!! I think the braised tofu is my favorite part and enoki mushrooms. At the end I add udon!
