    INGREDIENTS (Makes 1.6 lbs of Noodles)
    450 g 1 lb of all-purpose flour
    4-5 large-size eggs
    1 tsp of salt
    1/3 cup of cornstarch to prevent stickiness
    INSTRUCTIONS
    Combine the salt and all-purpose flour thoroughly. Bread flour is the best to make noodles because it has a higher protein content. Lo Mein noodles are full egg noodles. Egg contains lots of protein, which improves the texture of the dough, so it is ok to use all-purpose flour in this recipe.
    Crack 4-5 large eggs into the flour and knead for 10 minutes or until a smooth and non-sticky dough forms (if using a KitchenAid, run on medium speed for 10 minutes). Every egg and brand of flour is different. Suggest using 4 eggs first and reserving one on the side to adjust the texture. To check if the dough consistency is correct. Use a clean and dry hand to grab a piece of dough and squeeze tightly. Then release; If the dough falls off immediately, the consistency is correct; If the dough sticks to your hand, add more all-purpose flour to adjust.
    The next step is to roll the dough into sheets. I am using KitchenAid. Cut the dough into a few manageable pieces and flatten each piece so they can go through the machine easier. Put on the pasta roller attachment. Let the dough go through the machine; start with the thickest setting. It will come out rough with a jagged edge. Just fold the sheet in half and feed it through the machine a few times until the surface is smooth. Then gradually lower the thickness and continue to feed the sheet through the machine until it reaches your desired thickness. For lo mein noodles, I normally use level 3 on this Kitchenaid as the final thickness.
    Apply a generous amount of cornstarch on the sheet. Using wheat flour only prevents the noodles from sticking for a short time because gluten tends to connect to each other. Cornstarch doesn’t contain any gluten, so it will separate the noodles for a long time.
    Switch the attachment to the noodle cutter and feed the sheet through. Coat the noodles with more cornstarch so the cut surfaces don't stick to each other. Due to the egg content, these noodles can only stay good in the fridge for 2 days, but you can freeze them for up to 6 months.

    No one commented yet? Wow! I will say this, the grocery stores in my area have no pastas on their shelves. It gives me an excuse to use my attachments now. But yes, saving any money with the inflation is worth it if you eat pasta often.

    I really do appreciate the details you offer for example; "gluten tends to connect to each other corn starch doesn't contain any gluten so it will separated the noodles for a long time." It never occurred to me that this was the case.

      I completely agree with this. Most people don't realize how much better noodles are by making them from scratch and having them fresh because they are too lazy to actually do it, but the savings for doing it is definitely worth it even if you put the freshness to the side.I completely agree with this.     I make all sorts of pasta not to save money but to control the process. If I factored in my labor prior to retirement, it certainly wouldn't be cost effective. I started making my own lo mein noodles a while ago because the Asian grocery I go to tends to quickly sell out of the fresh noodles. Like you I make enough to freeze but tbh they rarely last 2 weeks let alone 6 moonths. And thank you for the effort you put into your videos. I'm no stranger to the kitchen as I do all the cooking for the 2 of us and have been at it for decades. However, when watching your videos I always come away learning something new.

    Helpful tip: Put the Cornstarch in a towel, and make a "Powder Puff" out of it, and you can easily spread the cornstarch on the pasta to keep it from sticking

    Hey, if it cost more to make noodles than to buy them t you would still be ahead. You can't quantify the satisfaction of working with your own hands, cooking is a joy. Next time I make your beef noodle soup I will be making it with your noodles.

    I have just recently discovered your website and I'm very happy to meet you. I love that I now know how to make noodles and also have the choice to save money. Your style of giving instructions is excellent, very easy to understand and follow. I look forward to trying the other recipes I have already watched. I love chinese food so much I can't seem to get enough of it. I am not Asian but I was taught how to eat with chopsticks when I was 5 years old by Mr. Fong himself and I have been useing chopsticks for over 6 decades. I can't live without them either. Especially when I eat a salad.

    Thank you for taking the time to show us how to make fresh Egg Noodles, it does not appear to be too hard to make and in rough times you could really make your dollar stretch. I do agree that. It might be a little time consuming. But if you look at Justice savings alone, it's worth it, then add in the fact of how much better noodles taste when they are fresh. Again, thank you.

    Mandy, your recipes for noodles, dumpling wrappers, and similar items, especially those made in a stand mixer, have saved me so much time, energy, and arthritis pain.
    The other important lesson was to use cornstarch or potato starch to dust the pasta sheets and formed noodles to prevent them from clumping together again. I’ll never forget the first time I made pasta sheets for ravioli and because I stacked them together after only dusting them with all purpose flour, the sheets all stuck together and I had to start all over again with my pasta roller. So thank you again, you’ve taught me well.

    If you measure the flour and egg by grams, it will account for any moisture and size of the eggs and you will be able to provide a standardized recipe. Just a tip :)

      Humidity can still vary the amount of moisture in the flour. It still comes down to a keen eye for the consistency of the dough.

    Dear Mandy, I have an arthritis problem, due to old age, and I've found using either a food processor, or the "pasta" cycle on a bread machine a great help in making the doughs for noodles and/or dumplings. (A food processor is also very good for dumpling filling preparation, to get the consistency right.)

    I have a kitchen aid but don’t have the pasta, noodle attachments. I guess this is a good excuse for me to buy the attachments to save a few dollars from buying noodles from the store 😊!! Love your videos. Thanks for sharing with us.

    I have lots of preservatives allergy. I learned to make my own bread, and yogurt which has helped. I too eat allot of noodles. I’m going to try this! I also have kitchen aid spaghetti attachments .

    I can't seem to find fresh noodles like these in my grocery stores so taking the trouble to make them seems worthwhile since my only other option is to use dry noodles. My Italian grandmother always made homemade pasta. Spagetti, ravioli, fettuccine, you name it. She always made her dough with just flour and eggs like you did.

    Love your channel. I also make homemade Noodles when I want something special. So much tastier than store bought. I am retired so I have the time now and I make it completely by hand. Love rolling out the dough and see it becoming this beautiful smooth sheet.
    But I still keep a few boxes of store bought pasta because it’s so convenient.

    Have a KitchenAid mixer but only a hand crank pasta machine I can use with your recipes. Yes, it is worth it even though I do not eat a lot of noodles yet. That probably will change though since I will be able to make my own noodles now. We only have one small local grocery store and they never have a selection of noodles other than the few common ones. It is very special when we can make our own. Love your demonstrations because you make everything so clear about what to aim for.

    What a great video! I love your channel; you’re such a great presenter, and always informative, entertaining, and practical.
    I have a KitchenAid, but haven’t got any additional attachments. I might just had to remedy that. They are pricey, but likely worth it for me. I make almost everything from scratch, but have never tried my hand at noodles or pasta. You make me want to change that!

    Definitely depends on the individual's situation. As I am back in Asia for the next few years, there isn't much issue getting my hands on good fresh and instant noodles. But should I find myself in Europe again in the future, will definitely come in handy. Bookmarking this. Thanks, Mandy!!

    I have everything to make noodles but never had a recipe, this came out Great ! Not much time and well worth it ! The taste is way better the store bought and i know exactly whats in it ! ! Is there a proper way to cook them? I've seen numerous videos of oriental cooking noodles and most all rinse the noodles after they are cooked. GREAT Recipes on how to cook em ! !

    Thank you Miss Mandy. I love fresh noodles for lomein and beef soups. I’ve been trying your simple way of making Chinese foods. I learned a great deal in Basic Chinese foods cooking when I used to work for a family in Hong Kong in the 90’s. I love Chinese foods home made not restaurant made.

    This recipe is an extra buy a mixer. Never used your brand but when I worked in college foodservice, we used the huge Hobart stand mixers with attachments, back in in the late 80''s- early 90's. I just have to think small scale. 😁

    I always make my own pasta and have the attachments plus the Kitchen Aid attachment with the extruder for those pastas you can’t make by hand. I also have the Pasta Queen hand cranked pasta maker, so I’m all set to go. Yes, it is cheaper and so easy, with or without eggs, regular flour, wheat or 00 flour. I get such gratification making my own pasta because fresh pasta is the best. Little ingredients but big results. Now let’s go make some great sauce to go with it and pig out!!

    Those attachments for the Kitchen Aid mixer are a significant investment, but if you have arthritis and make a lot of noodles and pasta, they sure are nice. If you have friends and relatives who have the stand mixers, consider sharing a variety of attachments.

    Hi Mandy another great video, just to let you know, l took delivery of a 4kg box of this type of noodle today , from Amazon Prime, it cost me £18 and some change, l was made up with them being so cheap ,as here in the UK where l live there is no Asian market, also buying a attachment for my Kenwood mixer is a great big expensive up grade l could not afford. Keep safe and happy bad😊🌹

    Yes. Past year not only are pasta varieties wiped out in supermarket but, seems like "bird nest" tupe noodles don't exist anywhere, use to be thin and thick bird nest types with spinach or regular flavor

      If you dont mind me asking where are you where noodles are hard to purchase? I haven't seen any news about it and I haven't encountered this issue where I live. I do have a lot of cultural shops around me and I shop there. I don't know if they are just having better luck or if there is a difference between them and the large grocery stores. They stock different brands. I live in the USA, west coast.
      Nothing beats handmand noodles, when done well ^.^

      I'm in Alabama USA. I shop at one Asian grocery store in GA, they have more rice noodles and other...super expensive. All walmarts here seem to be wiped out all the time with the pasta varieties.

    This is my noodle recipe! It’s interesting how the same recipe makes noodles for several different cuisines. Mine was the same as my mom and my grandma but they rolled by hand. Something I could never get quite right. Either way they are a family favorite, they just taste so much better than dried pasta. Definitely still a labor of love but so worth it. I use a Mercato atlas to roll and cut. But use my kitchen aid or my food processor to make the dough. My arthritis screams about it so they know when I make noodles for them it’s something special.

    I finally got my own house with a big kitchen and the first thing I bought was a KitchenAid mixer with attachments. I've been looking at the pasta attachment for a while and now I know what I'm going to do with it!

      If you decide to buy a grinder attachment, buy an all metal one. I had the plastic one and put it into the fridge to cool it to help keep the meat cold during the grind. The plastic cracked around the metal bearing. This crack was too small to clean, thus increasing the risk of food contamination. That grinder was replaced with a #12 meat grinder. Well worth the extra cost because it grinds 10X faster.

    Love this! I've been making so many more things at home from my sweetened condensed milk to my breads to all of your better than takeout recipes. I've even figured out how to take one thing of live culture buttermilk and make my own at home. The one I bought 3 months ago has kept me in buttermilk since without having to buy anymore. Appreciate any and all things for home. While I know all about savings... it still saves money if I've already got everything needed rather than making an extra trip to the store, buying the one item and possibly picking up a few extras I didn't need.

    I made these often when I was a kid. Child labor! 🤣It was actually kind of fun -- like playing with Play-Doh, but you can eat it when you're done. 😁 In my case the noodles were pasta fresca, not lo mein, even though it's the same recipe and made the same way... We had a hand cranked machine.

    Great video. You make it look easy, so now I will try. I have all the attachments. Eggs in my community cost about $.30 each. I don't know what noodles cost, but I would make them because I don't want to go to the store to buy them. I do love the cost break down comparison. PLEASE DO IT FOR ALL YOUR MEALS. For example, Kung Pao chicken at my local restaurant cost $16 and serves about 3 and there's 5 in my family. When we order other meals, (ie 1 or 2 more items) take home cost about $65. In Joshua Weissman's video he does a great cost break down. Thank you.

    in general i do eat noodle dishes a lot and recently i have been looking for lo mein recipes, then this video falls into my recommendations...i feel like this is fate!
    overall, a very good video, i certainly enjoyed listening to the process and the final statement :)

    Definitely making them at home, making a big batch to save time, and saving money. Most of store bought noodles/pastas contain certain amount of preservatives to prolong the noodles' shelve life, however, by ingesting preservatives will not prolong our life... just a thought.

    I thought your recipe was Great! It’s worth it for Sure to make it at home. I think if you have ready made noodles in the freezer already, then I’d be more inclined to cook one of your delicious lo mein recipes more often! The KitchenAid is so great and the attachments like the pasta extruder are Soo helpful and make the work very easy. I have to get the sheet roller attachment as I have the Atlas you have to crank from Italy for 30 years! Making macaroni/noodles is Always a fun thing to do with kids too. Thank you for being interested in all our economics. If it saves money? It’s good for us. I hope your hands feel less tightness and pain Mandy. 😢

    I recently purchased the pasta attachments for my KitchenAid, so I will definitely be making these. Since they look so easy to make, I might scale my recipe down to 1 egg with the appropriate amount of flour, and make them fresh each time.

    Thank for for the clear concise directions. I wouldn't make noodles for cost savings, but for the benefit of healthier fresh ingredients.
    Not sure how long it would take me to reap any cost savings as I would need to purchase a kitchen aid or comparable stand mixer and the various attachments. Not sure of that cost, but it does look like some happy psychological benefits to say 'I made this not Safeway!' 🙃.

    Great and timely video! You are so gracious and sweet in how you present your videos. I also have arthritis in my hands and can’t do all the things I used to do like cake decorating and pasta making. But I could handle this way of making lo mein noodles. I wonder if they would freeze longer if stored in a vacuum sealed package? Just wondering.

    This is an awesome homemade fresh noodle without any preservative. How should I thaw the noodle after freezing them?

    I would rather eat the homemade, fresh noodles. It’s important to learn the skills to cook with the most basic ingredients. It’s not only less expensive, in my opinion, it’s more healthy ,satisfying and dependable.

    I used to be able to buy eggs for $1.99 a dozen. Now, on sale, I can find them for $3.59 for 18. That's an increase from 16 cents per egg to 20 cents per egg, and I truly believe that what they are calling grade A large are not large, but medium. Still, it's one of the cheapest and easiest to find proteins, and I love pasta. Definitely going to try this. I usually make spinach linguine for my spaghetti sauce, but I have been adding noodles to Asian dishes lately as a change from rice.

    Very interesting! I especially like it from the "home-made cool" aspect. I also have a KitchenAid stand mixer, but would have to buy the two pasta attachments.

      Listed as "used", but looks new to me. I'm guessing it was actually "open box", which Ebay requires to be listed as used. Can't wait to try!

    I feel like thanks to shows like this, more people will be willing to try making things like pasta at home by hand because we just cant' afford to keep spending money on things we can easily make at home with a lttie bit of time and effort. I am so glad she made this program. I like making my own pasta but it's been a minute since I've done it. I will probably be going back to that again soon.
