This also happens with the Sphynx in Super Mario Oddysey. Instead of asking his questions, he asks "Shouldn't you be doing something else?" and he doesn't talk to you after until you save Peach. Quite a good detail that Nintendo included.
Of note in the Turtle Zone secret in Mario Land 2, the first letter of blocks starts out as a W. Busting the blocks in the middle and revealing the hidden blocks changes it to an M.
Also, when you finish Super Mario Odyssey the first time, after the Credits roll, there is a message at the end saying "Thank you for playing" and Mario verbally saying "Thank you so much for playing my game."
The star statue in SM64 is supposed to say eternal star, but since everyone wanted Luigi in the game, thats what everyone believes. Also, I really don't think that theres a hidden message in the galaxy logos abd it was completely random.
My favorite was when you beat Darker Side in Odyssey and Cappy has this whole monologue about how far we've come together... It took me 2 years to beat the game so it truly did feel like a journey and it was kinda sweet

That being a somewhat figure of a ghost at the end of Ghost house 4-4 if you sit by the 16:02 fence behind the flag pole for about 20 seconds. In Japan the number 4 is unlucky so I see why they put it there. Over all it’s not really a message but it’s still cool.

I think the Super Mario Galaxy one is just people speculating and making something up that was never a secret or hidden message to begin with. People wanted to believe and see things that aren't there so hard that it was a secret message but it's really not. It was just unintentional thing with star sparkles on bits of the text by whoever made the logo for the game not thinking at the time.
